ABOUT THE COFFEE
Some coffees are simply good and easy to enjoy. Peñas Blancas is exactly that kind of Colombian coffee – sweet, with a tropical character and a hint of warmth that makes every cup bring a sense of peace and satisfaction. It stands out with notes of ripe fruit and caramel sweetness, while remaining balanced and very pleasant to drink.
Peñas Blancas is a farm in the Huila region, established by Nestor Lasso and Jhon Vergara at an altitude of 1,650–1,800 meters above sea level. The Castillo variety is known for its resilience and naturally clean flavor profile – and at this altitude, it takes on the balanced sweetness and clarity that the Huila region is famous for. Only fully ripe cherries are hand-picked, which are then processed using the natural method and dried on raised beds for 25–30 days under controlled conditions. Temperature and humidity are carefully monitored throughout, and the cherries are turned regularly to ensure even drying and controlled fermentation.

1. Pre-infusion 75 g water pouring: 0:00-0:10.
2. 150 g water pouring: 0:30-0:40.
3. 225 g water pouring: 1:00-1:10.
4. 300 g water pouring: 1:30-1:40
All water should finish drawdown around 2:10 - 2:20.
Store in a cold and dry space.
