This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. It is a light coffee on the palate, with a tea-like structure and delicate intensity.ABOUT THE PROCESSINGThe exceptional character of this batch is greatly influenced by the Extended Fermentation Fully Washed processing method. The process begins with the manual harvesting of only fully ripe fruits. Next, the coffee cherries go to a depulper, which separates the skin and most of the pulp from the beans. At this stage, the beans are still covered with a layer of mucilage.The next step is extended fermentation. In contrast to classic washed processing, where fermentation usually lasts from a dozen to several dozen hours, here the process is intentionally prolonged and carefully controlled. Microorganisms naturally occurring on the surface of the fruit break down the remaining pulp, while creating aromatic compounds responsible for a greater complexity of flavor. It is this stage that allows for the extraction of additional fruitiness and juiciness while maintaining the cleanliness characteristic of washed processing.After fermentation is complete, the beans are thoroughly rinsed with clean water to remove any remaining pulp. Then they go to drying tables, where they dry slowly until optimal moisture content is achieved. Only then is the parchment layer removed, and the green beans are prepared for export.The result is a coffee that combines the clarity of a classic washed with the additional aromatic depth obtained through extended fermentation. First of all, the species – it is not Arabica, it is not Canephora, and it is not Excelsa. It is a very rare Liberica. Its beautiful, tiny coffee cherries hide a great deal of sweetness and an interesting character. Secondly, Vietnam – an origin that we simply avoid, and thirdly – this Liberica grows at an altitude of 600 meters above sea level. To top it off, a very long fermentation was added to the coffee.All of this made the coffee very intense. In the aroma, it smells of fruit, malt, and delicate herbal notes. In the flavor, you will find very intense notes of stevia, apple, and tropical fruits. Everything is crowned by a long, very sweet, malty aftertaste. The acidity is low but well-developed. The body is high and very sticky, reminiscent of the natural sweetener that is stevia. This is a coffee that tastes like nothing we have ever had before!PROCESSING - intense fermentationIn the case of this coffee, we are dealing with a fairly simple processing method – anaerobic natural. Although the processing itself is quite classic, its length gives it a unique character. After being delivered to the washing station, the coffee cherries were placed into plastic vacuum bags. There, the cherries ferment for as long as 120 hours. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.PLANTATION - Quang Tri - Liberica straight from Vietnamese Saigon!Quang Tri is a coffee shop, a roastery, and a coffee producer. On the production side, Quang Tri operates by looking for small, natural plantations and rare botanical varieties – Canephora, Excelsa, and Liberica. And that is how lot 96b was created – it is a blend of Libericas coming from two very small farms.Next, the coffee was transported to one of the processing stations that Quang Tri has been working with for many years. There, the coffee was subjected to an intense fermentation process. First, the cleaned coffee cherries ferment for as long as 120 hours in plastic, airless bags. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.ROASTER'S OPINIONThere are rare coffees, there are strange coffees, there are unique coffees – this one combines everything. First of all, we are dealing with Liberica – in our several-year history, we have tasted maybe 2 Libericas and they were not very good. Secondly, it is a coffee from Vietnam, which is an origin we generally avoid. Thirdly, we have a very intense fermentation, which in itself is not that strange. However, Quang Tri produced only 180 kg of this lot – we bought 60 kg from this lot. The coffee is very sweet, even sticky – honey-like, though this sweetness is definitely much more reminiscent of stevia than honey. It has a light, fruity acidity reminiscent of apple, plus some tropical fruits and malt or dark beer. Such extreme conditions — high sun exposure combined with cool temperatures — promote slow fruit ripening and the development of high-quality Arabica.The farm is located in the Callayuc region, within the Cutervo province (Cajamarca), one of the historical coffee-growing areas in northern Peru. This terrain stretches from approximately 690 to over 2800 m a.s.l., creating incredibly diverse microclimates — from fertile valleys to humid, tropical zones with high biodiversity.Ismeria Leon, like other local producers, manages her crops in strict harmony with nature, utilizing naturally fertile soils and favorable climatic conditions. The area also features characteristic landscape elements, such as the Viluco waterfall and the Cerro Pabellon mountains and the Cordillera del Wissus range, which contribute to the region's unique ecosystem.It is this combination of altitude, climate, and biodiversity that gives Callayuc coffee its distinct, complex, and characteristic profile.ROASTER'S OPINIONThe location of the La Lucuma farm is truly exceptional — over 2200 m a.s.l. is an altitude rarely encountered in Peruvian coffee cultivation. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. This is a coffee with very good balance and a clean profile — definitely an example of how good Peru can be.RECIPEWe recommend brewing this coffee using a dripper — from Hario or Origami. Due to the very high density of the beans, we recommend a finer grind than usual, a longer brewing time, and a temperature around 96 degrees Celsius.Store in a dry and cool place.
