Then, the starter obtained this way is added to the already harvested coffee cherries sealed in 200-liter fermentation tanks. After this stage, the coffee is processed as a classic washed.We have been roasting infused fermentation coffees for some time now. Of course, they vary, but they share a fairly distinct common trait in their profile. Blueberry was an absolute surprise. We took a slurp and said to ourselves – wow, fudge, toffee, milk chocolate. We've never had anything like this before. Blueberries are there, of course – in the dry aroma, in the flavor. But that is not the main characteristic of this coffee.
