It stands out with notes of juicy peach and the aroma of Earl Grey tea, while maintaining balance and being very pleasant to drink. This lot comes from Banko Chelbesa in the Gedeb woreda, located in the Gedeo Zone of southern Ethiopia – part of the broader Yirgacheffe coffee-growing region, at an altitude of 2000–2300 meters above sea level. Coffee here is cultivated by multi-generational families of smallholders on small garden plots, often intercropped with enset, avocado, and papaya. The high altitude and iron-rich, acidic soils of the region contribute to the bright, floral character for which classic Yirgacheffe coffee is famous. For this washed-process lot, ripe cherries are depulped on the day of harvest, fermented in clean tanks to remove mucilage, and then thoroughly washed and sun-dried on raised beds.ROASTER'S OPINIONChelbesa is a classic Ethiopian washed coffee, characterized by a delicate, aromatic, and very accessible flavor profile. Peach and Earl Grey give the brew a juicy, tea-like character, while caramel adds warmth and a smooth, long-lasting finish. The brew is clean, balanced, and easy to read, yet complex enough to maintain its appeal. It is distinct, yet calm and drinkable – a great everyday Ethiopia.V60 RECIPEwater temperature: 94 degrees Celsius 300 g water 21 g coffee grind size 7.2 (Fellow Ode II)1. It is also one of the epicenters of infused fermentations in Colombia. The Sanchez Valencia family has developed a complex process, allowing them to achieve stable and repeatable results.ABOUT PROCESSINGThe first stage involves creating a "fermentation starter" – naturally occurring yeasts are extracted from the cherries of the Purple Caturra variety. Next, they are added to concentrated blueberry juice to conduct a pre-fermentation. Then, the starter obtained this way is added to the already harvested coffee cherries sealed in 200-liter fermentation tanks. After this stage, the coffee is processed as a classic washed. We have been roasting infused fermentation coffees for some time now. Of course, they vary, but they share a fairly distinct common trait in their profile. Blueberry was an absolute surprise. We took a slurp and said to ourselves – wow, fudge, toffee, milk chocolate. We've never had anything like this before. Blueberries are there, of course – in the dry aroma, in the flavor. But that is not the main characteristic of this coffee. It reminds us most of éclair candies – hard, but milky and caramelly – with a small blueberry on top. - RoasteryROASTER'S OPINIONOh my! We have been roasting coffees from infused fermentations for some time now, but there has never been anything like this. Caramel, the sweetness of fudge, or maybe toffee in milk chocolate. And a pyramid of blueberries on top. This is good!Store in a cold and dry space.

Grown by smallholder farmers united under the Coffee Gardens initiative, it is produced with a focus on quality, sustainability, and building direct relationships between farmers and roasters. This is a coffee that combines an excellent sensory profile with real support for the local community. The Coffee Gardens project is built around the idea of transparent specialty coffee production. Farmers receive training in shade-grown coffee cultivation, sustainable agricultural practices, and the careful harvesting of fully ripe cherries. These practices allow for beans of exceptional quality and a clean flavor profile. The varieties grown here, Nyasaland, SL14, and SL28, are known for their high sensory potential, offering the complexity and elegance typical of the best African coffees.ABOUT THE COFFEEThe fully washed process has been refined down to the smallest detail. Coffee cherries reach the processing station within a few hours of harvest. They then undergo depulping, initial washing, and a long, controlled fermentation in cool mountain spring water lasting around 40 hours. This slow and gentle process brings out maximum clarity in the cup and highlights the coffee’s natural fruit notes. Before export, the coffee is sorted through as many as 12 stages, ensuring the highest level of bean selection. In the cup, Uganda Zebigi presents a harmonious and elegant profile. Notes of juicy apple and sweet grapes are clearly noticeable, followed by a subtle, creamy vanilla. The coffee has a bright yet pleasant acidity, a light to medium body, and a clean, lingering finish. It is an excellent choice for filter brewing methods such as drip, Chemex, or AeroPress, as well as for those looking for a lighter, fruit-forward espresso. If you are looking for an African specialty coffee with a clean profile, vibrant fruit character, and transparent origin, Uganda Zebigi from the KAFAR roastery is a choice that combines exceptional flavor with the story of the people behind every bean.Store in a cold and dry space.
