A natural from the Rwandan Ngororero plantation that combines juicy fruitiness with dessert sweetness. This coffee from the Ngororero plantation, located at an altitude of approximately 1,800 meters above sea level, is an excellent example of how carefully executed natural processing can bring out intense fruitiness while maintaining elegance and clarity of flavor.Right from the first sip, exotic notes of dragon fruit appear, transitioning into a sweet accent of chocolate-covered strawberry. The whole is complemented by the aroma of a fresh rhubarb sweet bun, giving the coffee a dessert character. This is a profile full of sweetness, juiciness, and a creamy texture that will perform perfectly in filter methods.



ABOUT PROCESSING


This unique character is primarily due to natural processing, which requires immense precision and patience at every stage.The process begins with the hand-picking of exclusively fully ripe coffee fruits. Every cherry is carefully selected, because in the natural method, the entire fruit remains on the bean throughout the entire drying period. Even a small proportion of unripe or damaged fruits could negatively affect the final coffee profile.


Upon arrival at the processing station, the fruits undergo flotation sorting. The cherries go into water tanks where lower-density, damaged, or unripe fruits are removed. Next, a manual selection is carried out so that only the highest quality fruits move on to the next stage.The next step is drying the whole fruits on raised African beds. This is the most important stage of the whole process. For about 3–5 weeks, the fruits slowly release moisture, remaining whole along with the skin and pulp. During this time, natural sugars and aromatic compounds gradually penetrate the beans, building characteristic sweetness and a rich flavor profile.


During drying, the fruits are turned regularly to ensure even moisture evaporation and to prevent uncontrolled fermentation. During the hottest hours of the day and during rainfall, the beds are covered, which allows stable drying conditions to be maintained and preserves the high quality of the beans.


Upon reaching the appropriate moisture level, the coffee goes to a warehouse where it undergoes a stabilization stage (resting). Thanks to this, moisture is evenly distributed inside the beans, which translates to greater stability during transport and subsequent roasting.Only at the very end are the dried skin and pulp mechanically removed, and the beans undergo a final selection in terms of size, density, and quality. Coffee prepared this way goes to the roastery, retaining the full extent of its fruity character.
