Whole-bean specialty coffee from Costa Rica roasted at HAYB. Dark roast, perfect for espresso machines and moka pots. In the cup, you can expect hints of dried fig, honey and chocolate.Country of origin: Costa RicaRegion: Central ValleyVariety: San IsidroProcessing method: Perla NegraCupping score: 87 / 100Altitude: 1500 m a.s.l.Always something new. And supposedly new, yet a safe bet.I think we order coffees from Oscar and Francisca Chacon every year. When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.

Whole-bean specialty coffee from Colombia, roasted in Warsaw by Coffeelab. Dark roast, perfect for espresso machines and moka pots. You can expect hints of almonds, amaretto and biscuits.Country: ColombiaRegion: HuilaMethod of decaffeination: SugarcaneProcessing: WashedAltitude: 1400 – 2000 m a.s.l.Variety: Castillo, Caturra, ColombiaABOUT COFFEEIn this edition, Decaf but Tasty! reminds us entirely of tiramisu. First, a dessert-like base of sponge fingers. Then plenty of sweetness, notes of almonds and that sweet-bitter amaretto accent. This coffee comes from Huila, Colombia, and follows a classic washed process. The beans are sourced from small-scale producers working on a few hectares each, where selective picking and controlled fermentation are the norm rather than the exception. Depulped on the day of harvest, fermented for 12–36 hours, then thoroughly washed and dried to the desired moisture level. The result is a clean, structured base that translates into clarity and balanced sweetness in espresso.Caffeine is removed using the EA (ethyl acetate) method. It is a compound that occurs naturally in fruit and as a by-product of sugar fermentation. The green coffee, already processed, is first steamed under low pressure to open up its structure. It is then placed in a water-EA solution, which binds to the caffeine molecules. The process is repeated until caffeine is no longer detectable. Finally, the coffee is steamed once more to remove any remaining traces, then dried and prepared for export. The result is a decaffeinated espresso that feels complete. Sweet, expressive and simply good.Store in a cold and dry space.

Whole-bean specialty coffee from Costa Rica roasted at HAYB. Dark roast, perfect for espresso machines and moka pots. In the cup, you can expect hints of milk chocolate, dried fig and raspberry.Country of origin: Costa RicaRegion: TarrazuVariety: CaturraProcessing method: NaturalCupping score: 87 / 100Altitude: 1800-1900 m a.s.l.Natural revolutionYou have already had the opportunity to try a Geisha roasted for espresso from this female farmer – now it is time for Caturra. A sweet shot with notes of milk chocolate, but also plenty of flavor reminiscent of figs and raspberries. Although Caturra was born in Brazil, it made a real career in Colombia, and later precisely in Costa Rica. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated. What is worth knowing about it?Compact growth: Caturra possesses a dwarfism gene. The shrubs are short and stocky, which allows farmers to plant them more densely and makes harvesting the cherries much easier.A demanding patient: The price for high yield is poor health. Caturra is extremely susceptible to coffee leaf rust (roya) and pests, meaning it requires a great deal of attention, knowledge, and care from the farmer.Cup profile: Grown at the right altitude, it rewards you with brilliant quality. Expect a multi-dimensional, vibrant, and clean citric acidity, a medium body, and a distinct sweetness with notes of chocolate, caramel, and juicy fruits. No genetic modifications in a laboratory – a pure, natural revolution that changed the map of the specialty coffee world. Enjoy!Store in a cold and dry space.

The development of certification processes for these specialty coffees allows the cooperative to meet market demand for coffee purchased under specific, ethical conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais, Brazil, between 1915 and 1918. The name "Caturra" comes from the Guarani word meaning "small," referring to the plant's dwarf stature. Due to its small size and densely spaced branches, it can be planted closely together, increasing the yield per area. Caturra contributed to the intensification of coffee farming, particularly in Central America, where it was introduced in the 1940s. This variety also played a crucial role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties.Tabi is a relatively young variety developed in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid. The word "Tabi" comes from the language of Colombia's indigenous people and means "peace" or "life."ABOUT THE PROCESSINGThe coffee undergoes a traditional washed process, which begins with the harvesting of ripe cherries. They are weighed and left for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after approximately 12 hours. Finally, the coffee is sun-dried or machine-dried, depending on the producer's facilities.RECIPERatio: 16.5g (dose) / 36g (yield). Water temperature: 94°C. Grind size: Very fine. Specialty coffee in capsules, sourced from Mexico and roasted by the Hungarian roastery Samurai Shoelace. The package contains 10 capsules compatible with Nespresso® machines. The Story from the roasteryPerhaps ten years ago, we were sitting in a bar in a dusty little Mexican town, somewhere halfway between Saltillo and Torreón. After the fourth tequila, even the peeling plaster on the wall seemed friendly, and we lazily stared into the bottoms of our glasses. Then, out of nowhere, a husky voice spoke:For a moment, we didn't know whether to hide or run. Slowly, we dared to turn around.-¿Le interesa el café mexicano?- he asked with complete seriousness.- Sí…- we answered decisively, because one does not argue with a mariachi in a pink dress. At that moment, a huge fiesta broke out in the bar. Suddenly we felt as if we were in the middle of one of the most extraordinary experiences of our lives - or a very strange dream.Exactly the same surprise awaited us when we first tasted this fantastic Mexican coffee (which was the first Mexican coffee in our story). Can something be both so special and so invigorating? The answer is yes! At Samurai Shoelace, we are not afraid to step outside the box - and this bold spirit can be felt in every single one of our coffee capsules. The green coffee from the farm was roasted by us and encapsulated in the Samurai Shoelace factory in Budapest. Only freshly ground coffee goes into our capsules; we add nothing else! Specialty grade coffee in capsules, originating from Rwanda and roasted for espresso by the Hungarian roastery, Samurai Shoelace. Each pack contains 10 capsules compatible with Nespresso® machines. A true natural Rwandan coffee. Nice and sweet with mild acidity and notes of red berries.Country of origin: RwandaRegion: NyamashekeFarm: KiramboAltitude: 1545 m a.s.l.Varietal: Red BourbonProcess: NaturalABOUT THE REGION AND FARMThis exceptional coffee comes from the Nyamasheke region in southwestern Rwanda, located on the shores of Lake Kivu. It is one of the most valued specialty coffee growing areas in the country. Volcanic soil, the lake's humid microclimate, and an altitude of 1500–2100 m a.s.l. create ideal growing conditions here. Thanks to the slower ripening of the cherries, Rwandan coffee is characterized by a deep, complex flavor profile. The Kirambo washing station is picturesquely situated on a hillside overlooking Lake Kivu. It was established in 2008, but initially operated irregularly. The breakthrough came in 2017 when Rwanda Trading Company (RTC) took over management. Since then, Kirambo has become one of the leading specialty coffee processing centers in the region, regularly delivering highly rated and award-winning lots of beans. The coffee comes from small, family-owned farms that manage small plots of land. For this reason, processing stations were created in the region – they collect cherries from many local suppliers, sort them by quality, and process them using professional equipment, which would be unattainable for individual farmers. Rwanda Trading Company, which manages the washing station, actively supports smallholder producers by offering them agricultural training, crop renovation programs, and financial support. These actions translate into a steady increase in coffee quality, integration of the local community, and improved living conditions for farmers. The coffee cherries are hand-harvested and undergo rigorous selection, and are then processed using the natural (dry) method. The beans dry for 15–22 days on special raised beds, under continuous control of humidity levels. This processing method allows for achieving an extremely intense, fruity profile, rich sweetness, and a complex aroma.FROM THE ROASTERY: The capsule is made of 100% recycled aluminum (including 80% post-consumer recycled aluminum) and is fully recyclable. It is compatible with the Nespresso* Original system. We roast the green coffee and pack it into capsules in our own roastery. Inside, there is exclusively freshly ground, roasted coffee – without any artificial additives.Store in a dry and cool place.
