The president of Lima Coffee is Rony Lavan, who is responsible, among other things, for finding the most interesting coffees from small producers. He has guided the company toward specialty coffee, and his microlots are winning an increasing number of industry awards. Fun fact: Cajamarca is a relatively dry and cool tropical region located in the north-eastern highlands of Peru, characterized by very fertile soil at high Andean elevations. All of these factors contribute to the developing production of specialty coffee. Cajamarca is the main coffee-growing region in Peru, accounting for about 25% of national production. Small-scale producers own approximately 2-3 hectares of arable land, and many of them practice organic farming methods.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. Whole-bean specialty coffee from. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of almond, caramel and red apple.Origin: ColombiaRegion: Palestina, Huila Farm: CADEFIHUILAVariety: Caturra, TabiProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE REGION AND THE FARMThe municipality of Palestina is a unique place: it is called the "water and forest factory" of the Huila region. It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.

Hi! Coffeedesk - Mad Jungle Filter 250 g

Manufacturer: HI! COFFEEDESK

Roasting date: 02.06.2026

Whole-bean specialty coffee from Uganda, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of cherry, blueberry, dried fruits, spices, rum and alcohol finish.Origin: UgandaRegion: Rwenzori, Western RegionFarm: Nyabirongo / Agri EvolveVariety: SL14, SL28Processing: NaturalAltitude: 1600–2200 m a.s.l.ABOUT THE COFFEENyabirongo is located on the southern slopes of the Rwenzori Mountains in western Uganda. It is an important point for local producers from the Bakonzo people and, at the same time, a quality hub for Agri Evolve, a company that has been working with farmers in the region since 2018. The facility in Nyabirongo has been operating since 2022 and combines both a wet and dry mill, ensuring that quality control covers the entire journey from receiving the cherries to preparing the green coffee for export. This lot is a natural. Ripe cherries are hand-picked, sorted through flotation, and then sealed in fermentation tanks. After fermentation, the coffee is dried in thin layers, and later hulled and sorted. The result? Plenty of fruit, high sweetness, and that characteristic, slightly rum-like finish. A coffee with character. No pretending.ROASTER'S OPINIONThis is Uganda on the darker, more fruity side of the force. It is not "polite." It is sweet and fermenty, with cherry and blueberry at the forefront. It works best as a filter coffee for people who like coffees with a strong processing profile but without a heavy, muddy body. Plenty of flavor. Very little boredom.Store in a dry and cool place.

Whole-bean specialty coffee from Kenya. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of black currants, grapefruit, red currant, tea and brown sugar.Origin: KenyaRegion: KirinyagaFarm: Kiamutuira Washing Station / Mutira Cooperative SocietyVariety: SL28, SL34, BatianProcessing: WashedAltitude: 1650–1700 m a.s.l.ABOUT THE FARMKiamutuira is a factory (washing station) in the Kirinyaga region, belonging to the Mutira Cooperative Society. The factory itself has been operating since 1996, and the cooperative has been a part of Kenyan coffee history since 1951. The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision. The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. A coffee like this does not need stories about magic. It needs a good recipe.Store in a dry and cool place.

The flavor profile features notes of strawberry, raspberry and milk chocolate.Country of origin: ColombiaRegion: Bruselas, HuilaVariety: Pink BourbonProcessing method: Chocoberry NaturalCupping score: 88 / 100Altitude: 1600 -2000 m a.s.l.ABOUT THE PROCESSThe farmer himself, Oscar Hernandez, named this processing method this way because the final taste of the brewed coffee reminded him of something right on the borderline between chocolate and currants. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

Simply a good Ethiopia.ABOUT THE FARMBehind this coffee stands Bitta Coffee Farm, owned by Mullege – a family-run, long-established Ethiopian export company. The farm itself invests not only in production but also in local infrastructure, training, and support for neighboring communities. This is not just a footnote to the story. It is a key element of how stable quality is built. The JARC selections 74110, 74112, 74140, and 8136 are cultivated on Bitta Farm. These varieties are highly valued for their resilience and quality potential. In practice, they deliver a profile that maintains cleanliness, freshness, and a distinct flavor direction. Thanks to this approach, a “regional blend” is not random mixing, but coffee unified under one processing protocol, in one place and under one supervision.Forest Coffee develops this project under the “Innovation” concept and openly communicates its goal: consistency, transparency, and real added value for producers.ABOUT THE COFFEECastillo, Caturra, Colombia. In practice: a solid foundation that carries sweetness and allows vanilla to shine without the flavor losing balance. This combination of varieties maintains structure in the cup — which means the processing can be intensive while the coffee still tastes like coffee, not perfume.First comes a 24-hour pre-fermentation of whole cherries. Then depulping and washing. Next, 96 hours of anaerobic fermentation in sealed tanks with the addition of natural vanilla aroma. Finally, mechanical drying (3–4 days) and 30 days of stabilization in GrainPro to allow the flavor to settle and remain consistent across future batches.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseMethod:Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds.Allow the water to fully drain through the coffee between pours. If the flow is too slow or too fast, adjust the grind size accordingly.Use soft, filtered water.Store in a cold and dry space.

Manufacturer: TRIGGER

Roasting date: 18.05.2026

Whole-bean specialty coffee from Burundi, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of sweet citrus, black tea and caramel.WHO IS THIS COFFEE FOR?For fans of sweet filter coffees without any fuss. This coffee is for you if you like bright, elegant pour-overs, but are not necessarily looking for a sensory rollercoaster before breakfast. Kibingo offers sweet citrus, caramelly smoothness, and a tea-like finish, so it will work well in a V60, Chemex, batch brew, and Aeropress. Everyday, but not boring. A bit like a good routine, just tastier.Country: BurundiRegion: KayanzaFarm: Kibingo washing stationProducer: 1 739 smallholders / Greenco CoffeeProcessing: HoneyAltitude: 1 700–1 900 m a.s.l.Variety: Red BourbonABOUT THE COFFEEThe Kibingo station in Kayanza, northern Burundi, serves 1,739 farmers from 18 hills at an altitude of 1,700–1,900 m a.s.l. Red Bourbon cherries are hand-picked by families, floated, and sorted before pulping. Honey process – part of the mucilage remains on the parchment, followed by drying on raised beds for 2–3 weeks. Each lot is evaluated by the Greenco cupping team, and every bean is sorted by hand at the Budeca mill. IMPACT certified – the purchase supports the Livestock for Living Income project.ROASTER'S OPINIONKibingo is a classic Burundian honey with a sweet, structured, and very approachable profile. Sweet citrus and caramel bring warmth and brightness, while black tea provides structure and a clean, long finish. The cup is smooth, balanced, and easy to read, with a natural sweetness tying it all together. Expressive yet calm and highly drinkable – a great everyday coffee.RECIPEIt works best as filter coffee when you are looking for something sweet, balanced, and easy for daily brewing. Use a V60, Chemex, or batch brew, grind medium-coarse, and brew with water at 92–94°C to preserve the caramel sweetness and citrus brightness without losing the tea-like structure. In an AeroPress, the coffee becomes slightly fuller and rounder – the note of caramel steps into the foreground, and the body becomes a bit richer. Still clean, just more compact and warming. As it cools, the black tea character becomes more distinct and the citrus sweetness more noticeable – the cup gets smoother and more elegant. A great choice for daily brewing that remains consistent and satisfying.Store in a cool, dry place.Store in a cold and dry space.

The flavour of the brew resembles red fruits, herbs, marzipan and tobacco.Country: IndonesiaRegion: East Jawa, WeninggalihFarm: Frinsa EstateVarietal: Borbor, Sigarar Utang, Andung Sari, P88Altitude: 1400 m a.s.l.Cupping score: 86 / 100Processing: WashedABOUT THE FARM We haven't been buying beans from the Frinsa estate in Indonesia just since yesterday. But as it happens, until now these were mainly anaerobic, extended natural, and similar processes. In other words, the kind where the processing itself heavily influences the coffee's character. This time, however, we are offering you a washed coffee from Indonesia – it allows you to truly taste the origin.Frinsa is an estate that has been operating since 2010. It is run by a married couple, Wildan Mustofa and Atieq Mustikaningtyas. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. And what a hit right off the bat. Very sweet, with a dense, buttery body. Spices, herbs, caramel. Once you finish a cup, you'll immediately think about the next one.Store in a dry and cool place.
Heresy - Elixir Unstable Blend Filter 252 g

Manufacturer: HERESY

Roasting date: 14.04.2026

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of red fruits, chocolate, citrus and flowers.Origin: ColombiaRegion: Cauca / and othersProcessing: washed / natural / honey Altitude: 1900 - 2150 m n. p. m.Cupping score: 86 / 100ABOUT THE FARM AND PRODUCERSThis exceptionally clean and complex lot is the result of the work of four small producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. Heraclitus already knew that, and we trust the guy. What he couldn’t quite grasp was that life is like helium-6 isotope – an outrageously unstable joke of the universe. We know this, and that’s how Elixir was born. Wildly unstable, always sweet. Different every time, always fruity. We throw our best coffees into it, because honestly, who’s going to stop us? Take a sip of Elixir and feel… however you want to feel.Store in a cold and dry space.
