We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.

It is this region, located near the border with Honduras, that is responsible for many of the most highly valued Nicaraguan specialty coffees. The high altitude of the farms, the cool climate, and the long ripening period of the cherries translate into coffees with high sweetness, a clean profile, and great elegance in the cup.The coffees included in this lot come from the El Naranjal, Las Naranjas, and Los Angeles farms. The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality. Thanks to this, small family farms can focus on producing better and better coffee while preserving the character of the Nueva Segovia region, for which Nicaraguan specialty is famous.ROASTER'S OPINIONMy, what huge beans! The project has been developing since the early 2010s, when the family transitioned from growing vegetables to producing specialty coffee. A key step was the launch of their own processing station in 2015, which was expanded in 2025, allowing them to take full control over production and the preparation of beans for export.Production is based on a "variety-driven" approach, meaning the creation of microlots by variety and specific plots. The crops are dominated by both classic varieties, such as Caturra and Catuai, as well as more demanding and highly valued ones, including Gesha, SL28, Ethiopia 47, and Java. This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored.The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. In our experience, peaberry beans can have an incredibly clean and balanced profile, which is undoubtedly the case here.ROASTER'S OPINIONWe have been dreaming of a coffee like this for a long time – fruity, with a touch of fermentation and a slightly winey character. They inherited their farms from their parents and creatively evolved their cultivation and processing methods. They have been working with specialty coffee since the early 2000s and achieved legendary status long ago. Year after year, they produce the highest quality green beans, serving as pioneers not only of specialty coffee in Honduras but also of new processing techniques. They were the ones who successfully adapted natural processing to the challenging climatic conditions of Honduras.The Caballero family owns nearly 200 hectares of land divided into 17 different farms in the Marcala region of eastern Honduras. All their operations are centered at a central washing station – Xincala. This is where all the cherries they harvest are processed. The family constantly invests in the station's development, making it possible to continuously improve quality.Marysabel and Moises's farms feature clay-like soil, and the main variety they grow is Catuai, though they also have Java, Pacamara, and Geisha trees.ROASTER'S OPINIONWe roasted our first naturals from Caballero in 2020. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. We recommend it primarily for filter brewing methods, where its complex flavor profile and subtle, smooth aftertaste are most memorable.ABOUT THE FARMJhon Alvarado, along with his son Antonio and the whole family, manage sixteen hectares of crops spread across four farms in the Chirripó, Brunca region in southern Costa Rica. This is exactly where lots based on varieties such as Gesha, SL28, or Ethiopia 47 are created, which are now processed in a newly built dry mill launched in 2025.From the first experiments conducted on the Finca La Torre farm to multiple high rankings in the Cup of Excellence competition, the Alvarado family's business is based on conscious development, consistency, and a clearly defined vision of quality. He comes from a family of coffee growers who, after moving away from conventional production and spending a period raising cattle, eventually settled in their current location. It was here that Sebastian decided to focus on producing high-quality specialty coffee.The farm covers 2.8 hectares and yields approximately 70 quintals of coffee annually. The main variety is Parainema, complemented by a young Geisha plantation. About half of the coffee is grown under controlled shade. Sebastian uses fertilization based on chicken manure and coffee pulp, supplemented with local blends adjusted according to soil analysis. He regularly prunes the coffee trees and monitors pests and diseases such as coffee borer beetle, coffee leaf rust, and leaf spot. In addition to coffee, he also grows avocados, bananas, and blackberries, while preserving trees and minimizing the environmental impact of farming.PROCESSINGThe coffee is processed using the honey method. The cherries ferment for approximately 36 hours in plastic bags, after which they are depulped and undergo a second, dry fermentation lasting another 36 hours. After fermentation, the beans are dried in parabolic solar dryers for 15–18 days, with regular turning and hand sorting. Once dried, the coffee is packed and stored on the farm before being delivered to the exporter San Vicente. The honey process requires minimal water usage, supporting sustainable and responsible production.ROASTER’S OPINIONSebastian Mejía’s Parainema shows two distinct faces that complement each other exceptionally well. On one hand, it offers medium, well-developed, and complex acidity typical of the Parainema variety. On the other, the influence of the honey process is clearly evident, delivering high sweetness and an intensely fruity, juicy profile.The aroma is very pleasant and enveloping, dominated by notes of ripe strawberries and citrus, supported by subtle floral accents that add lightness and elegance. On the palate, the coffee unfolds in layers: pronounced sweetness of tropical fruits and strawberries combines with lively, clean acidity reminiscent of various ripe citrus fruits.Despite its high sweetness and noticeable acidity, the cup remains very well balanced, smooth, and free of bitterness. There is energy and depth here. The project has been developing since the early 2010s, when the family transitioned from growing vegetables to producing specialty coffee. A key step was the launch of their own processing station in 2015, which was expanded in 2025, allowing them to take full control over production and the preparation of beans for export.Production is based on a "variety-driven" approach, meaning the creation of microlots by variety and specific plots. The crops are dominated by both classic varieties, such as Caturra and Catuai, as well as more demanding and highly valued ones, including Gesha, SL28, Ethiopia 47, and Java. This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored.The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. The producers focus on precise and responsible coffee processing, aiming to express the character of the local terroir while respecting the natural environment. During the harvest season, the farm employs around 15 people and produces approximately 5.5 tons of coffee annually from just under two hectares, cultivating several botanical varieties processed using different methods.Coffee production at this location comes with challenges such as variable weather conditions and rising operating costs. In response, the owners plan new plantings of varieties better adapted to the local climate, as well as a gradual expansion of their cultivation area. Since 2022, the farm has also been investing in the development of controlled fermentation infrastructure, which is used not only by the owners themselves but also by neighboring producers seeking to improve the quality of their coffees. This offering is another coffee from this farm in our portfolio—this time naturally processed Caturra and Red Catuai from the latest harvest in Costa Rica.ABOUT THE COFFEEAt the farm, every stage of the process is closely monitored and documented, allowing for consistent quality improvements from season to season. This lot was prepared using the natural processing method. Cherries of the Red Catuai and Caturra varieties are first placed in a water bath for flotation, during which selection takes place—only healthy, fully ripe cherries continue to the next stage, while defective fruit is removed.The cherries are then disinfected using ozone to limit the development of undesirable microorganisms. The next step is drying the whole fruit on raised beds typical of African coffee farms, under full sun. This process lasted 28 days and required regular turning of the coffee to ensure even moisture evaporation. The beans ultimately reached a moisture content of 10.5%.After drying, the coffee is placed in GrainPro bags, where it rests and stabilizes for at least one month. The final stage takes place at a dry mill, where the coffee is hulled, sorted by size and density, and subjected to electronic color sorting before shipment.Costa Rican coffees are often associated with pronounced sweetness, typically resulting from honey processing. In this case, however, we are dealing with a naturally processed coffee that dried for an extended period in full sun. The result is a very clean and transparent flavor profile, featuring notes of ripe grapefruit, plum, and dark chocolate. La Laguna stands out with an intense sweetness reminiscent of maple syrup. The body is high and almost oily, while the acidity is low and soft, with a subtle grapefruit accent. Altogether, this creates a smooth, harmonious, and well-balanced coffee.BREW RECIPEUse your preferred brewing method and recipe. The farm is run by Senel Campos along with his son Alan, managing three estates spread across the steep terrains of southern Costa Rica.Senel Campos' story is a tale of consistency and gradual development. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry.
