It is this region, located near the border with Honduras, that is responsible for many of the most highly valued Nicaraguan specialty coffees. The high altitude of the farms, the cool climate, and the long ripening period of the cherries translate into coffees with high sweetness, a clean profile, and great elegance in the cup.The coffees included in this lot come from the El Naranjal, Las Naranjas, and Los Angeles farms. The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality. Thanks to this, small family farms can focus on producing better and better coffee while preserving the character of the Nueva Segovia region, for which Nicaraguan specialty is famous.ROASTER'S OPINIONMy, what huge beans! Our little Fellow Ode doesn't grind them all right away, but once it is persuaded, miracles happen in the cup. Very elegant, classic, yet so delicious!Store in a cool, dry place.

The current host passionately continues the family tradition of cultivating several botanical coffee varieties. Here is how Henry described this specific harvest: "We hand-pick only ripe coffee cherries. Then the coffee is washed and left as cherries in bags for two days. Next, the coffee is depulped and left in bags in a mucilage state for another two days. Then the coffee is washed and transported to the drying area. During the day, the coffee is intensively stirred several times to dry as quickly as possible. The drying process takes 20 to 25 days, depending on climatic conditions. After drying, the coffee is packed into bags and left to stabilize before delivering samples."Store in a dry and cool place.

The Cabrera family has been connected to this land since the early 20th century, and coffee cultivation began in the 1940s. Notes of raspberry, red gooseberry, and pomegranate dominate, giving the coffee a distinct, winey-fruity freshness. Lemon acidity brings lightness and energy, keeping the cup remarkably clean and refreshing despite the natural processing. In the background, a sweetness reminiscent of ripe red fruits and fruit syrup emerges, beautifully tying the entire profile together.PROCESSINGThe natural process highlights the intensity of the fruit and builds a fuller structure in the brew, yet the coffee remains very clear and elegant. Now it is your espresso. This lot comes from the Gatta farm of the Dukamo family, in the Sidama region, Ethiopia – grown at an altitude of 1,900–2,000 meters above sea level under the shade of native trees that are over 200 years old. The Dukamo brothers started from scratch with the conviction that coffee from Sidama deserves more attention. Fifteen years later, they have 3 farms, 42 washing stations, and 6 dry mills. This is what consistency tastes like. The processing method is Sleeping Bag Natural – cherries are sorted by ripeness and dried outdoors in sealed bags that slow down moisture loss and concentrate flavor without the risk of over-fermentation. The effect is clean, sweet, and very precise for a natural.ROASTER'S OPINIONSirius is a natural Ethiopian espresso that behaves well in the portafilter – fruity, but with acidity kept in check; sweet, but not overly cloying. Pear and strawberry bring juiciness to the shot, while caramel sweetness balances it out, ensuring a satisfying finish. Cleanliness and clarity that you do not normally expect from a natural in a portafilter. Good on its own, even better with milk. One of those coffees where dialing in a recipe is effortless.RATIOS: dose 19 g / yield 47 g / 28 s.Store in a cool and dry place.

You smell it, and the very first impressions tell you that you will find something unobvious here, and you certainly are not mistaken. This coffee is as aromatic, as sweet, as fruity, and as surprising as possible. If a bag of these beans falls into your hands, it will certainly transform your previous sensory memory in your future searches for the coffee holy grail.ABOUT THE PROCESSINGThe Los Nogales plantation specializes in very unusual, modern bean processing methods, not shying away from experiments whose results are usually surprising. These beans come from an experimental process in which, after removing the coffee cherries, they underwent controlled fermentation in juice (mosto) squeezed from those cherries. Thanks to this, it gained a unique character with high sweetness and a mind-blowing aroma. We managed to bring out the full depth and complexity of these beans:)ABOUT THE FARMLos Nogales Farm is a family-run coffee plantation in Colombia. The face of this generational business is currently Oscar Hernandez. The farm is located in the mountainous region of Huila near the city of Bruselas, in the southern part of this region. Oscar is an inventive and charismatic person. He is guided by the idea of producing the highest quality specialty coffee in Colombia, and this batch of beans clearly proves it.In 2006, Oscar's father, Ricaurte Hernandez, won the Colombian Cup of Excellence. Thanks to this great distinction, the farm became synonymous with the highest quality. Oscar continues this tradition, and thanks to him and his approach, Los Nogales is a center of innovation and information for all proactive farmers in this region.Detailed description of this coffee's processing method:Process: mosto fermentationSelection of ripe fruit: The process begins with the careful harvesting of only ripe coffee cherries. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels. Squeezed juice from the coffee cherry skins themselves, which contains a high amount of natural sugars—the so-called "mosto"—is added to them. This can enhance the flavor profile and give the coffee sweet notes.Fermentation: Coffee beans undergo a fermentation process lasting 120 hours. During this time, sugars break down, which affects the coffee's flavor and acidity. Pre-fermentation agents, similar to bread sourdough, are also added to give the coffee unique properties.Sun drying: Finally, the fermented coffee beans are sun-dried for 15 days. This stage is necessary to reduce the moisture level of the beans to a level suitable for long-term storage and to further develop the coffee's flavor.Store in a cold and dry space.

After this time, all flower residues are rinsed out, and the coffee is sent to dry. So much for the processing, and now a few interesting facts about the Simalem farm where this coffee comes from. It is located in the highlands of North Sumatra. This region, thanks to its fertile, volcanic soils and cool climate, offers ideal conditions for growing coffee. The Simalem farm operates in a sustainable manner, without the intensive use of chemicals, and its practices are certified and transparent. Johan Kwe is responsible for the quality of the processing; he is the only certified Q Processing Professional in Indonesia, meaning he possesses the best available knowledge in the field of coffee processing.ROASTER'S OPINIONOfficially the first co-ferment in the history of our roastery. It is very well-balanced – it tastes clearly of jasmine, but this is supported by the sweetness of grapes and a great, tea-like body.
