The beans then go into fermentation tanks, where controlled fermentation takes place for anywhere from twelve to several dozen hours. This is a crucial moment—enzymes break down the remaining mucilage while influencing the development of flavor clarity and structure.After fermentation, the beans are thoroughly rinsed in clean water, often in specialized grading channels where they are further sorted by density. The coffee then moves to drying beds, where it slowly dries in the sun for about two weeks. He has tested different coffee varieties and microbial cultures, always seeking harmony between flavour and aroma. During these trials, he turned to wine yeasts — well-known, thoroughly tested in countless fermentation processes, and allowing for conscious, predictable control over the entire procedure. “It’s all about integration!” Hernández repeats, emphasising that balance is central to his work. For him, aroma cannot exist without flavour, and flavour should always reflect the terroir.For this lot, processing unfolds in several carefully planned stages. After depulping, Barolo-type yeasts are added to the cherries — the same strains long used in Italian winemaking to enhance fruit expression and depth. In coffee they work similarly: stimulating the breakdown of natural sugars, which translates into a rounder mouthfeel, pronounced sweetness, and a fuller body. Fermentation takes place in barrels, without oxygen, and lasts around 24 hours. Once complete, the cherries are dried using the honey method, where part of the mucilage remains on the seed. This approach significantly reduces water consumption—a factor of growing importance on the farm, where access to water is becoming increasingly limited.In the cup, Honduras Barolo Yeast radiates a seamless integration of aroma and flavour: the depth of ripe red fruits, a subtle wine-like note, and an exceptionally smooth body. It is a coffee with a juicy, fruit-forward profile, shaped through a process that mirrors its producer’s philosophy. “Feel the terroir & play with it,” says Hernández — and that is exactly how he carries out his experiments.

Gentle boozy acidity really elevates the full, creamy sweetness.ABOUT THE FARMBenedito Aparecido Inácio was born to coffee producers from the state of Paraná. He eventually settled himself in the Chapadão de Ferro microregion of Cerrado Mineiro in the 1990s, primarily providing service for agricultural machinery and leasing his property to local coffee growers. In 2013, he decided to take over management of the coffee crops at his farm, Fazenda Chapadão de Ferro, and has since earned most of his income through his coffee production. Within Cerrado, there are many microregions that present unique characteristics in the cup. The Chapadão de Ferro microregion is a small town with farms situated around the cone of a partially formed volcano. Farms here are at higher elevations above 1100 meters and coffee is harvested a month or two later than in other parts of Cerrado Mineiro. Benedito faced challenges early on due to a lack of infrastructure and some knowledge about coffee production in the area. Soon, his son Rafael Inácio completed his degree in Agronomy and returned to join the operations at the farm, helping to develop the crops and achieving high quality results. Today, they cultivate coffee across 18 hectares of the 25 hectare property. They have embraced modern fermentation and processing, and dry their crop on concrete patios for uniform results.THE PROCESSThis lot underwent anaerobic processing for 96 hours: selectively harvested cherries were placed in polypropylene and wrapped in canvas, creating an anaerobic fermentation environment. The fermented cherries were then dried on a concrete patio to their target humidity and then rested for 30 days before being milled and prepped for export.

The washing station is supplied by about 600 smallholder farmers. Processing is fully washed with water from the Mukungai River and dried on raised beds.
