In the cup, you can expect the hints of jasmine, apricot and orange.Country: EthiopiaRegion: GujiFarm: Tagel AlamayehuVarietal: 74110Processing: WashedAltitude: 2300 m a.s.l.ABOUT THE REGION AND PRODUCERThis coffee comes from the Guji region, specifically the Hambela Wamena area, situated at an altitude of approximately 2300 m a.s.l. This is one of Ethiopia's most esteemed terroirs—the extreme altitude, cool climate, and slow ripening of the fruit result in a high sugar concentration and extraordinary aromatic precision. The project is led by Tagel Alamayehu—owner of the Olkai export company and coordinator of the Hambela Goro station. His story is personal and deeply rooted in the region. Tagel’s father was one of the coffee pioneers in Guji and built the first washing station in the Bule Hora community. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics. The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. Drying takes place on African beds for 10–12 days, depending on weather conditions. The cup is dominated by an intense jasmine aroma, which builds lightness and elegance. The flavor features juicy orange, providing freshness and a clear, citric acidity, while the experience is rounded off by ripe, sweet apricot, bringing softness and fruity depth.Store in a cold and dry space.

Bracia Ziółkowscy - Kenya Inoi Kaguyu AA Washed Filter 250 g

Roasting date: 16.06.2026

Whole-bean specialty coffee from Kenya, roasted by Bracia Ziółkowscy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of raspberry, cherry and caramel.Origin: KenyaRegion: KirinyagaFarm: InoiVariety: SL 28, SL 34, Batian, Ruiru 11Processing: WashedAltitude: 1650-1800 m a.s.l.Cupping score: 86 / 100ABOUT THE REGIONKaguyu Factory is a washing station located in the Kirinyaga region, on the fertile, volcanic slopes of Mount Kenya. Situated at an altitude of 1750–1800 m a.s.l., it benefits from excellent coffee-growing conditions: abundant rainfall, fertile red soils, and the cool climate characteristic of the surroundings of the country's highest peak.Kaguyu belongs to the Inoi Farmers Cooperative Society. Coffee is delivered here by smallholders, who usually own a few hundred coffee trees each. This model is typical for Kenya — instead of large plantations, thousands of small family farms dominate. Combined with specialized washing stations, it allows maintaining a very high level of selection and raw material quality.ABOUT THE PROCESSINGThe coffee is processed using the fully washed method with double fermentation, which is classic for Kenya. Carefully selected cherries reach the station on the very same day after harvesting. After depulping, the beans undergo overnight fermentation, then they are washed in sorting channels, soaked for another 24–48 hours in clean water, and dried on raised beds. It is this precise processing that is responsible for the clarity of flavor and high sweetness characteristic of the best Kenyan coffees.ROASTER'S OPINIONSweet and refreshing. A bit like blackberry jam, a bit like currant juice. And all of this with a subtle hint of caramel.Store in a cool, dry place.

The Brazilian beans are dried on concrete patios in a dry climate, which gives them a clean, chocolate-forward profile, while the Rwandan Bourbon is dried on raised beds in a more humid climate, developing a fruit-driven character. The Brazilian beans were decaffeinated using the supercritical CO₂ method, which removes caffeine while preserving aroma and structure. The LOW Very Berry brew is velvety and light, combining berry and chocolate notes with subtle citrus accents. It features high sweetness, a full body, and gentle acidity, with a long chocolate finish completing the composition. In 250 g of brew prepared according to the V60 protocol, 45.1 mg of caffeine was measured, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER'S OPINIONStore in a cold and dry space.

Hard Beans - Costa Rica Los Cipreses Milenio Natural Anaerobic Filter 200 g

Manufacturer: HARD BEANS

Roasting date: 18.05.2026

Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of orange, mango and mik chocolate.Origin: Costa Rica Region: Naranjo, West ValleyFarm: Los CipresesProcessing method: Natural AnaerobicVariety: MilenioAltitude: 1600 – 1650 m a.s.l.ABOUT THE FARMBehind this coffee is the Salazar family from the Los Cipreses farm in Naranjo, located in the West Valley region of Costa Rica. For over four decades, they sold their coffee to local cooperatives, but since 2018, they began developing production with a greater focus on the specialty segment. A significant step was the launch of their own mill, Beneficio San Cristóbal, which gives them greater control over quality and processing. The crops are situated at an altitude of approximately 1600–1650 m a.s.l.ABOUT THE VARIETYMilenio, also designated as H10, is a variety with very high yield potential, high resistance to coffee leaf rust, and good quality potential at higher altitudes. World Coffee Research identifies it as a hybrid with very high productivity and good quality above 1300 meters. In practice, it is a material that successfully combines agronomic traits with sensory potential.ABOUT THE PROCESSINGNatural anaerobic is a combination of two process elements. "Anaerobic" refers to fermentation in an environment with limited or eliminated access to oxygen, usually in closed tanks. "Natural," on the other hand, means that the bean is dried within the whole fruit rather than after the pulp has been removed. Such processing typically enhances flavor intensity, sweetness, and the fruity character of the coffee while providing a more saturated profile.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseBrewing time: 3:30 minutesMethod: Pour the water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely filter through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cold and dry space.

Heresy - Illuminati Blend Espresso 252 g

Manufacturer: HERESY

Roasting date: 30.06.2026

Whole-bean specialty coffee from Colombia and Honduras, roasted by Heresy roasting brand. Dark roast, perfect for espresso machines and moka pots. You can expect hints of caramel, jam chocolate, dried fruits and wine.Origin: Colombia, HondurasRegion: Cauca / Santa BarbaraFarm: El Tambo / Javier FernandezProcessing: Washed / Fermented HoneyAltitude: 2050 / 1600 m a.s.l.Cupping score: 86 / 100 ABOUT THE FARM AND THE COFFEE PRODUCEREl TamboThis exceptionally clean and complex lot is the result of the work of four small-scale producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on several-hectare farms in the El Tambo micro-region, located west of Popayan, the capital of the Cauca department. The following synergy of factors makes the quality of their raw material so phenomenal:the microclimate in El Tambo and the cultivation altitude reaching above 2,000 meters result in slower cherry ripening, while lower humidity facilitates the drying process: the processed coffee loses water in a predictable and controlled manner,a thoughtful and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal air throughput and sunlight, the producers' modern knowledge of fertilization combined with a traditional practice known locally as “re-re,” which involves the selective harvesting of overripe, undeveloped, or dried fruits and leaving them on the ground by the trees: thanks to this, more pests feed on the “waste” instead of attacking healthy batches, and, of course, conscious, restrictive cherry picking at the optimal ripeness stage combined with years of experience in the fermentation and drying process.Only the local population works during the harvest, forming the core of the community of several small El Tambo villages, which has naturally evolved around the continuous, seasonal cycle of coffee cultivation for generations.Javier FernandezJavier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be world-famous as a Windows desktop wallpaper. The Fernandez family (there is also a second son, Nahun!) is not afraid to play with processing, and thanks to bold experiments, they deliver some of the best lots in all of Santa Barbara year after year. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMIn the current Illuminati lineup, we have a combination of washed and honey processing with extended fermentation. El Tambo is a classic washed. Javier Fernandez is a more fermented wild card.ROASTER'S OPINIONOnce again, we apply the equation here: very good + very good ≤ very good. In the base, there is deep caramel sweetness and plenty of jammy fruitiness, the dark-blue, forest kind. And as a joker, a winey-tropical honey. 21st-century synergy. An espresso shot of this is pure goodness. Illuminati offers greater complexity than a classic Brazil. At the same time, it is very sweet, slightly fruity, and goes down well solo or with milk. Balance and a pleasant, yet in no way overpowering acidity – that is our main plan for this blend!Store in a cold and dry space.
Heresy - Pastor Universal Heretic Blend 252g

Manufacturer: HERESY

Roasting date: 30.06.2026

A blend of specialty quality coffees, roasted at Heresy roastery by the 2020 Roasting Vice-Champion. Dark roasted, designed to be brewed in an espresso machine, café, frenchpress or pour-over methods of brewing or brewing in a cup. Profile with low acidity and higher bitterness. This is the most budget-friendly coffee in Heresy's portfolio and perhaps the most heretical! Pastor is a blend of coffees from the previous season, which proves that there is nothing wrong with transparently communicating the harvest date! We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it!WHAT A HERESYAlmost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. There are different ideas about how to use them. Quite a few roasters sell them at regular price, without disclosing the harvest date, some add them to cheaper blends, others try to hide the flavor with darker roasting or aromatization. To put the emphasis on fresh, up-to-date crops in our offerings, we always include their dates in the description of our lots. We dream of making this an industry standard! So that the consumer can more consciously judge quality and freshness against price. Meanwhile, there is nothing wrong with "past crops" themselves, if we say so directly and price them accordingly lower. It may be one of the few such approaches in the market, but it's time to bring a little more transparency to the subject of past crop coffees!COFFEEVariety: blendProcessing: blendProducer: blendFarm: blendOrigin: blendElevation: variousHarvest: harvest from the previous season!Cupping score: coffees scoring a minimum of 86 / 100 points when cupping on fresh beansROASTER'S REVIEWIf you are a coffee geek looking for flowers and fruits in your coffee - this is not the product for you. If you are instead looking for a gift for your mother, grandmother or someone who has not yet explored the world of specialty coffee and prefers darker classic coffees - we have it! It's a good coffee, and by using beans from previous harvests, it also has a much lower price, because we sell it 'at cost value'! It's also our way of 'less waste', because some great beans were standing in our warehouse, with no idea what to do with them. And that's how PASTor came into being.PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.Store in a cold and dry space.
Kafar - Colombia La Roma Washed Filter 250 g

It is also a region with a difficult history, where despite many challenges local producers continue to develop and cultivate coffee of the highest quality. This lot was produced as part of the Black Condor Project – an initiative supporting more than 100 independent farmers through fair pricing, training, and access to modern processing infrastructure. The project is led by Emmanuel, a producer raised in a family with a multi-generational coffee tradition. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. Farmers are offered prices up to 18–20% higher than the market average, and regular workshops on fermentation, drying, and cupping help continuously improve production standards.ABOUT COFFEEColombia La Roma undergoes a classic washed process, which highlights the natural clarity and elegance of Colombian varieties such as Caturra and Castillo. Careful cherry selection, controlled fermentation, and slow drying contribute to a balanced and harmonious flavor profile. In the cup, this coffee offers notes of chocolate and almonds that create a sweet, creamy base. These are complemented by hints of red fruits, bringing freshness and a delicate fruity acidity. The cup is smooth and velvety, with a pleasant, lingering finish. It is an exceptionally versatile coffee that works beautifully as espresso, where its chocolate-nut depth stands out, and equally well in filter methods, where its fruitier and more complex character becomes more pronounced.Colombia La Roma from the KAFAR roastery is an example of classic Colombian specialty coffee – balanced, elegant, and full of character, while also representing the story of the people who are building the future of their communities through coffee.Store in a cold and dry space.

Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land. The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile. This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. However, the character of this coffee is primarily built by SL28 and SL34.ABOUT THE PROCESSINGAfter harvest, the coffee cherries are delivered to the station and sorted. Then, the skin and part of the pulp are removed from the fruit, and the beans undergo fermentation, washing, and drying on raised beds. In the case of Mugaya, clean water from the Rwamuthambi River is used in the process. The washed process allows for limiting the influence of the pulp on the coffee's flavor and better showcases the natural acidity, cleanliness of the aroma, and structure of the brew.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind: mediumBrewing time: 3:30 minutesMethod: Pour water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, change the grind size to coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.
HAYB - Ethiopia Chire Washed Filter 250 g

Roasting date: 22.05.2026

Whole-bean specialty coffee from Ethiopia, roasted in Poland by HAYB. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of black tea, red apple and vanilla.Origin: EthiopiaRegion: SidamaVariety: HeirloomProcessing: WashedAltitude: 1900 - 2100 m a.s.l.Cupping score: 87 / 100This is pure madnessChire is a high-altitude micro-region in Kere Woreda, located in the heart of Ethiopian Sidamo – a place famous for years for its exceptional coffee quality. The local washing station, Chire Washing Station, processes coffees using both washed and natural methods.Behind every cup are over 900 smallholder farmers who cultivate coffee trees on small, 1–2-hectare plots. These small farms, fertile soils, and high cultivation altitudes translate into beans full of character and juicy complexity. However, the Chire region does not live by coffee alone – alongside the coffee trees, enset (known as the "false banana") and creamy avocados also grow here. This is a landscape of abundance, where coffee matures slowly, gaining sweetness and juiciness. Exactly like this washed lot in front of you – black, sweet tea, red apple (sweet, crisp, and juicy), and a creamy vanilla paste. Pure madness.Store in a dry and cool place.
Heresy - Elixir Unstable Blend Filter 404 g

Roasting date: 21.04.2026

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of red fruits, chocolate, citrus and flowers.Origin: ColombiaRegion: Cauca / and othersProcessing: washed / natural / honey Altitude: 1900 - 2150 m n. p. m.Cupping score: 86 / 100ABOUT THE FARM AND PRODUCERSThis exceptionally clean and complex lot is the result of the work of four small producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. Heraclitus already knew that, and we trust the guy. What he couldn’t quite grasp was that life is like helium-6 isotope – an outrageously unstable joke of the universe. We know this, and that’s how Elixir was born. Wildly unstable, always sweet. Different every time, always fruity. We throw our best coffees into it, because honestly, who’s going to stop us? Take a sip of Elixir and feel… however you want to feel.Store in a cold and dry space.

You can expect hints of nuts, yellow plum and toffee.Country: PeruProcessing: WashedAltitude: 1620 m a.s.l.Varietal: Colasay BourbonABOUT THE COFFEEAt NOMAD looking to establish a new long-term relationship for our house coffee section. Sofie from Sucafina recommended that we contact Alfonso from Café Monteverde and his Timuyacu farm, as his philosophy and values in the pursuit of quality, caring for his people, and protecting the environment aligned with NOMAD values.Alfonso sent us samples of several of his lots, including this Washed Bourbon from Colasay Washed was a perfect fit for what we were looking for. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. The resulting parchment is placed on drying beds or patios where it is regularly turned to ensure even drying. The drying process takes approximately 15 to 20 days. Once dry and at the required moisture level, the parchment is stored on the farm for approximately 60 days before being transported to the dry mill for threshing and export.Store in a cold and dry space.
