The coffee grows at an altitude of 1,600–2,100 meters above sea level in fertile volcanic soils and a diverse microclimate. Cherries reach the Rubirizi station through local leaders who coordinate their harvest and ensure quality right from the delivery stage. The combination of high altitude, careful selection, and the experience of local producers yields an intense, fruity-chocolate character.An interesting aspect is how this lot was selected. Beans that, due to their appearance—darker parchment, spots, or pulp residue—would previously have been automatically categorized into a lower grade, were re-evaluated based on cup quality. Those without actual defects were selected and prepared as a separate, more affordably priced lot. The coffee undergoes multi-stage sorting, supported by an optical sorter, followed by intensive natural processing with a short anaerobic fermentation stage. The result is a very sweet, complex, and intense coffee.ROASTER'S OPINIONThe profile of this Ugandan coffee is the result of a long fermentation—ripe mango and dark chocolate combine with notes of balsamico and rum, creating a thick, intense character unusual for coffees from the Mount Elgon area. It is a very fruity and complex coffee with an exceptionally deep profile.In the aroma, ripe, almost caramelized mango dominates, accompanied by a sweet balsamic note and a delicate fermented accent. In flavor, mango builds an intense, syrupy sweetness, while balsamico and rum give depth and a slightly liqueur-like character to the whole profile. The profile finishes with dark chocolate and a long aftertaste. The coffee has a full, thick body and low, mild acidity, keeping it sweet, intense, and remarkably expressive.Store in a cool and dry place.

Since 1929, it has been managed by a group of Swiss investors. The coffee trees grow at an altitude of 1,600–1,765 meters above sea level, under the shade of trees, which promotes the slow ripening of the fruit and the development of a complex profile.Over 200 people work permanently on the farm, and during the harvest season, up to 2,000 seasonal workers join them. The farm provides housing, medical care, and education for workers and their families, while focusing on responsible and environmentally friendly farming methods.The name "Mondul" comes from natural springs that have nourished the crops and local communities for generations. Water from these springs is also used for wet processing – after harvesting, ripe cherries are washed and fermented, then dried on raised African beds for about 7 days. This process preserves the clarity of the profile and brings out a delicate floral note, citrus, and tea-like qualities, without unnecessary heaviness or fermented character.ROASTER'S OPINIONIt is rare to come across coffee from a farm that has been operating continuously since 1899. Mondul is precisely such a case – one of the oldest and most recognizable farms in Tanzania, now belonging to Burka Estate at the foot of Mount Meru. The washed process emphasizes the clarity of the profile, allowing delicate florals, citrus, and a tea-like note to shine through.In the aroma, delicate flowers and fresh lemon come to the fore, with a light, tea-like note appearing in the background. In flavor, stone fruits build sweetness, while lemon brings a refreshing, medium acidity that does not dominate the profile. The finish remains gently tea-like. The station is managed by Alemu Bukato, and the cherries delivered to it come from around 650 local farmers cultivating coffee at altitudes of 1,900–2,100 meters above sea level. High altitude, fertile soils, and regular rainfall create conditions for which Yirgacheffe is famous for exceptionally aromatic coffees with a floral and fruity character.Only ripe cherries enter the processing stage, which, after selection, are dried whole on raised African beds for 12–15 days. During this time, they are regularly turned and protected from intense sun, rain, and night moisture. Slow and controlled drying allows the beans to absorb sugars from the pulp, building the intense sweetness and characteristic floral notes of the finest Ethiopian natural process coffees. After drying, the coffee is hulled, sorted, and hand-picked before packaging.ROASTER'S OPINIONFor years, Yirgacheffe has been famous for some of the most sought-after Ethiopian microlots, and Banko Gotiti is among the most well-known stations in the region. This coffee stands out with an unusual combination of features from two different processes – intense floral notes and citrus acidity typical of washed coffees, alongside clear, sweet strawberry associated with natural process coffees.Intense flowers dominate the aroma, accompanied by delicate citrus and sweet berries. In flavor, floral notes combine with a distinct strawberry note, while refreshing citrus acidity brings lightness to the whole profile. So we decided to make Rafał's life a little nicer, ordered samples, and chose this (and one more!) great lot.Located in Ngozi Province, the Mubuga processing station collaborates with over 1,900 local farmers who deliver their carefully selected harvests here every year. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. It brings a tear to the eye! Willy is a great guy, full of passion, faith, and energy for testing new farming methods. This season, we have two coffees from him from two different lots of his farm: Murundo comes first, and we have Mahembe up our sleeve for you.Willy experimented here with anaerobic fermentation. What is this "anaerobic" thing anyway? In this process, coffee ferments in an oxygen-free environment – in this case, it lasted for 72 hours. Prolonged fermentation adds a lot of sweetness and a characteristic "funk" to the coffee. It's easy to overdo the latter, but Willy keeps an eye on everything, so you won't find any aggressive, lemony, or vinegary notes in the cup. The coffee is clean, elegant, and leaves a very long, pleasant finish!Store in a cool, dry place.
