The area is known not only for its fertile soil but also for the small family farms that have been growing coffee here for generations. Agriculture is deeply rooted in the local culture – coffee cherries are hand-picked and farmers pay close attention to every detail of the harvest and processing. The Sambewe processing station works with more than 400 smallholder farmers who bring their carefully hand-picked cherries to it.For this particular batch, only Peaberry beans were selected, which give the coffee a unique flavor profile. After hand-picking, the floaters were sorted from the coffee and then the coffee was hulled and sent to fermentation tanks, where after 18-36 hours of fermentation, the beans were freed from the remaining pulp. After washing in channels, the subsequent beans were spread out in parchment on African beds, where they are dried for an average of 14-30 days depending on the weather. Plenty of floral and citrus notes, just right for bright summer days.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. Founded in 2018 near the town of Palestina in southern Huila, the station was built to support local farmers by providing easier access to coffee processing and sales. Today, 214 nearby farmers deliver their freshly harvested cherries to El Puente—most of them of the Castillo variety.El Puente focuses primarily on honey, natural, and other experimental fermentation methods, all while minimizing water usage.This particular lot is 100% Castillo, processed using the honey method. Upon arrival at the station, cherries underwent an initial selection to remove debris and under- or overripe fruit. Then, they were placed in a water tank to eliminate remaining floaters and defects. Next, the cherries were pulped to remove the skin, and the beans were placed in anaerobic fermentation tanks for 6 hours. Afterward, they were dried on raised beds for about 20 days until reaching optimal moisture content. For many Ethiopians, coffee is a symbol, a national pride, and a lifestyle – the finalist of last year's Cup of Excellence certainly belongs to this group! His small farm of about 8 hectares is located in the Bensa region, which, in our opinion, holds the best quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.Javier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be known worldwide as the Windows desktop background. The Fernandez family (because there is also a second son, Nahun!) is not afraid to play around with processing, and thanks to bold experiments, year after year they deliver some of the best lots in all of Santa Barbara. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMWhat we have here is a 66-34 blend. The Ethiopia was processed as a natural – drying the coffee seeds inside the whole fruit. Freshly picked cherries undergo an initial selection, during which those with defects are rejected. Then, they are spread across so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.On the other hand, Javier's lot is a longer-fermented honey – before depulping, the cherries fermented for 96 hours in a tank, and only later were they spread out to dry with a thick layer of mucilage. This technique extracted more deep, fruity-wine notes from the coffee.ROASTER'S OPINIONHere is our concept for this espresso: we created a roast profile that showcases the beautiful notes of flowers and fruits typical of high-quality Ethiopian coffees, but at the same time, on the flip side, offers quite a bit of chocolate-dessert depth, which also balances the acidity and gives the cup equilibrium. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, syrupy aftertaste!Store in a dry and cool place.

His story is personal and deeply rooted in the region. Tagel’s father was one of the coffee pioneers in Guji and built the first washing station in the Bule Hora community. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics.The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. He has developed meticulous processing methods over the years that can give his coffees very unique profiles.ABOUT COFFEEIn general, the ripest cherries are selected for natural processing, they are often hand sorted or float-sorted, cleaned, and placed on raised beds in a covered area to dry for at least a two-week period. The high humidity and rainy climates across Colombia do add to the challenging of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we find the resulting cup profile to be exquisite. Pink Bourbon: Cultivated from hybridization of Red and Yellow Bourbon. It's very rare, but the producers say it is quite resistant to rust. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of these colors are easily thwarted by the presence of yellow and red genes in a given pollen grain. A carefully isolated and contained lot can do quite well and preserve the unique color and character of this variety, though this is quite hard to find.ROASTER'S NOTEElegant yet very expressive. The producers here grow coffee at elevations all the way up to 2,200 meters above sea level, and the washing station is located at 1,850 meters above sea level. Coffees are brought to the Cyato washing station from the surrounding areas of Kivoga, Kageyo, Rusumo, Gatare, and Nsinduka. The washing station was established in 2017.One interesting facet to coffee here is that the native honeybees that live in and around the Nyungwe forest where the coffee is grown are said to be responsible in part to the "unique profile" this coffee has. The bee-assisted pollination, fertile ground (black humus and sandy soil), and cool lake-affected climate thanks to the area's proximity to Lake Kivu contribute to the flavors found in the cup. The farmers use no synthetic inputs, either as fertilizers or as pest control.ABOUT THE PROCESSING Honey-processed coffees go through steps similar to washed, with one notable difference - the amount of mucilage left on the seed before drying. After the cherries are collected and sorted, the coffee is typically depulped and fermented. During fermentation, washed coffees will have all the mucilage broken down and removed from the seeds. In honey-processed coffees, the fermentation is cut short, leaving some mucilage still intact on the seeds. The coffee will then dry with this mucilage intact, often contributing a denser texture, more sugar browning, and fruit notes to the final cup. It is important to note this coffee was intentionally processed utilizing anaerobic fermentation. In general, placing freshly-harvested cherries inside a sealed container or bag of some sort for a period of time will create a flavor impact. We find those anaerobically-fermented coffees often exhibit an increase in the intensity of fruit and acidity and a slight increase in the body. Next, the cherries are thoroughly sorted to discard any unripe or damaged fruit.The subsequent step is depulping, which is the mechanical removal of the skin and most of the pulp. A thin, sticky layer of mucilage containing natural sugars then remains on the bean. After that, fermentation begins in water tanks, usually lasting from a dozen to several dozen hours. During this time, natural enzymes break down the remaining pulp, separating it from the bean. This is one of the most crucial moments – it determines the cleanliness and character of the future flavor profile. After fermentation, the beans are thoroughly rinsed with clean water, which completely removes the remnants of the pulp and stops the fermentation processes. Thanks to this, the coffee's flavor becomes clearer and free from heavy, fermented notes. The final stage is drying on raised tables (so-called African beds), where the beans dry for about 10–15 days. Whole cherries are placed in tightly sealed tanks, where they ferment without oxygen for a controlled period. Under these conditions, complex aromatic compounds develop, giving the coffee exceptional depth, intense fruitiness, and distinctive, slightly winey notes.After fermentation is complete, the whole cherries are spread out for drying. The pulp remains on the beans throughout this process, gradually transferring sugars and aromatic compounds to them. After this time, all flower residues are rinsed out, and the coffee is sent to dry. So much for the processing, and now a few interesting facts about the Simalem farm where this coffee comes from. It is located in the highlands of North Sumatra. This region, thanks to its fertile, volcanic soils and cool climate, offers ideal conditions for growing coffee. The Simalem farm operates in a sustainable manner, without the intensive use of chemicals, and its practices are certified and transparent. Johan Kwe is responsible for the quality of the processing; he is the only certified Q Processing Professional in Indonesia, meaning he possesses the best available knowledge in the field of coffee processing.ROASTER'S OPINIONOfficially the first co-ferment in the history of our roastery.
