His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. The Simalem farm operates in a sustainable manner, without the intensive use of chemicals, and its practices are certified and transparent. With great passion, he developed his skills across the entire production process, from sensory assessment (cupping) to coffee processing methods. Today, Don Linarco produces coffee using various techniques while also managing other farms.ABOUT THE VARIETYBourbon Sidra is an exceptional coffee variety, being a hybrid of two esteemed lineages: Bourbon and Typica (or according to some sources, Gesha). It is most commonly cultivated in Ecuador and Colombia. It is characterized by a complex flavor profile, where one can often find notes of tropical fruits, citrus, and florals, complemented by a delicate sweetness. The whole profile is completed by a bright, vibrant acidity and a clean finish. Due to its uniqueness and rarity on the market, this variety is frequently used in barista competitions.THE PROCESS The coffee cherries are hand-picked and carefully selected. They are then subjected to a washing process, during which floating cherries are removed from the surface of the water. The next stage is a 90-hour fermentation in hermetically sealed barrels. After fermentation, the cherries are dried under cover for about 28 days, and the final stabilization lasts for 15 days.A coffee for explorers. Lightly roasted, with dark fruits in the aroma. The average farmer in this region only has approximately 250 trees, which is extremely small. They are picking their ripe coffee by hand here. This washing station was established in 1984 and features adequate soaking and floating tank for optimal coffee processing and has over 200 drying tables. As a result, they can process nearly 20,000 bags of coffee in total here. As a result of this washing station being established in the 80s, many small-holder farmers have gained access to capital investments, education, and infrastructure to produce exceptional coffees and improve their livelihoods. After coffee has dried, it it transported to the capital city of Gitega for dry milling and export. Natural Coffees in Burundi are picked ripe cherries then laid on raised beds for drying for varying times depending on weather.ROASTER'S OPINIONVery fruity, reminiscent of plum jam.RECIPE16 g coffee250 g water 96°CMedium grind sizePlace a paper filter in the V60 and rinse it with hot water (96°C). This will heat the dripper and server and remove any paper taste from the filter. For best results, always use filtered water (remember that 98.5% of brewed coffee is water).Discard the rinse water from the server.Grind the coffee beans just before brewing and pour them into the dripper. Gently level the coffee in the center of the V60.Place the V60 on a vessel set on a scale and ensure the water temperature is 96°C.Tare the scale and start the timer.Add 50 grams of water. Your coffee will begin the bloom phase (pre-infusion).After 30 seconds, add water until you reach 100 grams. Pour the water slowly, gently, and in circular clockwise motions.At 00:50, pour up to 200g of hot water.At 01:10, pour up to 250g of hot water.Give the V60 dripper a light swirl and let the coffee draw down.The water should finish filtering through around 3:00. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. Oscar continues this tradition, and thanks to him and his approach, Los Nogales is a center of innovation and information for all proactive farmers in this region.Detailed description of this coffee's processing method:Process: mosto fermentationSelection of ripe fruit: The process begins with the careful harvesting of only ripe coffee cherries. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels. Squeezed juice from the coffee cherry skins themselves, which contains a high amount of natural sugars—the so-called "mosto"—is added to them. The Sanchez Valencia family has developed a complex process, allowing them to achieve stable and repeatable results.ABOUT PROCESSINGThe first stage involves creating a "fermentation starter" – naturally occurring yeasts are extracted from the cherries of the Purple Caturra variety. Next, they are added to concentrated blueberry juice to conduct a pre-fermentation. Then, the starter obtained this way is added to the already harvested coffee cherries sealed in 200-liter fermentation tanks. After this stage, the coffee is processed as a classic washed.We have been roasting infused fermentation coffees for some time now. Of course, they vary, but they share a fairly distinct common trait in their profile. Blueberry was an absolute surprise. We took a slurp and said to ourselves – wow, fudge, toffee, milk chocolate. We've never had anything like this before. Blueberries are there, of course – in the dry aroma, in the flavor. But that is not the main characteristic of this coffee. It reminds us most of éclair candies – hard, but milky and caramelly – with a small blueberry on top. - RoasteryROASTER'S OPINIONOh my! We have been roasting coffees from infused fermentations for some time now, but there has never been anything like this. Caramel, the sweetness of fudge, or maybe toffee in milk chocolate.
