Kafar - Ethiopia Uraga Guji Anaerobic Natural Filter 250 g

Manufacturer: KAFAR

Roasting date: 21.09.2026

Whole-bean specialty coffee from Ethiopia, roasted by Kafar roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of cola, blackberry and magnolia blossom.Origin: EthiopiaRegion: GujiProcessing: Anaerobic NaturalVariety: Odmiany JARC, Odmiany LokalneCupping score: 89 / 100 ABOUT THE COFFEEThere is a lot going on in the cup. First comes the juicy sweetness of blueberries, followed a moment later by a distinctive note of cola, with the whole experience rounded off by a delicate aroma of magnolia flower. The profile is extremely intense, creamy, and multidimensional, with every sip revealing something new. It is one of those coffees that can pause time and leave you wishing the cup lasted much longer.Behind this character is both the exceptional terroir of the Guji region and thoughtful processing. Only ripe cherries from local family farms, where coffee is still cultivated with a vast amount of manual labor, arrive at the Uraga station. The cherries then undergo controlled anaerobic fermentation and are dried slowly on raised beds. This process does not overpower the coffee's natural character, but instead extracts even more sweetness, depth, and aromatic complexity. We chose this lot because it is exactly what we expect from modern specialty coffees. Fermentation here is a means, not the end — it does not take center stage, but rather enhances the very best that Guji has to offer. The result is spectacular. It is a coffee that delights from the first cupping and stays in your memory long after the last sip.Store in a cool, dry place.

The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade). The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours. Finally, it is moved to drying tables, where it rests for 7 to 14 days until it reaches the appropriate moisture level.Store in a cold and dry space.

It is a much less known coffee-growing region in Bolivia than Yungas, but in recent years it has been increasingly marking its presence on the specialty coffee map. Leonardo Garcia grows coffee here at an altitude of 1,650 meters above sea level. In the bag, you will find beans of the IPR 103 variety – a cross between Catuaí and Icatu bred in Brazil. It is characterized by high productivity, copes well with heat and less fertile soils, and shows good resistance to coffee leaf rust. IPR 103 has taken root particularly well in the Santa Cruz region and is today one of the most important varieties cultivated there.ROASTER'S OPINIONA phenomenon – Kenyan notes submerged in marzipan. Very fruity, floral, with a long lingering aftertaste. On top of that, a rarely found origin. A must-try!Store in a cool and dry place.

It was founded in 2011 by Ben and Kristy Carlson, who recognized both the huge potential of Burundian coffees and the challenges faced by local farmers following the privatization of the coffee sector. Their goal was to create a collaboration model that would allow farmers to produce better coffee and receive fairer compensation, while providing roasteries around the world with access to exceptional and fully traceable lots.Today, Long Miles works with thousands of smallholder producers and operates its own washing stations, including Bukeye, Heza, and Giku. Every batch of coffee can be traced back not only to a specific station, but often to the specific hill where the cherries were grown. Thanks to this, Long Miles has become one of the pioneers in building transparency and traceability for Burundian coffee. The project's philosophy is based on a simple premise: good coffee starts with people. That is why Long Miles invests not only in infrastructure and processing quality, but also in farmer training, local community development, and long-term relationships with producers. The result is coffees that regularly feature in the offerings of the world's most respected specialty roasteries and have been building Burundi's reputation as one of Africa's most exciting origins for years.ROASTER'S OPINIONCoffees from Burundi are our non-guilty pleasure. The taste has notes reminiscent of ripe banana, red wine and herbs.Country: Indonesia (Sumatra)Region: Kerinci Valley, West SumatraFarm: Camintoran CooperativeProcessing: NaturalVarietal: S Lini & CaturraCupping score: 86 / 100 pointsAltitude: 1250 - 1600 m a.s.l.ABOUT THE COFFEEThis Sumatra has nothing in common with the heavy, earthy profiles Indonesia was once famous for. It is wild, juicy, and surprisingly elegant.Natural processing brought out a tremendous amount of sweetness and a character reminiscent of a glass of fine red wine. Ripe banana brings a creamy fruitiness, herbal notes add freshness, and the whole experience is tied together by a pleasant, rummy finish. This is a coffee that reveals new layers of flavor with every passing minute in the cup.The beans come from the region surrounding Mount Kerinci – Indonesia's highest volcano. Volcanic soils, a tropical climate, and high-altitude plantations allow the cherries to ripen slowly, acquiring an exceptional concentration of flavor. This micro-lot is produced by farmers associated with the Camintoran Cooperative. The S-Lini and Caturra varieties underwent natural processing and were subsequently hand-sorted, allowing the coffee to maintain extraordinary clarity and a distinct, fruity character.BREWING RECOMMENDATION: 6.5 g / 100 ml, Drip V60 02, water temp.: 91°C, 24 clicks, brew time: 3 - 4 min / 600 ml.Store in a cool, dry place.

In the cup, you’ll find notes of lemon, white flowers, raspberry and sugar.Origin: EthiopiaRegion: Oromia, GujiProcessing method: WashedVariety: HeirloomAltitude: 1900 - 2100 m a.s.l.Cupping score: 85 / 100This coffee comes from various farms located in the Guji, Sidamo, and Yirgacheffe regions of Ethiopia:Guji Region is located in the southern part of the country, in the Oromia region. Until recently, it was administratively part of Sidamo, but it now functions as a distinct coffee region. The area is largely forested and offers excellent conditions for growing Arabica. Coffee trees grow here at altitudes above 1,500 meters above sea level, in fertile, well-drained soils of volcanic origin that require little fertilization. The climate is warm but moderated by the altitude, with annual rainfall of 1,500–2,500 mm spread over about nine months. Temperatures usually remain within the range of 15 to 24°C. Over the past few decades, Guji has established its position as one of the most recognized and valued coffee-producing regions in Ethiopia.Sidamo is recognized as the largest coffee region in Ethiopia. It encompasses the fertile highlands located south of Lake Awasa in the Rift Valley. Crops are situated at altitudes ranging from 1,500 to 2,200 meters above sea level, which promotes slower ripening of the coffee cherries in a cooler climate. As a result, coffees from this region stand out with their natural sweetness and pleasant acidity. Highly fertile soils and annual rainfall of 1,200 to 2,000 mm create ideal conditions for growing high-quality coffee.Yirgacheffe lies in the central part of the Gedeo zone in southwestern Ethiopia. This region is famous for producing coffees of exceptional quality, which is influenced by fertile soils, a tropical climate, and high-altitude plantations, often exceeding 2,000 meters above sea level. Due to the altitude of the crops, local coffees are classified as SHG (Strictly High Grown) or SHB (Strictly Hard Bean). This means that the cherries ripen more slowly, allowing the plants to deliver nutrients to the beans for a longer period. The result is a more complex and distinct flavor profile, with a characteristic intensity of aromas.Store in a dry and cool place.

The company was founded by Syoum and Emame, and is currently run by their grandchildren. Bette Buna is committed to improving the quality of life for its community members – it teaches local farmers how to improve soil quality, restore agroforestry systems, and understand the importance of harvesting ripe cherries. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. In several stages, caffeine was gently and selectively extracted from the beans, allowing the green coffee to retain a profile closely linked to the original batch.Store in a cold and dry space.

The brew resembles the flavour of cherry, caramel and alcohol.Origin: Costa RicaRegion: Valle CentralFarm: Chacon familyVariety: CatiguaProcessing: Black DiamondAltitude: 1300 m a.s.l.Cupping score: 87 / 100ABOUT THE FARMLas Lajas and the Chacon family are true legends of the specialty world. The family farm has existed since 1840. The 1990s brought significant losses, leading the family to sell part of their land to invest in production quality — they launched their own washing station and coffee mill, and also planted a wide variety of Arabica varieties, such as SL-28, Geisha, Villa Sarchi, and Java. This decision brought them great success and business stability. Today, they produce some of the most interesting coffees in the industry. After harvesting, the coffee cherries go to the mill, where they are washed and sorted by quality using optical sorters. Then, the coffee undergoes three stages of drying. For the first 10 days, it dries in the sun; for the next 8 days, it remains outdoors but shielded from the sun; finally, it goes to a patio-greenhouse, where it spends 15 days. After this time, it is hulled and moves to a warehouse for another 60 days, where the beans mature, stabilize, and gain longevity — skipping this stage could result in a rapid loss of quality.ROASTER'S OPINIONA fermented sensation. A sweet chocolate praline with alcohol. Las Lajas comes back to us every year, and we hope it does to you too.Store in a cool, dry place.

During this process, forest berries were added to the fermentation tanks, enriching the flavor profile of the coffee with notes of fruity freshness and distinctiveness. After fermentation, the beans were depulped and transferred to African beds, where they were dried until reaching the ideal moisture level. At least that is what the producer says – we were not there, we are just repeating what they say. And that is why, if you ask us about the processing, we will answer – fake fermentation.ROASTER'S OPINIONThere are weird coffees, weirder coffees, and then there is our series of fake fermentations. Anyone who has tried them and likes them knows – the yellow bags are not a world of subtlety. Here, it is bold, decisive, and very direct. Whole-bean specialty coffee from Kenya, roasted by Kafar roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of raspberry, cherry tomatoes and chocolate.Origin: KenyaRegion: KiambuProcessing: Fully washedVariety: SL28, SL34 Cupping score: 87 / 100 Raspberry, cherry tomatoes, and chocolate. In the cup, it is juicy, fresh, and very clean, with a distinct acidity that gives the coffee energy. At the end, a pleasant, chocolatey sweetness emerges, balancing the fruity character well.ABOUT THE FARMThe coffee comes from Ibonia Estate, one of the oldest plantations in the Kiambu region. The farm covers over 100 hectares, with nearly 60% of its area still remaining as natural forest. Coffee grows here at an altitude of approximately 1,700 m a.s.l., in fertile, volcanic soils and a cool climate that slows down the ripening of the cherries, allowing more sweetness and complexity to build.ABOUT THE VARIETAL AND PROCESSINGIts character is shaped by SL28 and SL34 — iconic Kenyan varietals that have been the foundation of the country's finest coffees for decades. These are precisely what give coffees from Kenya their distinctive fruitiness, high acidity, and intensity. The beans underwent Fully Washed processing. The cherries are hand-picked and meticulously sorted, then fermented for 12–24 hours, washed, and soaked in clean water for another 24 hours. Finally, the coffee dries slowly on raised beds for 7–15 days.Because we like classics when they are truly well executed. Ibonia showcases the Kenyan character without unnecessary extras — it is intense, juicy, and complex, yet at the same time very easy to drink. It is simply a coffee you want to come back to.Store in a cool, dry place.
