He comes from a family of coffee growers who, after moving away from conventional production and spending a period raising cattle, eventually settled in their current location. It was here that Sebastian decided to focus on producing high-quality specialty coffee.The farm covers 2.8 hectares and yields approximately 70 quintals of coffee annually. The main variety is Parainema, complemented by a young Geisha plantation. About half of the coffee is grown under controlled shade. Sebastian uses fertilization based on chicken manure and coffee pulp, supplemented with local blends adjusted according to soil analysis. He regularly prunes the coffee trees and monitors pests and diseases such as coffee borer beetle, coffee leaf rust, and leaf spot. In addition to coffee, he also grows avocados, bananas, and blackberries, while preserving trees and minimizing the environmental impact of farming.PROCESSINGThe coffee is processed using the honey method. The cherries ferment for approximately 36 hours in plastic bags, after which they are depulped and undergo a second, dry fermentation lasting another 36 hours. After fermentation, the beans are dried in parabolic solar dryers for 15–18 days, with regular turning and hand sorting. Once dried, the coffee is packed and stored on the farm before being delivered to the exporter San Vicente. The honey process requires minimal water usage, supporting sustainable and responsible production.ROASTER’S OPINIONSebastian Mejía’s Parainema shows two distinct faces that complement each other exceptionally well. On one hand, it offers medium, well-developed, and complex acidity typical of the Parainema variety. On the other, the influence of the honey process is clearly evident, delivering high sweetness and an intensely fruity, juicy profile.The aroma is very pleasant and enveloping, dominated by notes of ripe strawberries and citrus, supported by subtle floral accents that add lightness and elegance. On the palate, the coffee unfolds in layers: pronounced sweetness of tropical fruits and strawberries combines with lively, clean acidity reminiscent of various ripe citrus fruits.Despite its high sweetness and noticeable acidity, the cup remains very well balanced, smooth, and free of bitterness. The coffee is fresh, refreshing, and extremely drinkable, while still surprising with its intensity and clarity of flavor—especially for a coffee from Honduras. Today, 214 nearby farmers deliver their freshly harvested cherries to El Puente—most of them of the Castillo variety.El Puente focuses primarily on honey, natural, and other experimental fermentation methods, all while minimizing water usage.This particular lot is 100% Castillo, processed using the honey method. Upon arrival at the station, cherries underwent an initial selection to remove debris and under- or overripe fruit. Then, they were placed in a water tank to eliminate remaining floaters and defects. Next, the cherries were pulped to remove the skin, and the beans were placed in anaerobic fermentation tanks for 6 hours. Afterward, they were dried on raised beds for about 20 days until reaching optimal moisture content. After hand-picking, the floaters were sorted from the coffee and then the coffee was hulled and sent to fermentation tanks, where after 18-36 hours of fermentation, the beans were freed from the remaining pulp. After washing in channels, the subsequent beans were spread out in parchment on African beds, where they are dried for an average of 14-30 days depending on the weather. It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. While there are usually two beans in each fruit, a cherry with a peaberry mutation produces only one rounder bean. Peaberry mutations occur in approximately 5% of all coffee varieties. These beans are known for being rounder, smaller, and denser, which, when handled correctly, can contribute to a more even roast color.PROCESSINGCoffee cherries are carefully handpicked at peak ripeness by smallholder farmers and delivered to the factory for processing. The cherries undergo a Fully washed method, where they are first sorted, then pulped to remove the outer skin. Parchment is then fermented in concrete tanks for 12 to 24 hours, depending on temperature and climate conditions, to break down the mucilage. After fermentation, parchment is washed through grading channels using fresh water. During the peak season, parchment may be soaked in clean, circulating water for up to 24 hours before being transferred to raised beds for drying. The drying process lasts 5 to 21 days , with workers frequently turning the parchment and covering it during the hottest part of the day to ensure even drying and prevent defects.VARIETYSL28 is one of the best known and most respected African varieties. From Kenya, where it was originally selected in the 1930s, it has spread to other parts of Africa (it is particularly important in the Arabica growing areas of Uganda) and now to Latin America. The variety is suitable for medium to high altitudes and is drought tolerant, but susceptible to the main coffee diseases. SL28 is characterised by rusticity, a trait that means it can be left untended for several years or even decades and then return to successful production. Many parts of Kenya have SL28 trees that are 60-80 years old and still productive. The variety was selected at the former Scott Agricultural Laboratories (now the National Agricultural Laboratories, NARL, located in Kabete). The individual tree selections made at Scott Laboratories between 1935 and 1939 were prefixed with SL. There were 42 in total and they were examined for yield, quality and resistance to drought and disease. Recent genetic tests have confirmed that SL28 is related to the Bourbon genetic group. It has become valued for its sweet, complex flavour with vinous undertones.SL34 was originally selected in Kenya in the late 1930s at Scott Agricultural Laboratories. It is very susceptible to major diseases such as coffee rust, coffee berry blight and coffee berry disease. Therefore, proper disease control and prevention strategies are essential for its successful cultivation. Recent genetic tests have shown that SL34 is related to the Typica genetic group. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. Its operations are overseen by an agronomist responsible for implementing good agricultural practices and educating producers. The agronomist works directly with the farmers, assisting them in gaining access to tools and selecting cultivation methods best suited to the conditions of their local plots.The station collaborates with 1,074 smallholder producers, each of whom owns an average of about 150 coffee trees. The plantations are situated at altitudes above 1,700 meters above sea level, near the Kibira forest, which favors obtaining high-quality raw material. The station itself has over 200 drying beds and can process up to 750 tons of coffee cherries annually. The entire process — from cultivation to processing — is covered by a monitoring system that ensures full traceability.Nemba is also engaged in the development of local communities, implementing projects that support farmers, including animal husbandry, strengthening cooperative structures, and improving crop yield.ROASTER'S OPINIONNemba is a washing station whose coffees we are always very keen to reach for. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. The aftertaste remains long, caramelly, and pleasantly sweet, while the acidity is low, smooth, and perfectly highlights the high natural sweetness.RECIPEUse your favorite AeroPress recipe.
