ABOUT THE FARM
Finca El Cedro is a 2-hectare farm run by Henry Munoz and Monika Berdugo. The plantation is a legacy left by Henry's father. The current host passionately continues the family tradition of cultivating several botanical coffee varieties.
Here is how Henry described this specific harvest: "We hand-pick only ripe coffee cherries. Then the coffee is washed and left as cherries in bags for two days. Next, the coffee is depulped and left in bags in a mucilage state for another two days. Then the coffee is washed and transported to the drying area. During the day, the coffee is intensively stirred several times to dry as quickly as possible. The drying process takes 20 to 25 days, depending on climatic conditions. After drying, the coffee is packed into bags and left to stabilize before delivering samples."
