Cultivated at around 600 masl, it underwent anaerobic processing with added fermenting yeast. You’ll find notes of dark chocolate, spices, honey, and dried fruit.This Fine Robusta from Panama has a high body—typical for this species—subtle fruity acidity, and a long chocolaty finish. Its aroma reveals hints of spices, dried fruits (plum, apricot), and cocoa. The flavor is dominated by dark chocolate, spices, dried fruit, and honey. There is also a slightly herbal/tobacco character, which is typical for this type of coffee.The cherries of this Canephora were first soaked briefly, then moved to another tank with water where fermenting yeast was added for anaerobic fermentation. After 48 hours, the coffee was passed through a depulper, then spread on raised beds to dry. THE FARMKiva Estate is a group of native Panamanians with diverse professional backgrounds, whose 30-year friendship eventually led them into the world of coffee cultivation. Two team members already owned pastureland and cattle, and during one of their gatherings, the idea of growing Fine Robusta was born.The team spent a year learning throughout South and Central America—visiting top farms, trade shows, and meeting experts. The challenge was the low popularity of Robusta and the lack of proper equipment, and in some countries its cultivation was even prohibited. With help from Olmedo in Nicaragua and BRS2314 seeds from Brazil, the first plantation near Penonomé in Coclé was established.Step by step, the team assembled post-harvest processing equipment, despite jokes and laughter from neighbors. The first harvests were promising, and Kiva Estate’s Fine Robusta gained recognition in Europe during World of Coffee in Athens, reaching prestigious coffee spots.This unusual combination of a Brazilian robusta variety, the experience of the Kiva Estate team, and the unique growing environment resulted in the production of Fine Robusta from Panama.ROASTER’S OPINIONInterest in fine robustas in our market is lower than it was 2–3 years ago, but around the world more and more countries are trying to create much more drinkable robustas than the ones we associate with espresso-roasted blends. What’s interesting here is that when we think of Panamanian coffee, we usually think of Geisha. In this case, we have a Brazilian variety grown in Panama at about 550–600 masl. The processing itself was quite intense—anaerobic with added yeast. As a result, we get a high-quality fine robusta with a complex sensory profile that only subtly resembles the typical character of this species.In the aroma, the coffee smells of herbs and nuts, with noticeable notes of dried fruit and alcohol. In the taste—high body, very low and smooth acidity, spices, honey, and dried fruit. This is definitely not a coffee for everyone—especially those who prefer light, very delicate Arabicas. Here we are dealing with a rather intense coffee, one that gently reminds us that it is indeed a robusta.

Here, it went through another stage of processing—wine maceration.Maceration preserved the natural sweetness of the Brazilian beans while enriching them with wine aromas that give the brew exceptional depth and freshness, adding an extra pleasant acidity. The raw beans were macerated for 24 hours in a blend of three Iberian wines—Spanish Chardonnay and Pinot Grigio, and a Portuguese rosé Syrah. This combination gave the coffee its characteristic aroma and delicate wine notes, which remain even after roasting. During roasting, the alcohol evaporates completely, leaving behind a wine-inspired sensory profile.This is a coffee that contains no alcohol but still carries the refined wine character in which it matured—fruity, light, and elegant.

The family has owned this land since the 1970s, and since 2019 they have operated under their own export license, allowing them to sell coffee directly without intermediaries.Girma is the only producer in the Operation Cherry Red 2025 project supplying a washed lot, which makes this coffee something of a rare find within the series.The farm grows mixed local heirloom varieties typical of Yirgacheffe, adapted to an altitude of 1,750 meters above sea level and fertile red-brown soils. It is a classic Ethiopian genetic mix, offering plenty of sweetness, pronounced fruitiness, and floral aromas.ABOUT THE COFFEEThis coffee is wet processed. Despite numerous structural barriers, La Tribu members invest every year both in their farms and in expanding their knowledge, striving for long-term stability and independence.ABOUT THE COFFEEThis lot is a carefully selected batch of coffee prepared by La Tribu that has undergone decaffeination. As with most coffees from Mexico, the Mountain Water Process was used, carried out in Veracruz. Despite the use of a water-based method, the coffee has retained its original sensory profile and character.The coffee went through two stages of processing. The first was post-harvest processing—in this case, the fully washed method. After delivery to the wet mill, the beans were hand-sorted and then placed in water. At this stage, another selection took place: damaged, underripe, or overripe beans were removed, along with other impurities resulting from hand harvesting. After a short soaking, the coffee passed through a depulper and then fermented in water. Once fermentation was complete, the beans were spread out on patios, dried to the appropriate moisture level, the silverskin was removed, and the coffee was prepared for storage.The second stage of production was decaffeination. The selected lot was transported to a facility in Veracruz, where coffee in Mexico is typically decaffeinated. Water from mountain springs is used to extract the caffeine. As with all methods of this type, organic compounds removed along with the caffeine are captured by carbon filters and then reintroduced into the water that comes into contact with the beans, allowing the coffee to retain its full flavor.ROASTER’S OPINIONThis coffee immediately caught our attention during the first cupping, and we quickly decided it deserved a place in our offering. The fact that it is decaffeinated turned out to be more of a coincidence—we did not initially plan to introduce a decaf with this kind of character. The aroma is dominated by floral and spice notes, complemented by a subtle hint of orange peel. On the palate, clear notes of orange appear, along with gentle spiciness reminiscent of pepper and cloves, as well as plum and sweet caramel. The profile is harmonious, with mild acidity, medium body, and excellent balance. Considering the terroir and the fact that this is a decaffeinated coffee, its character can be genuinely surprising.BREW RECIPEUse your preferred brewing method and recipe. Brew this coffee as you normally would, but grind it slightly finer than usual and use water at approximately 95–97°C.

He has tested different coffee varieties and microbial cultures, always seeking harmony between flavour and aroma. During these trials, he turned to wine yeasts — well-known, thoroughly tested in countless fermentation processes, and allowing for conscious, predictable control over the entire procedure. “It’s all about integration!” Hernández repeats, emphasising that balance is central to his work. For him, aroma cannot exist without flavour, and flavour should always reflect the terroir.For this lot, processing unfolds in several carefully planned stages. After depulping, Barolo-type yeasts are added to the cherries — the same strains long used in Italian winemaking to enhance fruit expression and depth. In coffee they work similarly: stimulating the breakdown of natural sugars, which translates into a rounder mouthfeel, pronounced sweetness, and a fuller body. Fermentation takes place in barrels, without oxygen, and lasts around 24 hours. Once complete, the cherries are dried using the honey method, where part of the mucilage remains on the seed. This approach significantly reduces water consumption—a factor of growing importance on the farm, where access to water is becoming increasingly limited.In the cup, Honduras Barolo Yeast radiates a seamless integration of aroma and flavour: the depth of ripe red fruits, a subtle wine-like note, and an exceptionally smooth body. It is a coffee with a juicy, fruit-forward profile, shaped through a process that mirrors its producer’s philosophy. “Feel the terroir & play with it,” says Hernández — and that is exactly how he carries out his experiments.
