Since its inception, it has been systematically developing, and its long-term plans include sourcing groundwater for processing as well as installing mechanical dryers and solar tunnels.The station employs six permanent workers, six seasonal workers, and 244 temporary workers. Each year, it processes between 500 and 600 tons of fruit supplied by 868 farmers who grow coffee in small backyard gardens. The main varieties cultivated in this region are local 7454, 74110, 7440, and 74112.The station applies rigorous procedures in terms of management and traceability of raw material origin. These include reducing water consumption and keeping detailed documentation at every stage of the supply chain — from farming to export.ABOUT THE PROCESSING OF COFFEE BEANS AT THE FARMThe 74110 variety, hand-picked by 868 smallholders. Before the actual process, it undergoes initial selection, during which unripe cherries or impurities are removed. Before separating the bean from the fruit, the cherries are washed, then fermented for 24 hours, and washed again. First, there is depulping, which is the separation of the seeds from the fruit. Next, the beans ferment in tanks for 36 to 40 hours. This particular microlot is then washed and placed on African beds, which have an advantage over patios primarily due to a more even airflow during drying, resulting in greater control over the process.ROASTER'S OPINIONWe have been roasting Raul's coffees for years, but this is the first time we bought his Pacamara. What we have here is the essence of Rwandan terroir – the cherries ripen on mineral-rich volcanic soils and at impressive altitudes exceeding 2000 meters above sea level. Nova Coffee, in turn, is the washing station and export company owned by Agnes and Felix Mukamushinja, who coordinate the entire enterprise. In 2024, they won first place in the prestigious Best of Rwanda competition with their coffee.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAll the fruit is harvested by the female producers by hand and with great care – years of practice and training have borne fruit (pun intended) in an extremely selective picking, resulting in perfectly ripe cherries. The lot is processed as a "classic" washed coffee. The fruit undergoes depulping, after which it goes into a tank for over 24 hours where fermentation takes place. This is followed by washing and then straight to drying.ROASTER'S OPINIONIt is no coincidence that we are hosting Bukure for another season in a row – this is a textbook example of a Rwandan coffee pampered at every stage.
