Antonio is the third generation of his family to farm here, and began by planting grains and pulses. However, he told us that it has always been his dream to farm coffee, and in 1991, the first coffee tree was planted. Slowly but surely, Antonio increased the number of trees and the production capacity of La Colina. Nine years ago, Antonio built his own processing facilities, and with his focus on quality rather than quantity, he has achieved excellent rankings in the Guatemala Cup of Excellence competition. The coffee grows within a beautiful landscape of oak, cypress, and pine. The farm benefits from multiple streams, with fresh water for irrigation and processing. The cherries are placed in sealed bags from which oxygen access is removed. For about 120 hours, a controlled fermentation takes place, during which yeast and microorganisms intensively develop complex aromatic compounds while maintaining full control over the process flow. As a result, the coffee gains greater sweetness, depth, and an intensely fruity character.After fermentation is complete, the fruits are spread out in a very thin layer on the patio to immediately halt the fermentation process and begin even sun-drying. The result of this demanding processing is an espresso with a creamy body, distinct fruitiness, and a long, sweet finish. Guatemala Ayarza perfectly demonstrates how skillfully executed anaerobic fermentation can highlight the natural potential of the beans, creating a coffee full of juicy fruit and dessert-like sweetness.Finally, dessert sweetness, juicy fruit notes, and fruit-derived acidity meet in the cup. The espresso has a silky body and leaves a long, pleasant finish. It works great as a dose of refreshment on its own. When combined with milk, it takes on even greater sweetness, while the fruity accents become gentler, resembling a creamy dessert. This lot comes from Finca San Jose del Lago in the Atitlán region of Guatemala, where it is grown at an altitude of 1,565–2,100 meters above sea level, overlooking Lake Atitlán and three majestic volcanoes. The farm covers an area of 200 hectares, of which 45 hectares are dedicated to coffee cultivation – the remainder forms a natural protected area. The Cabrera family has been connected to this land since the early 20th century, and coffee cultivation began in the 1940s. Eduardo Cabrera, the current owner, invested in building his own wet mill on the farm, which allowed him to take full control over processing quality. The coffee is fully washed and carefully dried, ensuring the clean, crisp flavor profile for which the Atitlan region is famous.ROASTER'S OPINIONIf muesli could be coffee, it would want to be this Guatemala!
