For many Ethiopians, coffee is a symbol, a national pride, and a lifestyle – the finalist of last year's Cup of Excellence certainly belongs to this group! His small farm of about 8 hectares is located in the Bensa region, which, in our opinion, holds the best quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.Javier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be known worldwide as the Windows desktop background. The Fernandez family (because there is also a second son, Nahun!) is not afraid to play around with processing, and thanks to bold experiments, year after year they deliver some of the best lots in all of Santa Barbara. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMWhat we have here is a 66-34 blend. The Ethiopia was processed as a natural – drying the coffee seeds inside the whole fruit. Freshly picked cherries undergo an initial selection, during which those with defects are rejected. Then, they are spread across so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.On the other hand, Javier's lot is a longer-fermented honey – before depulping, the cherries fermented for 96 hours in a tank, and only later were they spread out to dry with a thick layer of mucilage. This technique extracted more deep, fruity-wine notes from the coffee.ROASTER'S OPINIONHere is our concept for this espresso: we created a roast profile that showcases the beautiful notes of flowers and fruits typical of high-quality Ethiopian coffees, but at the same time, on the flip side, offers quite a bit of chocolate-dessert depth, which also balances the acidity and gives the cup equilibrium. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, syrupy aftertaste!Store in a dry and cool place.

At the height of the season, when the volume of picked cherries is greatest, beans are sometimes transferred to the neighbouring fazenda belonging to Ivans brother. For their naturally processed lots, the whole cherry is transferred to raised African beds to slowly dry in the sun. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. The agronomist works directly with the farmers, assisting them in gaining access to tools and selecting cultivation methods best suited to the conditions of their local plots.The station collaborates with 1,074 smallholder producers, each of whom owns an average of about 150 coffee trees. The plantations are situated at altitudes above 1,700 meters above sea level, near the Kibira forest, which favors obtaining high-quality raw material. The station itself has over 200 drying beds and can process up to 750 tons of coffee cherries annually. The entire process — from cultivation to processing — is covered by a monitoring system that ensures full traceability.Nemba is also engaged in the development of local communities, implementing projects that support farmers, including animal husbandry, strengthening cooperative structures, and improving crop yield.ROASTER'S OPINIONNemba is a washing station whose coffees we are always very keen to reach for. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. The aftertaste remains long, caramelly, and pleasantly sweet, while the acidity is low, smooth, and perfectly highlights the high natural sweetness.RECIPEUse your favorite AeroPress recipe. The producers focus on precise and responsible coffee processing, aiming to express the character of the local terroir while respecting the natural environment. During the harvest season, the farm employs around 15 people and produces approximately 5.5 tons of coffee annually from just under two hectares, cultivating several botanical varieties processed using different methods.Coffee production at this location comes with challenges such as variable weather conditions and rising operating costs. In response, the owners plan new plantings of varieties better adapted to the local climate, as well as a gradual expansion of their cultivation area. Since 2022, the farm has also been investing in the development of controlled fermentation infrastructure, which is used not only by the owners themselves but also by neighboring producers seeking to improve the quality of their coffees. This offering is another coffee from this farm in our portfolio—this time naturally processed Caturra and Red Catuai from the latest harvest in Costa Rica.ABOUT THE COFFEEAt the farm, every stage of the process is closely monitored and documented, allowing for consistent quality improvements from season to season. This lot was prepared using the natural processing method. Cherries of the Red Catuai and Caturra varieties are first placed in a water bath for flotation, during which selection takes place—only healthy, fully ripe cherries continue to the next stage, while defective fruit is removed.The cherries are then disinfected using ozone to limit the development of undesirable microorganisms. The next step is drying the whole fruit on raised beds typical of African coffee farms, under full sun. This process lasted 28 days and required regular turning of the coffee to ensure even moisture evaporation. The beans ultimately reached a moisture content of 10.5%.After drying, the coffee is placed in GrainPro bags, where it rests and stabilizes for at least one month. The final stage takes place at a dry mill, where the coffee is hulled, sorted by size and density, and subjected to electronic color sorting before shipment.Costa Rican coffees are often associated with pronounced sweetness, typically resulting from honey processing. In this case, however, we are dealing with a naturally processed coffee that dried for an extended period in full sun. The result is a very clean and transparent flavor profile, featuring notes of ripe grapefruit, plum, and dark chocolate. La Laguna stands out with an intense sweetness reminiscent of maple syrup. The body is high and almost oily, while the acidity is low and soft, with a subtle grapefruit accent. Altogether, this creates a smooth, harmonious, and well-balanced coffee.BREW RECIPEUse your preferred brewing method and recipe. Brew this coffee as you normally would, but grind it slightly finer than usual and use water at approximately 95–97°C.Store in a cold and dry space.

The Brazilian beans are dried on concrete patios in a dry climate, while the Ugandan beans undergo selection, flotation, and drying on raised beds with fermentation, giving them a fruity character. The combination of both creates a sweet, tropical-chocolate profile, known as LOW Jungle Fruit.The Brazilian beans were decaffeinated using supercritical CO₂, which removes caffeine while preserving aroma and structure. The brew is light, intensely tropical-fruity with a delicate chocolate background, full-bodied with smooth acidity, and a long, fruity finish that highlights its character.In 250 g of brew prepared according to the V60 protocol, 57.2 mg of caffeine was measured, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER’S NOTELOW Jungle Fruit presents itself as a brew with a pronounced tropical-fruity profile and a subtle chocolate background. Juicy notes of pineapple and passion fruit dominate, enriched by accents of apricot and ripe stone fruits.
