We have been buying coffee from Willy, via the importer 1000 Hills, since the very beginning of HAYB. When Willy let us know last year that he was having trouble with his cherry size sorting machine and his lot contained various screen sizes, we only asked one thing: "Willy, we understand, but how’s the flavor?". We were assured that on-site, the coffee tastes the same as every year – everything is in its place. We ordered samples and decided on this lot, even though the beans vary significantly in size. Because flavor comes first, right?If we had decided not to take this batch, the farm would have had to sell the goods on the local market for much less money or somehow sort it again – sending only the larger beans to Europe and leaving the "little ones" in Rwanda. The result would be the same: less money for the Mahembe farm. I’m glad we have this coffee because it’s a perfect example of what I like most about coffee – flavor first.I love drinking coffees when someone treats me, or blind at a cupping table. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. Nearly four decades ago he started with hard labor at a processing station—milling, sorting, drying—where he learned the foundations of coffee processing. Today he runs his own farm, El Renacer, where every step of processing is dialed in to perfection.I chose a Colombian SL28, a super fruity and vibrant variety that already promises a party for your taste buds. On top of that, we add ginger co-fermentation. In short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a bit of panela (a fancy kind of sugar), add freshly harvested cherries, and let everything ferment for 72 hours. After fermentation and depulping, the coffee is dried until it reaches ideal moisture and stability.So what does it taste like, my friend? A total flavor festival. The co-ferment takes center stage, but in the background you’ll find mandarin, lemongrass, high sweetness, and lots of citrus notes.
