As he says himself, he "inherited" the profession of a producer from his father. He completed courses in coffee production at the National Learning Service (SENA), and nearly ten years ago he established his own plantation. In addition to Caturra, Don Lisandro also cultivates Gesha and Pink Bourbon varieties.Don Lisandro owns a five-hectare farm, 4.5 hectares of which are dedicated to coffee crops. The plantation is located on soil typical of this region, which is a combination of volcanic and sandy-loam substrate.Only deep red, ripe cherries are harvested. In the afternoon, the pulp is removed from them, and they are then sorted using a zaranda – a type of screen used to separate impurities from the coffee. The beans later ferment in open tanks for 18–26 hours and are rinsed three times. It's a good coffee, and by using beans from previous harvests, it also has a much lower price, because we sell it 'at cost value'! It's also our way of 'less waste', because some great beans were standing in our warehouse, with no idea what to do with them. And that's how PASTor came into being.PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact!
