Yet, this is coffee, and quite an impressive one at that.The farms are located in a wild part of Yunnan, east of Pu’er city and right near the border with Laos. The entire coffee operation is led by Mr. Tian Cai, manager of the Yunnan Coffee Traders (YCT) farms, while its daily management is handled by his relative, Mr. Tang. This is a family team belonging to a small group of farmers from the Gui Ben region. The coffee cherries come from both their own crops and from neighboring smallholders. The cherries are spread in a thin layer on raised beds for two to three days, after which they are raked and dried for another 25 days. Only then do they move on to further processing, sorting, and, once prepared this way, await shipment to warehouses in Europe. We roasted them relatively light for espresso, which gave them a long aftertaste. In the background lurks a note known from Asian coffees, but for me, yellow sweet plum takes center stage here.  Store in a cool and dry place.

How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

Behind the project is Eduardo Durán along with his three sons: Barney, Kendall, and Arnold. The family has been growing coffee for years, but the next generation brought a new approach to work organization, technology, and processing to the farm. Barney is responsible for daily production and coffee processing. Kendall and Arnold, both software engineers by training, are involved in the development of the family business and its daily operation.The Duráns' farms are divided into several small lots. One of them is El Roble, where SL28 grows alongside Catuaí, Caturra, and new hybrids.A significant step in the farm's development was creating their own micromill right next to the family home. The project was led by Eduardo and Kendall. Thanks to this, the family took control of the stage that largely determines the character of the finished raw material: the selection, preparation, and drying of individual microlots.The micromill was equipped with raised beds and a greenhouse allowing for better control of drying conditions. It is a small scale of production, but a very conscious approach to every batch of coffee.ABOUT THE VARIETYSL28 is one of the varieties most strongly associated with Kenya and East African coffees. It is valued primarily for its high quality potential and distinct sensory profile.At Los Durán, it grows on the El Roble lot, in a completely different environment from the one we usually connect it with. This exact combination is particularly interesting here: Kenyan genetics interpreted by the terroir of the Costa Rican West Valley.ABOUT THE PROCESSINGIn the case of this lot, the natural process was applied, where whole fruits remain around the beans throughout the entire drying period. Ripe cherries are selectively harvested and sorted, and then placed on raised beds. The fruits are spread in a controlled layer and turned regularly to reduce differences in the rate of moisture loss.Drying takes about 21 days, depending on weather conditions. Throughout this time, the skin and pulp remain around the beans. After reaching the appropriate moisture content, the coffee is left to rest, and only later undergoes dry milling and preparation for export.In this method, fruit selection and the drying process itself become particularly important. Too fast or uneven moisture loss can negatively affect the quality of the lot. Having their own micromill allows the Durán family to carry out this stage directly on site and adjust it to the conditions of each lot.RECIPERatio: 60 g of coffee per 1 liter of water Water temperature: 93°C Grind size: medium Brew time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60 g) at 30-second intervals.The water between pours should completely drain through the coffee.If the water flows too slowly or too fast, change the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cool and dry place.

It is characterized by two types of climate: cool and temperate. Coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes.Our coffee comes from a selected group of producers from the upper part of the Palestina municipality, located at an altitude of approximately 1700 m a.s.l. This group of farmers specializes in cultivating varieties such as Tabi and Caturra.Cooperativa Departamental de Caficultores del Huila Ltda. (CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. It spans 27 municipalities and operates a support network consisting of 45 coffee purchasing points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 drying service points. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialty coffees allows the cooperative to meet market demand for coffee purchased under specific, ethical conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais, Brazil, between 1915 and 1918. The name "Caturra" comes from the Guarani word meaning "small," referring to the plant's dwarf stature. Due to its small size and densely spaced branches, it can be planted closely together, increasing the yield per area. Caturra contributed to the intensification of coffee farming, particularly in Central America, where it was introduced in the 1940s. This variety also played a crucial role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties.Tabi is a relatively young variety developed in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid. The word "Tabi" comes from the language of Colombia's indigenous people and means "peace" or "life."ABOUT THE PROCESSINGThe coffee undergoes a traditional washed process, which begins with the harvesting of ripe cherries. They are weighed and left for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after approximately 12 hours. Finally, the coffee is sun-dried or machine-dried, depending on the producer's facilities.RECIPERatio: 16.5g (dose) / 36g (yield). Water temperature: 94°C. Grind size: Very fine. Brew time: 24 secondsMethods:Drip Coffee Maker:Rinse the filter with water before adding the coffee. Stir the coffee in the server before pouring it into a cup.Espresso Machine:Set the grinder to a fine setting. The extraction time should be between 20 and 30 seconds.Store in a cold and dry space.

And supposedly new, yet a safe bet.I think we order coffees from Oscar and Francisca Chacon every year. When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.

This is one of those coffees that is hard to confuse with any other.This character is shaped both by the producer and the processing method. Neri Ortiz Perez has been developing his farm for years while supporting local farmers, focusing on quality and conscious processing. Carefully selected cherries undergo a multi-stage fermentation and are then slowly dried on raised beds. The result is a coffee where the fermentation does not overpower the bean, but instead highlights its maximum fruitiness, sweetness, and complexity.We selected this coffee because these are precisely the flavors we look for—bold, unexpected, and memorable. It simply proves that Mexico can surprise even those who think they have seen it all in specialty coffee. In the cup, it is juicy, fresh, and very clean, with a distinct acidity that gives the coffee energy. At the end, a pleasant, chocolatey sweetness emerges, balancing the fruity character well.ABOUT THE FARMThe coffee comes from Ibonia Estate, one of the oldest plantations in the Kiambu region. The farm covers over 100 hectares, with nearly 60% of its area still remaining as natural forest. Coffee grows here at an altitude of approximately 1,700 m a.s.l., in fertile, volcanic soils and a cool climate that slows down the ripening of the cherries, allowing more sweetness and complexity to build.ABOUT THE VARIETAL AND PROCESSINGIts character is shaped by SL28 and SL34 — iconic Kenyan varietals that have been the foundation of the country's finest coffees for decades. These are precisely what give coffees from Kenya their distinctive fruitiness, high acidity, and intensity.The beans underwent Fully Washed processing. The cherries are hand-picked and meticulously sorted, then fermented for 12–24 hours, washed, and soaked in clean water for another 24 hours. Finally, the coffee dries slowly on raised beds for 7–15 days.Because we like classics when they are truly well executed. Ibonia showcases the Kenyan character without unnecessary extras — it is intense, juicy, and complex, yet at the same time very easy to drink.
