The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. He owns 6.5 hectares of coffee farm in one place and another 3 hectares in another place within the same village. He works full time in his farm assisted by his able children who completed their primary education but couldn’t find another job in towns. Mr Bekele, who is the father of 11 children, fully relied on the income he generated from his coffee farm. The coffee farm business also supports his two elder married sons who also work together with him.Mr Bekele Gemeda was incredibly grateful to see the care he has put into his coffee showed well enough in the cup to have his coffee kept separate, something that is rare in Ethiopia. The coffee is picked ripe and depulped the same day. There is usually a fermentation period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage. He is guided by the idea of producing the highest quality specialty coffee in Colombia, and this batch of beans clearly proves it.In 2006, Oscar's father, Ricaurte Hernandez, won the Colombian Cup of Excellence. Oscar continues this tradition, and thanks to him and his approach, Los Nogales is a center of innovation and information for all proactive farmers in this region.Detailed description of this coffee's processing method:Process: mosto fermentationSelection of ripe fruit: The process begins with the careful harvesting of only ripe coffee cherries. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels. Squeezed juice from the coffee cherry skins themselves, which contains a high amount of natural sugars—the so-called "mosto"—is added to them. This can enhance the flavor profile and give the coffee sweet notes.Fermentation: Coffee beans undergo a fermentation process lasting 120 hours. During this time, sugars break down, which affects the coffee's flavor and acidity. Pre-fermentation agents, similar to bread sourdough, are also added to give the coffee unique properties.Sun drying: Finally, the fermented coffee beans are sun-dried for 15 days. Even a small proportion of unripe or damaged fruits could negatively affect the final coffee profile.Upon arrival at the processing station, the fruits undergo flotation sorting. The cherries go into water tanks where lower-density, damaged, or unripe fruits are removed. Next, a manual selection is carried out so that only the highest quality fruits move on to the next stage.The next step is drying the whole fruits on raised African beds. This is the most important stage of the whole process. For about 3–5 weeks, the fruits slowly release moisture, remaining whole along with the skin and pulp. During this time, natural sugars and aromatic compounds gradually penetrate the beans, building characteristic sweetness and a rich flavor profile.During drying, the fruits are turned regularly to ensure even moisture evaporation and to prevent uncontrolled fermentation. During the hottest hours of the day and during rainfall, the beds are covered, which allows stable drying conditions to be maintained and preserves the high quality of the beans.Upon reaching the appropriate moisture level, the coffee goes to a warehouse where it undergoes a stabilization stage (resting). Thanks to this, moisture is evenly distributed inside the beans, which translates to greater stability during transport and subsequent roasting.Only at the very end are the dried skin and pulp mechanically removed, and the beans undergo a final selection in terms of size, density, and quality. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative. After the depulping process, which separates the seed from the fruit, it is sorted by bean size and then separately fermented in a tank for 10 hours. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions.
