It brings together 160 small producers living in the Mbozi region, less than 70 km from the border with Zambia. Recently, in 2019, the cooperative built a central washing station, thanks to which all harvested cherries are processed on-site. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative. After the depulping process, which separates the seed from the fruit, it is sorted by bean size and then separately fermented in a tank for 10 hours. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. Over the past few decades, Guji has established its position as one of the most recognized and valued coffee-producing regions in Ethiopia.Sidamo is recognized as the largest coffee region in Ethiopia. Crops are situated at altitudes ranging from 1,500 to 2,200 meters above sea level, which promotes slower ripening of the coffee cherries in a cooler climate. Highly fertile soils and annual rainfall of 1,200 to 2,000 mm create ideal conditions for growing high-quality coffee.Yirgacheffe lies in the central part of the Gedeo zone in southwestern Ethiopia. This region is famous for producing coffees of exceptional quality, which is influenced by fertile soils, a tropical climate, and high-altitude plantations, often exceeding 2,000 meters above sea level. Due to the altitude of the crops, local coffees are classified as SHG (Strictly High Grown) or SHB (Strictly Hard Bean). This means that the cherries ripen more slowly, allowing the plants to deliver nutrients to the beans for a longer period. Next, a manual selection is carried out so that only the highest quality fruits move on to the next stage.The next step is drying the whole fruits on raised African beds. This is the most important stage of the whole process. For about 3–5 weeks, the fruits slowly release moisture, remaining whole along with the skin and pulp.
