We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it!WHAT A HERESYAlmost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. There are different ideas about how to use them. Quite a few roasters sell them at regular price, without disclosing the harvest date, some add them to cheaper blends, others try to hide the flavor with darker roasting or aromatization. To put the emphasis on fresh, up-to-date crops in our offerings, we always include their dates in the description of our lots. We dream of making this an industry standard! So that the consumer can more consciously judge quality and freshness against price. Meanwhile, there is nothing wrong with "past crops" themselves, if we say so directly and price them accordingly lower. It's a good coffee, and by using beans from previous harvests, it also has a much lower price, because we sell it 'at cost value'! It's also our way of 'less waste', because some great beans were standing in our warehouse, with no idea what to do with them. And that's how PASTor came into being.PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! The average farmer in this region only has approximately 250 trees, which is extremely small. They are picking their ripe coffee by hand here. This washing station was established in 1984 and features adequate soaking and floating tank for optimal coffee processing and has over 200 drying tables. As a result, they can process nearly 20,000 bags of coffee in total here. As a result of this washing station being established in the 80s, many small-holder farmers have gained access to capital investments, education, and infrastructure to produce exceptional coffees and improve their livelihoods. After coffee has dried, it it transported to the capital city of Gitega for dry milling and export. Natural Coffees in Burundi are picked ripe cherries then laid on raised beds for drying for varying times depending on weather.ROASTER'S OPINIONVery fruity, reminiscent of plum jam.RECIPE16 g coffee250 g water 96°CMedium grind sizePlace a paper filter in the V60 and rinse it with hot water (96°C). This will heat the dripper and server and remove any paper taste from the filter. For best results, always use filtered water (remember that 98.5% of brewed coffee is water).Discard the rinse water from the server.Grind the coffee beans just before brewing and pour them into the dripper. Gently level the coffee in the center of the V60.Place the V60 on a vessel set on a scale and ensure the water temperature is 96°C.Tare the scale and start the timer.Add 50 grams of water. Your coffee will begin the bloom phase (pre-infusion).After 30 seconds, add water until you reach 100 grams. Pour the water slowly, gently, and in circular clockwise motions.At 00:50, pour up to 200g of hot water.At 01:10, pour up to 250g of hot water.Give the V60 dripper a light swirl and let the coffee draw down.The water should finish filtering through around 3:00. You may need to adjust the grind setting if the coffee brews too quickly or too slowly. However, always taste and evaluate the quality of the coffee.Store in a cool and dry place.

It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.
