The project has been developing since the early 2010s, when the family transitioned from growing vegetables to producing specialty coffee. A key step was the launch of their own processing station in 2015, which was expanded in 2025, allowing them to take full control over production and the preparation of beans for export.Production is based on a "variety-driven" approach, meaning the creation of microlots by variety and specific plots. The crops are dominated by both classic varieties, such as Caturra and Catuai, as well as more demanding and highly valued ones, including Gesha, SL28, Ethiopia 47, and Java. This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored.The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. In our experience, peaberry beans can have an incredibly clean and balanced profile, which is undoubtedly the case here.ROASTER'S OPINIONWe have been dreaming of a coffee like this for a long time – fruity, with a touch of fermentation and a slightly winey character. The dry, sunny conditions of Cerrado favor a clean, chocolate-forward profile with pronounced sweetness, while the slower drying on raised beds in the more humid microclimate of Rancho Grande creates greater complexity with notes of nuts and dried fruits.After import to Europe, some of the beans were decaffeinated using the supercritical CO₂ method, which effectively reduces caffeine with minimal impact on aroma and structure, allowing LOW Brownie to retain its full, balanced character. In the cup, chocolate and nuts dominate, with a delicate hint of dried fruits, high sweetness, medium body, low acidity, and a long, chocolate finish.We also verified the caffeine level in the final brew prepared according to the standardized V60 recipe. In 250 g of brewed coffee, we measured 54.4 mg of caffeine. Compared to the same coffee in its fully caffeinated version, this represents a real reduction of about 70% in caffeine content in the brewed coffee.ROASTER'S OPINIONThis coffee has a consistent chocolate-nut character, enriched with a subtle hint of dried fruits that gently highlight the flavor, reminiscent of classic brownies. It is distinguished by pronounced sweetness, medium fullness, very low acidity, and aromas of cocoa and chocolate. The whole is completed by a long, chocolate finish and excellent balance. Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. First of all, the species – it is not Arabica, it is not Canephora, and it is not Excelsa. It is a very rare Liberica. Its beautiful, tiny coffee cherries hide a great deal of sweetness and an interesting character. Secondly, Vietnam – an origin that we simply avoid, and thirdly – this Liberica grows at an altitude of 600 meters above sea level. To top it off, a very long fermentation was added to the coffee.All of this made the coffee very intense. In the aroma, it smells of fruit, malt, and delicate herbal notes. In the flavor, you will find very intense notes of stevia, apple, and tropical fruits. Everything is crowned by a long, very sweet, malty aftertaste. The acidity is low but well-developed. The body is high and very sticky, reminiscent of the natural sweetener that is stevia. This is a coffee that tastes like nothing we have ever had before!PROCESSING - intense fermentationIn the case of this coffee, we are dealing with a fairly simple processing method – anaerobic natural. Although the processing itself is quite classic, its length gives it a unique character. After being delivered to the washing station, the coffee cherries were placed into plastic vacuum bags. There, the cherries ferment for as long as 120 hours. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.PLANTATION - Quang Tri - Liberica straight from Vietnamese Saigon!Quang Tri is a coffee shop, a roastery, and a coffee producer. On the production side, Quang Tri operates by looking for small, natural plantations and rare botanical varieties – Canephora, Excelsa, and Liberica. And that is how lot 96b was created – it is a blend of Libericas coming from two very small farms.Next, the coffee was transported to one of the processing stations that Quang Tri has been working with for many years. There, the coffee was subjected to an intense fermentation process. First, the cleaned coffee cherries ferment for as long as 120 hours in plastic, airless bags. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.ROASTER'S OPINIONThere are rare coffees, there are strange coffees, there are unique coffees – this one combines everything. First of all, we are dealing with Liberica – in our several-year history, we have tasted maybe 2 Libericas and they were not very good. Secondly, it is a coffee from Vietnam, which is an origin we generally avoid. Thirdly, we have a very intense fermentation, which in itself is not that strange. However, Quang Tri produced only 180 kg of this lot – we bought 60 kg from this lot. The coffee is very sweet, even sticky – honey-like, though this sweetness is definitely much more reminiscent of stevia than honey. It has a light, fruity acidity reminiscent of apple, plus some tropical fruits and malt or dark beer. It is a hilly region with an average altitude of 1,500-1,800 meters above sea level, rich in volcanic soils. The Nyagishiru station is owned and managed by Matsitsi Trading Coffee SU (MATRACO). The company was founded in 2015 by Zuberi Matsitsi, who produces specialty coffee primarily for international markets.Fun fact: Zuberi Matsitsi owns over 7,000 coffee trees. In addition to the Nyagishiru CWS plantation, his company also owns two other plantations in the Kayanza province.
