ABOUT THE COFFEE
Sweet, juicy, and with a unique character. It stands out with notes of ripe cherry and biscuit sweetness, reminiscent of sweets so well known in every Polish home. This lot comes from El Diviso, a family farm in Pitalito, Huila province, located at an altitude of 1,850 meters above sea level. Founded nearly three decades ago by Peter and María Lasso, the farm is currently run by their son Nestor – one of the most pioneering specialty coffee producers in Colombia, known for pushing beyond traditional methods and continuously refining his approach to fermentation and drying. Ombligon is a rare and exceptional variety, processed using El Diviso's signature multi-stage natural method: after selective hand-picking and flotation, the cherries undergo a 40-hour oxidation process, followed by a 40-hour anaerobic fermentation. Juice from the fruit is collected and recirculated, reused in another 28-hour fermentation, ending with a thermal shock. Drying takes place in sealed, temperature-controlled stainless steel dehydrators to preserve all aromatic compounds.

El Diviso Ombligon is a sweet, fruity, and extremely distinctive Colombian coffee with a profile that is hard to forget. The roast profile was crafted to preserve as much of the vibrant character of cherry and orange as possible, emphasizing the juicy, fruity character of the Ombligon variety while gently supporting it with a sweetness reminiscent of biscuits. Their synergy brings back nostalgic childhood memories and the taste of sweets known in every Polish home.

- grind size 7.1 (Fellow Ode II)
- Bloom 75 g water pouring: 0-0:10,
- 150 g water pouring 0:30-0:40,
- 225 g water pouring 1:00-1:10,
- 300 g water pouring 1:30-1:40.
All water should finish drawdown at around 2:00 - 2:15.
Store in a cool and dry place.
