This is an advanced fermentation process that combines elements of natural drying and honey processing.The first stage begins even before depulping. Freshly harvested coffee cherries are dried whole in the sun until they begin to resemble raisins. During this process, a highly intense concentration of sugars and aromas takes place within the fruit. The pulp becomes denser, stickier, and incredibly sweet, while fermentation develops deep fruity and winey notes.Only after being partially dried do the cherries move to the next stage, which is the removal of the skin. In classic honey methods, this happens almost immediately after harvesting, whereas here, the fruit undergoes controlled pre-drying first. As a result, a massive amount of pectin and sugars remains with the bean.Next, the coffee goes into the actual honey fermentation, during which the beans dry alongside a very thick layer of sticky pulp. This high pectin content is what accounts for the exceptionally creamy sweetness, intense aroma, and characteristic notes reminiscent of raisins, fermented fruit, and sweet wine. The process is extremely demanding and requires continuous monitoring of temperature, humidity, and even drying. In response to challenges such as coffee leaf rust, the Salaverrias have focused on soil regeneration and strengthening plant resilience. They produce their own organic fertilizer called Huisil, made from organic waste, mainly coffee pulp as well as fish and animal by-products. Currently, they use a blend of 50% Huisil supplemented with mineral components such as nitrogen, potassium, boron, and zinc. They also apply various pruning methods adapted to tree height and variety to maintain productivity and plant health.The Salaverrias place great importance on staff management and providing fair working conditions. Farm managers receive bonuses based on harvest quality, and many workers are employed on a permanent basis, fostering a committed and experienced team. Between 50 and 60 people live and work directly on the farms, and coffee pickers are offered competitive wages along with optimized work systems that allow them to finish earlier in the day, giving them more time with their families.The family also invests in local social infrastructure. Near one of the farms in San Francisco, housing has been built for seasonal workers and access to medical care has been ensured. Doctors regularly visit the plantations, and the family supports local clinics, including two they built themselves in Ataco. In addition, they donated land for the construction of two public clinics and supported the development of a local school and a football field. After initial selection, the cherries go to the first fermentation stage, which lasts about 24 hours. They are then washed and moved to another fermentation tank.After the pulp is removed, the beans go into washing channels where lighter beans (so-called floaters) are separated, and the heavier ones are thoroughly cleaned of the sticky layer surrounding the bean (mucilage).The next stage is soaking the beans again for about 24 hours. This process promotes the development of amino acids and proteins, which translates into higher acidity and greater complexity of the fruity profile – a key element of Kenyan coffees.Finally, the beans are spread in a thin layer on African beds, where they initially lose some moisture quickly, and are then regularly turned and dried until they reach about 11% moisture. After drying, the coffee is hulled, packed, and undergoes a short stabilization stage before export.RECIPEThis coffee responds well to the brewing method – you can emphasize its juicy, currant acidity or bring out its more savory, tomato-like character.In a V60, it is at its most juicy and distinct – redcurrant, peach, and high, sparkling acidity. In an Origami, the profile balances out, and the tomato twist becomes more legible. In an AeroPress, the coffee is smoother and fuller, with a more pronounced umami character.Lower temperatures emphasize freshness and fruit, while higher temperatures bring out depth and strengthen the savory profile. A coarser grind provides more lightness and acidity, while a finer grind yields more body and umami.We recommend a medium-coarse grind (25 clicks on a Comandante) and a drip brewing method – such as the Origami – with a dose of 17 g per 240 ml of water.Using water at 95°C, pour according to the following timeline:0:30 – 50 ml , 0:50 – 110 ml , 1:15 – 200 ml , 2:40 – 240 mlGently stir at the end.Store in a cold and dry space.

Farm: The Coffee Yard Washing StationABOUT THE FARMThe Coffee Yard is a company founded and run by Norman Mukuru. Its export partner is The Coffee Gardens, who have known Norman for many years. Their cooperation is based on mutual trust, knowledge exchange, and the joint development of coffee processing expertise. An important part of this relationship is also the creation of programs that ensure full producer traceability. Thanks to this consistently built partnership, it has been possible to expand operations to include exporting Norman’s coffees to international markets.Norman established The Coffee Yard at the foothills of Mount Elgon. Coffee cherries are delivered to the station from the Sironko, Mbale, Bulambuli, and Kapchorwa regions. The facility serves as a large reception and drying center for coffee. Norman has nearly 20 years of experience in the coffee industry, and since 2018 he has specialized exclusively in naturally processed coffees. Since then, he has continuously refined his processes to achieve flavor profiles that meet market expectations.ABOUT THE COFFEECoffee cherries are delivered to The Coffee Yard from four surrounding districts, where Norman and his team process them exclusively using the natural method. The first step is flotation, followed by manual sorting to remove damaged, underripe, overripe, or defective cherries. The fruit is then pre-dried to remove excess moisture remaining after contact with water.After this stage, another round of selection is carried out based on color and moisture level, allowing for the creation of the most uniform coffee lots possible. Cherries that do not meet the set parameters are discarded. The next step is fermentation, the course of which depends on the desired flavor profile—it can take place either in sealed barrels or in open tanks. More floral profiles are typically achieved through fermentation in open containers, while the coffee in this package was fermented in barrels.The final stage of the process is drying, which lasts approximately 21 days. The coffee is dried on raised beds or on tarps until it reaches a moisture content below 12%. Once drying is complete, the beans are stored to rest and stabilize. Norman’s team then proceeds with hulling and preparing the green coffee for export, using both manual sorting and color sorting with a colorimeter.ROASTER’S OPINIONThis package contains a blend of two of the most recognizable botanical varieties—SL14 and SL28—delivered to The Coffee Yard from the Mount Elgon area. Norman Mukuru specializes exclusively in natural processing, which he carries out in two variations. The lot available here underwent a more intensive fermentation conducted in sealed barrels.The applied process gave the coffee a bold and unconventional character. On one hand, the flavor profile features classic African notes of orange and other citrus fruits. On the other, there is a pronounced wine-like acidity and balsamic notes, typical of coffees subjected to long and intensive fermentation. The coffee stands out with a high body, medium wine-like acidity, pronounced sweetness, and a subtle umami accent. This is a very interesting and unusual offering for its country of origin.BREW RECIPEThis is an intense, highly fruity coffee that is easy to brew.
