It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.

Hard Beans - Costa Rica Los Duran SL28 Natural Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 09.09.2026

Whole-bean specialty coffee from Costa Rica, roasted by Hard Beans roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of cherry, melon and vanilla.Origin: Costa RicaRegion: West ValleyFarm: Los Durán MicromillVariety: SL28Processing: NaturalAltitude: 1600 – 1900 m a.s.l.ABOUT THE REGION AND FARMLos Durán Micromill is located in Sarchí, in the West Valley region. Behind the project is Eduardo Durán along with his three sons: Barney, Kendall, and Arnold. The family has been growing coffee for years, but the next generation brought a new approach to work organization, technology, and processing to the farm. Barney is responsible for daily production and coffee processing. Kendall and Arnold, both software engineers by training, are involved in the development of the family business and its daily operation. The Duráns' farms are divided into several small lots. One of them is El Roble, where SL28 grows alongside Catuaí, Caturra, and new hybrids.A significant step in the farm's development was creating their own micromill right next to the family home. The project was led by Eduardo and Kendall. Thanks to this, the family took control of the stage that largely determines the character of the finished raw material: the selection, preparation, and drying of individual microlots. The micromill was equipped with raised beds and a greenhouse allowing for better control of drying conditions. It is a small scale of production, but a very conscious approach to every batch of coffee.ABOUT THE VARIETYSL28 is one of the varieties most strongly associated with Kenya and East African coffees. It is valued primarily for its high quality potential and distinct sensory profile. At Los Durán, it grows on the El Roble lot, in a completely different environment from the one we usually connect it with. This exact combination is particularly interesting here: Kenyan genetics interpreted by the terroir of the Costa Rican West Valley.ABOUT THE PROCESSINGIn the case of this lot, the natural process was applied, where whole fruits remain around the beans throughout the entire drying period. Ripe cherries are selectively harvested and sorted, and then placed on raised beds. The fruits are spread in a controlled layer and turned regularly to reduce differences in the rate of moisture loss.Drying takes about 21 days, depending on weather conditions. Throughout this time, the skin and pulp remain around the beans. After reaching the appropriate moisture content, the coffee is left to rest, and only later undergoes dry milling and preparation for export. In this method, fruit selection and the drying process itself become particularly important. Too fast or uneven moisture loss can negatively affect the quality of the lot. Having their own micromill allows the Durán family to carry out this stage directly on site and adjust it to the conditions of each lot.RECIPERatio: 60 g of coffee per 1 liter of water Water temperature: 93°C Grind size: medium Brew time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60 g) at 30-second intervals. The water between pours should completely drain through the coffee. If the water flows too slowly or too fast, change the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cool and dry place.

Whole-bean specialty coffee from Mexico, roasted by Kafar roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of cherry, kombucha and peanut butter.Origin: MexicoRegion: ChiapasProcessing: NaturalVariety: BourbonCupping score: 88 / 100 ABOUT THE COFFEEThere is a lot going on in the cup. Juicy cherries, kombucha, and peanut butter create a profile that surprises from the very first sip. It is intensely fruity, lively, and multidimensional, with high acidity, a creamy body, and a long, remarkably distinctive finish. This is one of those coffees that is hard to confuse with any other. This character is shaped both by the producer and the processing method. Neri Ortiz Perez has been developing his farm for years while supporting local farmers, focusing on quality and conscious processing. Carefully selected cherries undergo a multi-stage fermentation and are then slowly dried on raised beds. The result is a coffee where the fermentation does not overpower the bean, but instead highlights its maximum fruitiness, sweetness, and complexity. We selected this coffee because these are precisely the flavors we look for—bold, unexpected, and memorable. It simply proves that Mexico can surprise even those who think they have seen it all in specialty coffee. It is a lot that brings a smile from the very first cupping and disappears from the cup just as quickly.Store in a dry and cool place.

We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.

The president of Lima Coffee is Rony Lavan, who is responsible, among other things, for finding the most interesting coffees from small producers. He has guided the company toward specialty coffee, and his microlots are winning an increasing number of industry awards. Fun fact: Cajamarca is a relatively dry and cool tropical region located in the north-eastern highlands of Peru, characterized by very fertile soil at high Andean elevations. All of these factors contribute to the developing production of specialty coffee. Cajamarca is the main coffee-growing region in Peru, accounting for about 25% of national production. Small-scale producers own approximately 2-3 hectares of arable land, and many of them practice organic farming methods.Store in a cold and dry space.

The brew resembles the flavour of red fruits, citrus fruits, tea and caramel.Origin: RwandaRegion: GicumbiFarm: Bukure Women's coopProcessing: WashedAltitude: 1800-2200 m a.s.l.Cupping score: 87 / 100ABOUT THE FARM AND THE COFFEE PRODUCERBukure Women’s Coop is a cooperative of female smallholders who cultivate coffee in northern Rwanda, in the Gicumbi district. What we have here is the essence of Rwandan terroir – the cherries ripen on mineral-rich volcanic soils and at impressive altitudes exceeding 2000 meters above sea level. Nova Coffee, in turn, is the washing station and export company owned by Agnes and Felix Mukamushinja, who coordinate the entire enterprise. In 2024, they won first place in the prestigious Best of Rwanda competition with their coffee.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAll the fruit is harvested by the female producers by hand and with great care – years of practice and training have borne fruit (pun intended) in an extremely selective picking, resulting in perfectly ripe cherries. The lot is processed as a "classic" washed coffee. The fruit undergoes depulping, after which it goes into a tank for over 24 hours where fermentation takes place. This is followed by washing and then straight to drying.ROASTER'S OPINIONIt is no coincidence that we are hosting Bukure for another season in a row – this is a textbook example of a Rwandan coffee pampered at every stage. The essence of the washed coffee profile from this small part of the world.Store in a dry and cool place.
