It is a hilly region with an average altitude of 1,500-1,800 meters above sea level, rich in volcanic soils. The Nyagishiru station is owned and managed by Matsitsi Trading Coffee SU (MATRACO). The company was founded in 2015 by Zuberi Matsitsi, who produces specialty coffee primarily for international markets.Fun fact: Zuberi Matsitsi owns over 7,000 coffee trees. In addition to the Nyagishiru CWS plantation, his company also owns two other plantations in the Kayanza province. It is located in the highlands of North Sumatra. This region, thanks to its fertile, volcanic soils and cool climate, offers ideal conditions for growing coffee. The Simalem farm operates in a sustainable manner, without the intensive use of chemicals, and its practices are certified and transparent. The area also features characteristic landscape elements, such as the Viluco waterfall and the Cerro Pabellon mountains and the Cordillera del Wissus range, which contribute to the region's unique ecosystem.It is this combination of altitude, climate, and biodiversity that gives Callayuc coffee its distinct, complex, and characteristic profile.ROASTER'S OPINIONThe location of the La Lucuma farm is truly exceptional — over 2200 m a.s.l. is an altitude rarely encountered in Peruvian coffee cultivation. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. This is a coffee with very good balance and a clean profile — definitely an example of how good Peru can be.RECIPEWe recommend brewing this coffee using a dripper — from Hario or Origami. Due to the very high density of the beans, we recommend a finer grind than usual, a longer brewing time, and a temperature around 96 degrees Celsius.Store in a dry and cool place.

The face of this generational business is currently Oscar Hernandez. The farm is located in the mountainous region of Huila near the city of Bruselas, in the southern part of this region. He is guided by the idea of producing the highest quality specialty coffee in Colombia, and this batch of beans clearly proves it.In 2006, Oscar's father, Ricaurte Hernandez, won the Colombian Cup of Excellence. Thanks to this great distinction, the farm became synonymous with the highest quality. Oscar continues this tradition, and thanks to him and his approach, Los Nogales is a center of innovation and information for all proactive farmers in this region.Detailed description of this coffee's processing method:Process: mosto fermentationSelection of ripe fruit: The process begins with the careful harvesting of only ripe coffee cherries. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels. Squeezed juice from the coffee cherry skins themselves, which contains a high amount of natural sugars—the so-called "mosto"—is added to them. This can enhance the flavor profile and give the coffee sweet notes.Fermentation: Coffee beans undergo a fermentation process lasting 120 hours. During this time, sugars break down, which affects the coffee's flavor and acidity. Pre-fermentation agents, similar to bread sourdough, are also added to give the coffee unique properties.Sun drying: Finally, the fermented coffee beans are sun-dried for 15 days. Matsitsi himself is an experienced coffee producer, owning over 7,000 coffee trees.
