At the height of the season, when the volume of picked cherries is greatest, beans are sometimes transferred to the neighbouring fazenda belonging to Ivans brother. For their naturally processed lots, the whole cherry is transferred to raised African beds to slowly dry in the sun. Situated on the slopes of the snowcapped Nevado del Ruiz volcano, the farm benefits from a unique microclimate. Starting with Caturra and Castillo, it was not long before they started expanding their collection of varietals to fully explore the amazing terroir at their disposal. Soon, they were planting Tabi, Pink Bourbon, Pacamara, and Gesha, to name a few. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. Now in the trusted hands of his son, Diego, Los Pirineos continues to deliver the unexpected. At 1400 metres above sea level, Los Pirineos sits on volcanic slopes amongst lush forest. The microclimate around the volcano provides sun-filled days and cool breezes that are ideal for growing and drying. In the drying area of the farm, raised beds are positioned between two peaks which consistently channel the wind across the drying coffee. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. All the water used in processing is from collected rain, and bees are kept on the farm to help pollination across the farm and surrounding forest. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm. Caramel, syrupy sweetness, and black tea add depth as it cools.ABOUT THE FARMGachami Factory is located in the famous coffee growing region of Kirinyaga. It is owned by Baragwi Farmer Cooperative Society (FCS), one of the largest cooperatives in Kenya in terms of both coffee volume and membership. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. The terroir, climate, and harvest cycles all contribute to the quality of coffee produced here.ABOUT THE PROCESSThe coffee is picked ripe and pulped the same day, before open fermentation in tanks for 12–36 hours. The coffee is then washed clean of its mucilage before drying on patios. Once dry, the beans are decaffeinated through the sugarcane or Ethyl Acetate process. A solution of water and Ethyl Acetate - derived from Colombian sugarcane crops - is used to gently extract caffeine while maintaining the important flavour compounds in the coffee. After sorting by hand and then floatation, the best quality cherries are transferred to raised African drying tables for 3 to 4 weeks.
