We recommend it primarily for filter brewing methods, where its clarity and multi-layered nature are most pronounced.Finca La Toboba Jocotes is located in the Convento, Pérez Zeledón region of Brunca, Costa Rica, at an altitude of 1420 to 1710 meters above sea level. The farm is run by Senel Campos along with his son Alan, managing three estates spread across the steep terrains of southern Costa Rica.Senel Campos' story is a tale of consistency and gradual development. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. Coffees from La Toboba are characterized by a very low number of defects and high consistency in quality.This specific lot of the Catigua variety was subjected to the natural process, which brings out notes of walnut, mandarin, and sugar cane in the cup. It is owned by Baragwi Farmer Cooperative Society (FCS), one of the largest cooperatives in Kenya in terms of both coffee volume and membership. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. Its origins are very likely linked to Ethiopian landrace varieties.As a result, Pink Bourbon combines characteristics of high-quality varieties such as Gesha, while also showing greater disease resistance than classic Bourbon, with which it often grows on the same farms. In the version prepared by Miriam Quesada, the coffee underwent natural processing. Hand-picking only ripe cherries ensures remarkable uniformity of the raw material.After initial cleaning, the cherries are placed in water tanks, where they rest briefly to allow separation of underripe or damaged fruit. The coffee is then dried in a specialized dryer, where controlled temperature and humidity, along with continuous rotation of the beans, ensure an almost perfectly even process. Finally, the beans are separated from the remaining fruit material and packed in GrainPro bags. The Pink Bourbon coffee prepared in this way is then exported to the European market.ROASTER’S OPINIONPink Bourbon is a variety we reach for almost every time it appears in importers’ offerings. We highly value it in both washed and natural versions. Each one reveals a completely different side of the same variety, while consistently delivering a lot of enjoyment. In this case, we are dealing with a bold, expressive natural that stands out from the very first contact.The aroma is rich and evocative, dominated by notes of almonds, juicy stone fruits, and fresh pink grapefruit. In the background, there is a distinctive sweet “purple” note reminiscent of fruity candies like Skittles. Sugary, joyful, hard to define precisely, yet undeniably pleasant.On the palate, the coffee unfolds in layers. Up front, there is an intense, fruity sweetness of peach and plum, complemented by a deep, slightly sticky molasses note. Coffee cultivation is usually managed by family members, rarely hiring out external workers. 70% of the population wears traditional clothing, and 46% of the producers are women producers.Before the arrival of Spanish conquerors, Tzeltal indigenous people settled in the actual Tzajalchen area. The Aztecan people came and lived here, but in the 16th century, Dominican Friars started to colonize the area. In 1712 Tzeltal people started to rebel against the Dominican people, resulting in the entirety of the population today being the Tzeltal indigenous people.Pedro's father, along with his three brothers, initially grew corn and beans. There weren't any coffee trees planted in the farm. More than 30 years ago, a program of INMECAFE (El Instituto Mexicano del Café) arrived in Tzajalchen and brought coffee seeds of Bourbon and Caturra to plant, and that's how they started coffee cultivation in the area. About 20 years ago, his father handed over the farm to him and his two brothers, then Mr. Pedro began to work organically with his wife and his son. He produced 15 quintales from his 1-ha farm, and bought three more hectares. Now his farm is 4-has and continues to maintain organic practices.The harvest is picked by hand, selecting only 100% ripe cherries, and is usually done in 4 picking sessions per season. Pulping is done on the same day of the harvest, and the coffee is then fermented for 10-16 hours.
