CO₂ acts as a selective solvent, binding caffeine molecules without affecting the compounds responsible for the coffee’s flavour and aroma. After the process is complete, the CO₂ is released and the caffeine separated, making this method completely safe, clean, and environmentally friendly.The Mountain Water Washed method, on the other hand, uses pure water from mountain sources. The beans are soaked under controlled conditions, which opens their structure. The water is then circulated repeatedly, washing out the caffeine through a natural difference in concentration. After the process, the beans are carefully dried to restore the proper moisture level.Both methods preserve the authentic character of the coffee, delivering a full, natural taste — without caffeine.BREWINGThe density of decaffeinated coffee differs slightly from that of caffeinated coffee. It’s worth using a little more to enhance mouthfeel. Use 18.5 g of coffee, ground at 19 clicks on a Comandante grinder. Initially, they grew avocados, and since 2009, they have been experimenting with coffee cultivation. Gradually, under the guidance of Miguel Jimenez, they expanded their offer to include specialty coffee varieties. The farm underwent a major modernization in 2018. Natural drying processes were introduced, and research began on bacteria and yeast that control fermentation (including the Koji strain). Currently, over 28 different coffee varieties are grown there.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. The Red Caturra variety is characterized by an intense aroma and a rich flavor profile. On the other hand, Yellow Caturra is a subtle coffee variety with bright, yellow beans. It is characterized by a mild flavor profile.ABOUT THE PROCESSINGSugarcane is a unique type of fermentation resulting in more intense fruity notes. After the fermentation is complete, caffeine is removed through an extraction process in special containers, where it is washed with a mixture of water and ethyl acetate. This process is repeated multiple times until the caffeine level drops to just 0.1%.Store in a dry and cool place.

First, a dessert-like base of sponge fingers. Then plenty of sweetness, notes of almonds and that sweet-bitter amaretto accent.This coffee comes from Huila, Colombia, and follows a classic washed process. The beans are sourced from small-scale producers working on a few hectares each, where selective picking and controlled fermentation are the norm rather than the exception. Depulped on the day of harvest, fermented for 12–36 hours, then thoroughly washed and dried to the desired moisture level. The result is a clean, structured base that translates into clarity and balanced sweetness in espresso.Caffeine is removed using the EA (ethyl acetate) method. It is a compound that occurs naturally in fruit and as a by-product of sugar fermentation. The green coffee, already processed, is first steamed under low pressure to open up its structure. It is then placed in a water-EA solution, which binds to the caffeine molecules. The process is repeated until caffeine is no longer detectable. Finally, the coffee is steamed once more to remove any remaining traces, then dried and prepared for export.The result is a decaffeinated espresso that feels complete. The farm covers 6 hectares, 5 of which are dedicated to coffee cultivation, and the trees in this lot are around four years old.The farm is managed by Vladimir and his family, and the entire process, from harvesting to drying, takes place on-site and under their direct supervision. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days.
