Gaitania is an exceptional lot created by smallholder producers from the vicinity of the town of Gaitania, located in the municipality of Planadas in the south of the Tolima region. The coffees come from plantations situated at an altitude of 1,700–2,000 m above sea level, where the Castillo, Caturra, and Colombia varieties are cultivated. Combining beans from several farmers made it possible to create a coffee with a distinct, juicy character that perfectly reflects the potential of this region.



ABOUT THE PROCESSING


After harvesting, the ripe cherries fermented for 38 hours and then dried for eight days on raised, covered African beds. The slow and controlled drying highlighted the natural sweetness and complexity of flavor. In the cup, you will find juicy papaya and passion fruit, notes of wild berries, and the velvety sweetness of maple syrup. The overall profile is intense, fruity, and slightly funky – full of character, yet perfectly balanced at the same time.
