ROASTER'S OPINION
From the very first cupping, this coffee was screaming at us with its Earl Grey aroma and flavor. And that is exactly why we fell in love with it! This character is all thanks to an experimental washed processing method where a lot is actually happening. The cherries first undergo whole-fruit fermentation, then take a sea salt bath, followed by anaerobic fermentation, and after depulping, they soak in their own juices with added enzymes.
The result? Earl Grey, Earl Grey, and Earl Grey all over again. It is intense, distinct, and definitely plays first fiddle here. Citrus accents appear in the background, adding freshness to the whole profile, but let's be honest, it is the tea-like character of this coffee that causes the biggest stir.
