Based in the Huila region of Colombia, he has gained fame in recent years for his work on modern coffee fermentation. On his farms, he develops controlled fermentation methods that allow for the extraction of very intense and precise flavor profiles from the beans.The Huila region has long been recognized as one of the best places for coffee cultivation in Colombia. The high altitude of the plantations, fertile soils, and significant temperature differences between day and night cause the fruit to ripen more slowly, building a higher concentration of sugars and aromas.ABOUT THE PROCESSINGThis lot underwent washed processing with co-fermentation. In the first stage, the fruit undergoes controlled fermentation involving selected microorganisms that enhance tropical fruit aromas. Subsequently, the beans are washed and dried as in the classic washed method. Thanks to this, the coffee maintains the clarity characteristic of washed processing while simultaneously gaining a very distinct, tropical profile. For us, the effect in the cup is like a mango lassi yogurt: sweet, fruity, refreshing, and delicious.ROASTER'S OPINIONLast year, we tasted over 80 co-fermented coffees before ultimately selecting 4 lots for our offer. What captivated us about these 4 lots is that they are not one-dimensional; on the contrary, they are very complex and intricate. This specific one from Rodrigo provides an example of a well-processed co-ferment—done without haste, with composure, and with fermentation tested on small samples before preparing the full batch of coffee. This coffee will bring a lot of pleasure when served hot, but for fans of cold coffees (both V60 on ice and cold brew), it will be a bullseye!Store in a cold and dry space.

Extremely drinkable and highly complex, ranging from red wine notes through processed fruits, finishing with a solid 70–80% dark chocolate character.V60 RECIPECoffee dose – 19 gWater dose – 50 g → 300 gGrind size:8.4 EK43; 23 clicks ComandantePlace the filter in the V60 and rinse it with a strong stream of water so it adheres well to the walls.Grind the coffee, add it to the V60, and level the coffee bed.Pour 50 g of water, aiming at the dry spots to wet everything thoroughly. If the coffee is very fresh (foaming strongly when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), begin pouring into the center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the stream just below the point where it breaks.When you reach 250 g, lower the kettle to about 3 cm above the water surface (circular movements are no longer necessary) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically). They are accompanied by sweet caramel and slightly underripe peach.The flavor profile is even more complex – the tomato character combines with notes of redcurrant, peach, and caramel. The coffee has a high, almost sparkling acidity associated with currants and a clear, slightly umami character that creates its dry twist.The body is high and smooth, and the aftertaste is long and fruity, with a delicate, dry accent. This is a direction you will also see in subsequent coffees from Kenya from this year's harvest.ROASTER'S OPINIONAt the Tegu washing station, the coffee undergoes multi-stage wet processing characteristic of Kenya. After initial selection, the cherries go to the first fermentation stage, which lasts about 24 hours. They are then washed and moved to another fermentation tank.After the pulp is removed, the beans go into washing channels where lighter beans (so-called floaters) are separated, and the heavier ones are thoroughly cleaned of the sticky layer surrounding the bean (mucilage).The next stage is soaking the beans again for about 24 hours. This process promotes the development of amino acids and proteins, which translates into higher acidity and greater complexity of the fruity profile – a key element of Kenyan coffees.Finally, the beans are spread in a thin layer on African beds, where they initially lose some moisture quickly, and are then regularly turned and dried until they reach about 11% moisture. After drying, the coffee is hulled, packed, and undergoes a short stabilization stage before export.RECIPEThis coffee responds well to the brewing method – you can emphasize its juicy, currant acidity or bring out its more savory, tomato-like character.In a V60, it is at its most juicy and distinct – redcurrant, peach, and high, sparkling acidity. In an Origami, the profile balances out, and the tomato twist becomes more legible. In an AeroPress, the coffee is smoother and fuller, with a more pronounced umami character.Lower temperatures emphasize freshness and fruit, while higher temperatures bring out depth and strengthen the savory profile. A coarser grind provides more lightness and acidity, while a finer grind yields more body and umami.We recommend a medium-coarse grind (25 clicks on a Comandante) and a drip brewing method – such as the Origami – with a dose of 17 g per 240 ml of water.Using water at 95°C, pour according to the following timeline:0:30 – 50 ml , 0:50 – 110 ml , 1:15 – 200 ml , 2:40 – 240 mlGently stir at the end.Store in a cold and dry space.

Alongside her mother, Vanessa is leading all agricultural practices at the farm. Together, they have invested heavily in regenerative technologies. They have focused on reforestation at the estate and conserving water, bringing back the biodiversity that would have existed before the land was intensively farmed. During cultivation, all inputs with negative impact are decreased to a minimum and soil and plant health are actively restored.ABOUT THE PROCESSThis lot underwent fermentation for 40 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact.
