He is guided by the idea of producing the highest quality specialty coffee in Colombia, and this batch of beans clearly proves it.In 2006, Oscar's father, Ricaurte Hernandez, won the Colombian Cup of Excellence. Oscar continues this tradition, and thanks to him and his approach, Los Nogales is a center of innovation and information for all proactive farmers in this region.Detailed description of this coffee's processing method:Process: mosto fermentationSelection of ripe fruit: The process begins with the careful harvesting of only ripe coffee cherries. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels. Squeezed juice from the coffee cherry skins themselves, which contains a high amount of natural sugars—the so-called "mosto"—is added to them. This can enhance the flavor profile and give the coffee sweet notes.Fermentation: Coffee beans undergo a fermentation process lasting 120 hours. During this time, sugars break down, which affects the coffee's flavor and acidity. Pre-fermentation agents, similar to bread sourdough, are also added to give the coffee unique properties.Sun drying: Finally, the fermented coffee beans are sun-dried for 15 days. It is owned by Baragwi Farmer Cooperative Society (FCS), one of the largest cooperatives in Kenya in terms of both coffee volume and membership. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. This is because coffee serves as their primary source of income. Although the region is mainly famous for natural process coffees, washed coffees are also produced here—and that is exactly what this coffee is.Due to difficult access, many farms can only be reached on foot. After the processing phase, the coffees were exported by Kyagalanyi Coffee, which is the first company in Uganda to receive a coffee export license.The washed process at Bugoye begins by placing the harvested cherries into large fermentation tanks filled with water. This momentum also greatly affects the quality of the beans sourced from there. For years, coffees from Uganda were primarily associated with low-quality Robusta. While high-quality microlots did appear, they were rare exceptions.The current situation in the green coffee market and the work of importers and exporters have ensured that the quality of Ugandan coffee improves year after year, with more high-quality coffee entering the market. We observe an improvement in bean quality annually, even as a result of minor adjustments to production processes.This washed lot from the Bugoye station is particularly interesting because it is very complex and somewhat unusual for washed beans from Uganda. The coffee has a light, tea-like body, reminiscent of those well-known from Ethiopia. The acidity is medium, citric, and delicately sparkling. The whole profile is complemented by a caramel-peach sweetness that is noticeable in the long aftertaste. This is the case for espresso, but after adding milk, the coffee changes dramatically. Although it remains light and tea-like, such as washed Ethiopias, the caramel-peach sweetness begins to stand out, creating a delicious, sweet milk coffee.RECIPEUse 18 grams of beans to brew 40 grams of espresso. Grind the coffee finely to aim for an extraction time of approximately 25 seconds. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached.
