Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz grow coffee on several-hectare farms in the El Tambo micro-region, located west of the capital of the Cauca department, Popayán.The phenomenal quality of their coffee is driven by the following synergy of factors:the microclimate of El Tambo and cultivation at elevations exceeding 2,000 meters above sea level result in slower cherry maturation, while lower humidity facilitates the drying process: processed coffee loses moisture in a predictable and controlled manner,a well-thought-out and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal airflow and sunlight penetration,the producers’ modern knowledge of fertilization combined with a traditional practice locally known as “re-re,” which involves selectively harvesting overripe, underripe, or dried cherries and leaving them on the ground near the coffee trees. As a result, more pests feed on this “waste” instead of attacking healthy plants,and, of course, a conscious and strict selection of cherries harvested at optimal ripeness, supported by years of experience in fermentation and drying processes.Harvesting is carried out exclusively by local residents, who form the core of the community of several small villages in El Tambo. This community has naturally developed over generations around the continuous, seasonal cycle of coffee cultivation.ABOUT COFFEE PROCESSING ON THE FARMCastillo variety, hand-picked, with the beans separated from the fruit immediately after harvest. Fermented in tanks for approximately 36 hours, then washed up to three times to completely remove any remaining mucilage from the parchment. Slowly dried for about 15 days on raised beds. Homogenized and stabilized for a further several days.ROASTER’S NOTEA time machine. I remember this profile of washed Colombian coffee from a decade ago. Then it disappeared for a few years, or became much harder to find. But it’s back again. Multi-layered, elegant, vibrant, and soft. Everything here evokes ripe, juicy fruit.

Kirinyaga is a region renowned for producing some of the finest lots in the entire country, known for their remarkable depth and complexity.ABOUT THE PROCESSINGThe varieties SL28, SL34, Batian, and Ruiru are hand-picked by smallholder farmers from their few-hectare farms and delivered to the washing station, where they undergo the first manual sorting. After the beans are separated from the fruit, the coffee ferments overnight in tanks. It is then washed and sorted into four quality grades. Drying takes between 10 and 20 days, depending on the weather.ROASTER'S OPINIONYou can recognize true mastery in processing when a coffee, even more than a year after drying, still displays beautiful depth, complexity, and well-structured layers. Fresh Kenyan coffees only start arriving in Europe around mid-year, so until then we get to enjoy fruit-forward lots like this one.

This time, we chose the Sarchimor variety.The coffee underwent Black Honey processing, in which cherries are selectively picked and then depulped while leaving the mucilage layer intact. The beans are dried on African beds for about 20 days, regularly turned and moved to maintain maximum cleanliness of the profile and ensure even drying.The result is an espresso with deep sweetness and high body. In the cup you’ll find notes of red fruits and caramel sweetness. The texture is velvety, the acidity lively yet harmoniously balanced—creating a bold, sweet-fruity shot that works beautifully both on its own and with milk.About the farmThe mill began operating in 2012 with a small depulping machine and a few African drying beds, where all the coffee was 100% sun-dried. The first single varieties Marvin experimented with were Caturra and Millennium.The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.

Coffee produced this way is gathered at washing stations, where it is processed, graded, and sold, with farmers living in the vicinity bringing their harvests there. The washing station uses water from local rivers to process the coffee cherries (hence the name, as the washing process is common here).The Beloya washing station is located north of Chelelektu in the Kochere district, 45 km from the regional capital, Dilla. The facility, which has been operating for 20 years, features two processing plants and is currently being expanded and modernized.ABOUT THE PROCESSINGCarbonic Maceration (a technique also known from winemaking) is a relatively new process in the coffee world. During this process, only the highest quality cherries are placed into a sealed steel tank, and carbon dioxide (CO2) is then used to completely displace the oxygen.In this anaerobic environment, an intracellular fermentation process begins. Instead of external microorganisms and yeast initiating the breakdown, it is an enzymatic transformation of sugar within the fruit itself. As the cells begin to break down sugar in the absence of oxygen, various types of aromas and esters—and sometimes alcohols—are produced. This gives carbonic macerated coffees a very distinctive, almost fruit-candy-like flavor, while simultaneously preserving the classic aromatic characteristics of Ethiopian coffee.

They inherited their farms from their parents and creatively evolved their cultivation and processing methods. They have been working with specialty coffee since the early 2000s and achieved legendary status long ago. Year after year, they produce the highest quality green beans, serving as pioneers not only of specialty coffee in Honduras but also of new processing techniques. They were the ones who successfully adapted natural processing to the challenging climatic conditions of Honduras.The Caballero family owns nearly 200 hectares of land divided into 17 different farms in the Marcala region of eastern Honduras. All their operations are centered at a central washing station – Xincala. This is where all the cherries they harvest are processed. The family constantly invests in the station's development, making it possible to continuously improve quality.Marysabel and Moises's farms feature clay-like soil, and the main variety they grow is Catuai, though they also have Java, Pacamara, and Geisha trees.ROASTER'S OPINIONWe roasted our first naturals from Caballero in 2020. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. We were fans of those coffees back then, but now we are truly blown away.
