Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of rhubarb, red grapefruit and tea.Origin: TanzaniaRegion: SongweFarm: ItumpiVariety:  N 39, KT 423 (peaberry)Processing: WashedAltitude: 1500 – 1700 m a.s.l.ABOUT THE COFFEEThey are already here! Just as the warm weather has settled in for good, the first fresh harvests from Africa are starting to arrive. Itumpi from Tanzania clearly reminds us why we value coffees from this part of the continent: crisp, juicy brews with a large dose of freshness. In taste, Itumpi leans towards green-red rhubarb and pink grapefruit. The acidity is distinct and pleasantly juicy. In mouthfeel, the coffee is light, tea-like, and clean, with a crisp finish that practically begs to be brewed over ice.The enigmatic PB stands for peaberry. It refers to a natural anomaly where, instead of two flat beans, a single, smaller, and rounder bean develops inside the coffee cherry. Sometimes overlooked, though completely unfairly, because it can yield a very intense, concentrated flavor. It was this intensity that stole our taste buds from among the other grades. The raw material comes from the Itumpi cooperative in the Mbozi district, Songwe region. About 160 local producers operate here, cultivating coffee at an altitude of 1500–1700 meters above sea level. Since 2019, the cooperative has been producing fully washed coffees using their own wet mill. With such a crisp, acidic profile, this method fits like a glove.Store in a dry and cool place.

The flavour of the brew resembles green apple and sugar.Origin: ColombiaRegion: QuindioFarm: Jairo ArcilaVariety: CastilloAltitude: 1450-1500 m a.s.l.Processing: Honey Co-fermentedABOUT THE PROCESSINGCoffee cherries underwent a 72-hour dry anaerobic fermentation. During this process, green apples were added to the fermentation tanks, enriching the coffee's flavor profile with notes of fruity freshness and distinctness. After fermentation, the beans were separated from the pulp and placed on African beds, where they dried until reaching the ideal moisture level. Or at least that's what the producer says – we weren't there, we're just repeating what they say. And that's why if you ask us about the process, we'll answer – fake fermentation :))).Fruit-infused fermentation. Green apple submerged in sweetness, a bit like grandma's apple pie. It's intense. - RoasterROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! It is this region, located near the border with Honduras, that is responsible for many of the most highly valued Nicaraguan specialty coffees. The high altitude of the farms, the cool climate, and the long ripening period of the cherries translate into coffees with high sweetness, a clean profile, and great elegance in the cup.The coffees included in this lot come from the El Naranjal, Las Naranjas, and Los Angeles farms. The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality. Thanks to this, small family farms can focus on producing better and better coffee while preserving the character of the Nueva Segovia region, for which Nicaraguan specialty is famous.ROASTER'S OPINIONMy, what huge beans! Our little Fellow Ode doesn't grind them all right away, but once it is persuaded, miracles happen in the cup. Very elegant, classic, yet so delicious!Store in a cool, dry place.

Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of almond, green apple, green tea, and orange.Origin: ColombiaRegion: TolimaFarm: Finca El VergelProcessing method: Koji SupernaturalVariety: Pink BourbonAltitude: 1460 m n.p.m.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: Medium-coarseBrew time: 3:30 minutesMethod: Pour the water in 5 equal stages (e.g. 5 × 60 g), every 30 seconds.Allow the water to fully pass through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size coarser or finer accordingly.Remember to use soft, filtered water.ABOUT THE FARMFinca El Vergel is one of the oldest coffee plantations in the Tolima region of Colombia. It is currently run by the second generation of producers, Elias and Shady Bayter, with the support of their mother, Martha. Unlike many small farms in Colombia, which typically cover around 5 hectares, this estate spans over 300 hectares of land, nearly 100 hectares of which are dedicated to coffee cultivation. The Bayter family is currently conducting advanced research on bacteria and yeasts to control fermentation, constantly experimenting with processing methods and achieving an unprecedented level of excellence in their coffees. El Vergel grows more than 28 different coffee varieties and is the first farm in Colombia to develop the Koji fermentation process, a technique that has completely revolutionized green coffee production.Pink Bourbon is a unique coffee variety, known for its unusual pink-colored cherries. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness. This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The innovative process involves cultivating the fungus on steamed rice for 3–4 days. Once fully developed, the rice is harvested, dried, and ground into a fine powder. This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. Finally, the beans undergo a 20-day stabilization period in GrainPro bags, ensuring stability and optimal storage conditions.ROYAL BEANSWhat’s behind the name Royal Beans? In the cup, you will find notes of forest fruits, apricot, passion fruit, rhubarb, as well as sweet hard candies and bubble gum. Natural processing gives it a full body, distinct sweetness, and a rich, multilayered aroma – ideal for those looking for coffees with a modern, bold profile. Guatemala Alotenango is an offering for lovers of expressive and unconventional filter coffees. Right from the first sip, it delights with intense fruitiness that combines juicy forest fruits, ripe apricot, exotic passion fruit, and crisp rhubarb. The whole is complemented by sweet associations with hard candies and bubble gum, giving the cup an exceptionally dessert-like and surprising character. This is a coffee of high intensity, full body, and a long, sweet finish.ABOUT PROCESSINGSuch a rich flavor profile is thanks to the natural processing method, one of the oldest and most demanding coffee preparation techniques. The process begins with careful hand-picking of exclusively fully ripe, red coffee fruits. Next, the fruits are thoroughly sorted – first all impurities are removed, and then selection is carried out in water, which discards fruits that are too light (unripe) or damaged. After selection, the whole fruits go onto African beds, where multi-day drying begins. Unlike washed coffees, the beans remain closed inside the fruit throughout this entire time. Naturally occurring sugars, acids, and aromatic compounds from the skin and pulp gradually penetrate the beans, building their characteristic sweetness and complexity. To ensure drying proceeds evenly and to prevent uncontrolled fermentation, the fruits are turned regularly up to a dozen times a day, and the entire process is constantly monitored for temperature and humidity.Drying usually lasts from a few to even several weeks – until the fruits reach an appropriately low moisture level. Only then are the dried skin and pulp mechanically removed in the hulling process, revealing green beans ready for further sorting, resting, and preparation for roasting. The result of this time-consuming method is a coffee with exceptional aroma intensity, velvety body, and clear, fruity sweetness. In Guatemala Alotenango, this translates into a juicy cup full of forest fruits, apricot, and passion fruit, with the pleasant acidity of rhubarb and a candy accent of hard candies and bubble gum. This is a coffee that shows how much character well-executed natural processing can bring out.Store in a cool, dry place.

It’s best to give it two weeks after roasting – it gains a lot with time!V60 RECIPECoffee dose – 19 gWater dose – 50 g → 300 gGrind size:8.4 EK43; 23 clicks ComandantePlace the filter in the V60 and rinse it with a strong stream of water so it adheres well to the walls.Grind the coffee, add it to the V60, and level the coffee bed.Pour 50 g of water, aiming at the dry spots to wet everything thoroughly. If the coffee is very fresh (foaming a lot when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), start pouring into the very center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the water stream just below the point where the stream breaks. When you reach 250 g, lower the kettle to about 3 cm above the water surface (you no longer need circular movements) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically). If the coffee drains too quickly, give it a swirl. The total brew time should be 2:30–3:00, or 3:30–4:00 if you use the extended/additional bloom.Store in a cold and dry space.

It is characterized by juicy fruit notes and distinct sweetness, while remaining clean in taste and very pleasant to drink. This lot comes from El Diviso, a family-owned farm in Huila managed by Nestor Lasso, grown at an altitude of 1850 meters above sea level on fertile volcanic soils. El Diviso is one of the most acclaimed farms in the Colombian specialty coffee industry, known for combining traditional cultivation knowledge with a scientific approach to fermentation and drying. The Bourbon Sidra undergoes a multi-stage natural process: after selective hand-picking and flotation, the cherries undergo a 36-hour oxidation process, followed by a 48-hour anaerobic fermentation. Next, the leachate from the cherries is collected and reused in a subsequent 36-hour submerged fermentation with continuous recirculation, finished with a thermal shock. Drying takes place in sealed, air-conditioned stainless steel dehumidifying equipment to preserve all aromatic compounds.ROASTER'S OPINIONPineapple, lychee, and melon give the coffee a distinct, multi-layered fruity character, while the delicate acidity of mandarin orange makes the whole cup crisp and full of life. The flavor is clean, expressive, and full of energy, and the long aftertaste continues to surprise. It is complex and distinct, yet balanced and very pleasant in taste – one of the most exciting Colombian coffees we have ever tasted.V60 RECIPEwater temperature: 92 degrees Celsius,300 g water,21 g coffee, grind size 7 (Fellow Ode II)Blooming 75 g water pour: 0-0:10,150 g water pour: 0:30-0:40,225 g water pour: 1:00-1:10,300 g water pour: 1:30-1:40.All water should finish drawdown around 2:10 - 2:20.ROYAL BEANSWhat’s behind the name Royal Beans? These are beans from a classic washed process that will certainly delight lovers of full-bodied coffees with an undoubtedly perfectly complex cup. Sometimes you might get confused and, while enjoying this lovely coffee, start wandering in your thoughts among the best-remembered coffees from Kenya. You simply drink it and think to yourself: wow... great!ABOUT THE FARMFinca El Cedro is a 2-hectare farm run by Henry Munoz and Monika Berdugo. The plantation is a legacy left by Henry's father. The current host passionately continues the family tradition of cultivating several botanical coffee varieties. Here is how Henry described this specific harvest: "We hand-pick only ripe coffee cherries. Then the coffee is washed and left as cherries in bags for two days. Next, the coffee is depulped and left in bags in a mucilage state for another two days. Then the coffee is washed and transported to the drying area. During the day, the coffee is intensively stirred several times to dry as quickly as possible. The drying process takes 20 to 25 days, depending on climatic conditions. After drying, the coffee is packed into bags and left to stabilize before delivering samples."Store in a dry and cool place.
