Sofie from Sucafina recommended that we contact Alfonso from Café Monteverde and his Timuyacu farm, as his philosophy and values in the pursuit of quality, caring for his people, and protecting the environment aligned with NOMAD values.Alfonso sent us samples of several of his lots, including this Washed Bourbon from Colasay Washed was a perfect fit for what we were looking for. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. The resulting parchment is placed on drying beds or patios where it is regularly turned to ensure even drying.The drying process takes approximately 15 to 20 days. Once dry and at the required moisture level, the parchment is stored on the farm for approximately 60 days before being transported to the dry mill for threshing and export.Store in a cold and dry space.

Of course, they vary, but they share a fairly distinct common trait in their profile. Blueberry was an absolute surprise. We took a slurp and said to ourselves – wow, fudge, toffee, milk chocolate. We've never had anything like this before. Blueberries are there, of course – in the dry aroma, in the flavor. But that is not the main characteristic of this coffee. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. The entire process — from cultivation to processing — is covered by a monitoring system that ensures full traceability.Nemba is also engaged in the development of local communities, implementing projects that support farmers, including animal husbandry, strengthening cooperative structures, and improving crop yield.ROASTER'S OPINIONNemba is a washing station whose coffees we are always very keen to reach for. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. Such extreme conditions — high sun exposure combined with cool temperatures — promote slow fruit ripening and the development of high-quality Arabica.The farm is located in the Callayuc region, within the Cutervo province (Cajamarca), one of the historical coffee-growing areas in northern Peru. This terrain stretches from approximately 690 to over 2800 m a.s.l., creating incredibly diverse microclimates — from fertile valleys to humid, tropical zones with high biodiversity.Ismeria Leon, like other local producers, manages her crops in strict harmony with nature, utilizing naturally fertile soils and favorable climatic conditions. The area also features characteristic landscape elements, such as the Viluco waterfall and the Cerro Pabellon mountains and the Cordillera del Wissus range, which contribute to the region's unique ecosystem.It is this combination of altitude, climate, and biodiversity that gives Callayuc coffee its distinct, complex, and characteristic profile.ROASTER'S OPINIONThe location of the La Lucuma farm is truly exceptional — over 2200 m a.s.l. is an altitude rarely encountered in Peruvian coffee cultivation. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. This is a coffee with very good balance and a clean profile — definitely an example of how good Peru can be.RECIPEWe recommend brewing this coffee using a dripper — from Hario or Origami. Due to the very high density of the beans, we recommend a finer grind than usual, a longer brewing time, and a temperature around 96 degrees Celsius.Store in a dry and cool place.
