Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz grow coffee on several-hectare farms in the El Tambo micro-region, located west of the capital of the Cauca department, Popayán.The phenomenal quality of their coffee is driven by the following synergy of factors:the microclimate of El Tambo and cultivation at elevations exceeding 2,000 meters above sea level result in slower cherry maturation, while lower humidity facilitates the drying process: processed coffee loses moisture in a predictable and controlled manner,a well-thought-out and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal airflow and sunlight penetration,the producers’ modern knowledge of fertilization combined with a traditional practice locally known as “re-re,” which involves selectively harvesting overripe, underripe, or dried cherries and leaving them on the ground near the coffee trees. As a result, more pests feed on this “waste” instead of attacking healthy plants,and, of course, a conscious and strict selection of cherries harvested at optimal ripeness, supported by years of experience in fermentation and drying processes.Harvesting is carried out exclusively by local residents, who form the core of the community of several small villages in El Tambo. This community has naturally developed over generations around the continuous, seasonal cycle of coffee cultivation.ABOUT COFFEE PROCESSING ON THE FARMCastillo variety, hand-picked, with the beans separated from the fruit immediately after harvest. Fermented in tanks for approximately 36 hours, then washed up to three times to completely remove any remaining mucilage from the parchment. Slowly dried for about 15 days on raised beds. It is created in cooperation with Gemechu Shonora and local producers, from whom we have been ordering coffee since 2024. We recommend it primarily for filter brewing methods, where its complexity and delicacy are most pronounced.The coffee comes from the Oromia, Guji region in Ethiopia and was produced by Gemechu Shonora in cooperation with around 500 smallholder farmers. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The sensory profile frequently features herbal, floral, and spicy notes, along with fresh accents reminiscent of hops or citrus.This lot offers a flavor profile with notes of blueberry, vanilla, and lemongrass, with a distinct, crisp texture. Recently, in 2019, the cooperative built a central washing station, thanks to which all harvested cherries are processed on-site. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative. After the depulping process, which separates the seed from the fruit, it is sorted by bean size and then separately fermented in a tank for 10 hours. The soils here are volcanic and at the same time the most fertile in the entire country, which is why coffees from this area are so highly valued by roasters all over the world.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMSL28, SL34, Ruiru, and Batian varieties, hand-picked by 650 small producers from the area. After being delivered to the station, they undergo an initial, manual selection, during which unripe and insect-damaged cherries are discarded. After the seed is separated from the fruit, the coffee ferments overnight in tanks, then it is washed and sorted into four quality categories. They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience.The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation.In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. After that, the coffee rests for at least 60 days before export to achieve perfect homogenization.ROASTER'S OPINIONEvery year, we wait for coffees from Las Lajas with flushed cheeks! By removing oxygen and maintaining strict temperature regulations, this process allows the coffee to develop an incredibly clean acidity and a creamy texture, while preserving the distinctive characteristics of its original terroir.After fermentation, the coffee is carefully removed from the barrels and sorted by hand once again to ensure that only the finest cherries move on to the drying stage. He owns 6.5 hectares of coffee farm in one place and another 3 hectares in another place within the same village. He works full time in his farm assisted by his able children who completed their primary education but couldn’t find another job in towns. Mr Bekele, who is the father of 11 children, fully relied on the income he generated from his coffee farm. The coffee farm business also supports his two elder married sons who also work together with him.Mr Bekele Gemeda was incredibly grateful to see the care he has put into his coffee showed well enough in the cup to have his coffee kept separate, something that is rare in Ethiopia. The coffee is picked ripe and depulped the same day. There is usually a fermentation period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage.
