Las Garzas is an exceptional coffee coming from one of the respected farms in the Tolima region, where the beans mature at an altitude of 1,620–1,830 meters above sea level. The Castillo, Caturra, and Colombia varieties are grown there, and careful selection of the cherries together with the producers' experience allow for obtaining a coffee with a distinctive character that perfectly reflects the terroir of this place.



ABOUT THE PROCESSING


After harvesting, the fully ripe cherries undergo a 38-hour fermentation and then dry for eight days on covered raised African beds. The slow, controlled drying process brings out the depth of flavor, natural sweetness, and exceptional complexity. Notes of ripe pineapple and juicy orange dominate in the cup, complemented by hints of grapes and intense dark chocolate. The whole profile is intense, sweet, and very complex.
