Whole bean specialty coffee from Brazil, roasted in Berlin by The Barn. Medium roasted, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods, as well as for espresso. In the cup, you can expect the notes of fig jam and nougat.Country: BrazilRegion: São PauloFarm: Ivan and Rose dos SantosProcessing: AnaerobicVarietal: CatuaiAltitude: 1250 m a.s.l.Cupping score: 87 / 100We love coffees from Ivan and Rose for their sweetness and texture. In the cup, expect fig jam, prune, and nougat. The fermentation brings a gentle boozy quality, while staying well balanced with a lasting chocolate note.ABOUT THE FARMIvan is the younger brother of Gertrudes and Joao Hamilton dos Santos. Together with his siblings and wife Rose, a partnership began with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) in 2008 to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSThis lot underwent fermentation for 36 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The anaerobic process is a great match for the terroir of Brazil, bringing superb depth to the profile.ROASTER'S OPINIONThe first anaerobic lot we have featured from our partners Ivan and Rose dos Santos. In the cup, it is like sweet fig jam and velvety nougat: an espresso full of character.Store in a cold and dry space.

Expect notes of caramel, shortbread, and creamy milk chocolate. With a touch of yellow plum and dried fruit as it cools, this is a decaf for any occasion.ABOUT THE FARMThe coffee was produced as a collaboration of select coffee producers in Huila, who grow coffee between 1400 and 2000m. Located in southwestern Colombia, Huila is nestled between the Central and Eastern ranges of the Andes. Variations in altitude results in Huila being one of the most unique and complex regions of coffee production in Colombia. The terroir, climate, and harvest cycles all contribute to the quality of coffee produced here.ABOUT THE PROCESSThe coffee is picked ripe and pulped the same day, before open fermentation in tanks for 12–36 hours. The coffee is then washed clean of its mucilage before drying on patios. Once dry, the beans are decaffeinated through the sugarcane or Ethyl Acetate process. A solution of water and Ethyl Acetate - derived from Colombian sugarcane crops - is used to gently extract caffeine while maintaining the important flavour compounds in the coffee. The coffee is then rinsed and dried.ROASTER'S OPINIONLess Caffeine. Full Flavor. Created for those looking to reduce caffeine without compromising on quality, this coffee offers all the comfort and flavour of specialty coffee - without caffeine. The texture is well structured on the palate, the deep sweetness is balanced by citric acidity. Fruity sweetness that really lingers on the palate.ABOUT THE FARMEl Vergel is a family operation of two brothers, Elias and Shady, and their mother Marta. Located in Fresno, Tolima, they started as an avocado farm. In 2012 both brothers saw the opportunity to utilise their land to grow specialty coffee. Situated on the slopes of the snowcapped Nevado del Ruiz volcano, the farm benefits from a unique microclimate. Starting with Caturra and Castillo, it was not long before they started expanding their collection of varietals to fully explore the amazing terroir at their disposal. Soon, they were planting Tabi, Pink Bourbon, Pacamara, and Gesha, to name a few. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. The beans are then stabilised for 45 days in GrainPro bags, ensuring consistency and quality.Store in a cold and dry space.

Notes of dried fig, blueberry, and apricot are sweetly balanced. Fragrant vanilla and lavender will appear as it cools, with a defined complexity that is a signature of the farm.ABOUT THE FARMThe West Valley is the most prominent coffee growing region in Costa Rica. Most of its coffees are grown under protective shade, and produced on fertile clay. The mountainous landscape is dominated by three volcanoes and a gentle tectonic depression, while the Pacific weather patterns create well-defined dry and wet seasons. Volcan Azul is located on the edges of the Poás Volcano. For 5 generations, the producers have continued making coffee with the objective in mind of achieving excellence and superior quality. The descendants of the founder's families are acquiring natural tropical forests in order to protect and preserve the environment, and to reduce air contamination and global warming. It is their way of contributing to a better future for the generations to come.THE PROCESSThe process for this lot starts when cherries are still on the tree. By constantly measuring the Brix sugar content level, Alejo and his team seek to identify the ideal moment to pick the coffee. Cherries are then sorted and transferred whole to raised beds for slow drying.ROASTER"S NOTECoffees from Volcan showcase a truly special combination of terroir and expertise. The Barn - El Salvador Los Pirineos Pacamara Black Honey Filter 250 g

Manufacturer: THE BARN

Roasting date: 21.05.2026

Specialty-grade whole-bean coffee from El Salvador, roasted by The Barn in Germany. Light roast – perfect for all pour-over brewing methods: from drip, Chemex, AeroPress, and French Press to other alternative brews and batch brewers! Flavor notes: red apple, rooibos.Origin: El SalvadorRegion: UsulutanFarm: Los Pirineos, Diego BaraonaVariety: PacamaraProcessing: Black HoneyAltitude: 1500 m a.s.l. Cupping score: 87 / 100ABOUT THE COFFEEWe love the large beans of the Pacamara varietal for their superb complexity. In the cup, expect refined fruit notes like red apple, and plum, alongside rooibos and milk chocolate. The body is silky, with honey-like sweetness.ABOUT THE FARMGilberto Baraona was a shining beacon of the coffee industry in El Salvador. Over many years, he worked relentlessly to explore the possibilities of production, with a varietal programme that many dream of: the nursery that Gilberto developed hosts over 70 distinct coffee cultivars. Now in the trusted hands of his son, Diego, Los Pirineos continues to deliver the unexpected. At 1400 metres above sea level, Los Pirineos sits on volcanic slopes amongst lush forest. The microclimate around the volcano provides sun-filled days and cool breezes that are ideal for growing and drying. In the drying area of the farm, raised beds are positioned between two peaks which consistently channel the wind across the drying coffee. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. All the water used in processing is from collected rain, and bees are kept on the farm to help pollination across the farm and surrounding forest. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm. Coffee is dried for approximately 25 days until it reaches ideal humidity and the mucilage has turned sticky and black, giving the process its name.ROASTER'S NOTEIn a stunning volcanic landscape, fifth generation producer Diego continues the work of his father. Matching the Pacamara varietal with Black Honey processing delivers elegant fruit and silky sweetness.Store in a cold and dry space.

This washed coffee offers notes of nougat, plum and honey, creating a smooth, balanced and approachable cup. Crafted for daily exploration, Atlas shines as both filter coffee and espresso, delivering comforting sweetness and the unmistakable character of Central America.ABOUT THE FARMFinca Santa Clara has been producing exceptional coffee in the Antigua Valley of Guatemala since 1930. Today, fourth-generation producer Ricardo Zelaya continues the family's commitment to quality, building on decades of experience that earned the estate the prestigious Cup of Excellence in 2001. Coffee grows between 1,650 and 1,700 metres above sea level on the slopes of Volcán de Agua, where fertile volcanic soils and a cool mountain climate provide ideal conditions for exceptional Arabica coffee. Around a quarter of the estate is preserved as native forest, protecting biodiversity, natural water sources and the healthy ecosystem that supports both the farm and its coffee.ABOUT THE PROCESSRicardo prepares this lot using a traditional washed process, chosen to highlight the clarity and balance of the coffee. After harvest, the cherries are pulped before undergoing fermentation to remove the remaining fruit. The beans are then carefully washed and transferred to African drying beds inside purpose-built greenhouses, where they dry slowly over approximately 21 days. This measured approach allows moisture to leave the coffee evenly, preserving sweetness, enhancing clarity and contributing to the smooth, structured profile found in the cup.ROASTER'S OPINIONIntroducing Atlas: our new Core Coffee. From its birthplace in Ethiopia, coffee journeyed to the volcanic highlands of Central America, where generations of producers shaped one of the most celebrated coffee-growing regions. Atlas is our expression of that legacy. Grown at Finca Santa Clara in Antigua, Guatemala, this single origin coffee offers remarkable sweetness, clarity and balance. Rich volcanic soils, cool mountain air, and generations of expertise create a cup that feels complete. Atlas is our tribute to Central American flavour: a specialty coffee shaped by exploration, craftsmanship, and place.Store in a cold and dry space.

Flavor notes: blackcurrant and mandarin.Origin: KenyaRegion: KirinyagaFarm: Gachami FactoryVariety: SL28 & SL34Processing: WashedAltitude: 1750 m a.s.l.Cupping score: 87 / 100THE CUPWith its bright character, Gachami has the complex clarity we love in Kenyan coffee. Notes of blackcurrant, plum, and mandarin are juicy and vibrant. Caramel, syrupy sweetness, and black tea add depth as it cools.ABOUT THE FARMGachami Factory is located in the famous coffee growing region of Kirinyaga. It is owned by Baragwi Farmer Cooperative Society (FCS), one of the largest cooperatives in Kenya in terms of both coffee volume and membership. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. Typical drying time is 15 to 21 days, depending on the weather.ROASTER'S OPINIONA New Season Is Here! A special moment every year, the latest Kenyan harvest has just arrived in Berlin. From the famous region of Kirinyaga, bright fruit and syrupy sweetness make Gachami a must-try filter.Store in a cold and dry space.

Trigger - Burundi Kibingo Red Bourbon Honey Filter 250 g

Manufacturer: TRIGGER

Roasting date: 18.05.2026

Whole-bean specialty coffee from Burundi, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of sweet citrus, black tea and caramel.WHO IS THIS COFFEE FOR?For fans of sweet filter coffees without any fuss. This coffee is for you if you like bright, elegant pour-overs, but are not necessarily looking for a sensory rollercoaster before breakfast. Kibingo offers sweet citrus, caramelly smoothness, and a tea-like finish, so it will work well in a V60, Chemex, batch brew, and Aeropress. Everyday, but not boring. A bit like a good routine, just tastier.Country: BurundiRegion: KayanzaFarm: Kibingo washing stationProducer: 1 739 smallholders / Greenco CoffeeProcessing: HoneyAltitude: 1 700–1 900 m a.s.l.Variety: Red BourbonABOUT THE COFFEEThe Kibingo station in Kayanza, northern Burundi, serves 1,739 farmers from 18 hills at an altitude of 1,700–1,900 m a.s.l. Red Bourbon cherries are hand-picked by families, floated, and sorted before pulping. Honey process – part of the mucilage remains on the parchment, followed by drying on raised beds for 2–3 weeks. Each lot is evaluated by the Greenco cupping team, and every bean is sorted by hand at the Budeca mill. IMPACT certified – the purchase supports the Livestock for Living Income project.ROASTER'S OPINIONKibingo is a classic Burundian honey with a sweet, structured, and very approachable profile. Sweet citrus and caramel bring warmth and brightness, while black tea provides structure and a clean, long finish. The cup is smooth, balanced, and easy to read, with a natural sweetness tying it all together. Expressive yet calm and highly drinkable – a great everyday coffee.RECIPEIt works best as filter coffee when you are looking for something sweet, balanced, and easy for daily brewing. Use a V60, Chemex, or batch brew, grind medium-coarse, and brew with water at 92–94°C to preserve the caramel sweetness and citrus brightness without losing the tea-like structure. In an AeroPress, the coffee becomes slightly fuller and rounder – the note of caramel steps into the foreground, and the body becomes a bit richer. Still clean, just more compact and warming. As it cools, the black tea character becomes more distinct and the citrus sweetness more noticeable – the cup gets smoother and more elegant. A great choice for daily brewing that remains consistent and satisfying.Store in a cool, dry place.Store in a cold and dry space.

Whole-bean specialty coffee from Colombia, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of orange, pear and kiwi.Country: ColombiaRegion: HuilaFarm: El DivisioProcessing: NaturalAltitude: 1850 m a.s.l.Variety: Bourbon SidraCupping score: 88 / 100ABOUT THE COFFEE Tropical, multi-layered, and complex in flavor, making every sip a new experience. It is characterized by juicy fruit notes and distinct sweetness, while remaining clean in taste and very pleasant to drink. This lot comes from El Diviso, a family-owned farm in Huila managed by Nestor Lasso, grown at an altitude of 1850 meters above sea level on fertile volcanic soils. El Diviso is one of the most acclaimed farms in the Colombian specialty coffee industry, known for combining traditional cultivation knowledge with a scientific approach to fermentation and drying. The Bourbon Sidra undergoes a multi-stage natural process: after selective hand-picking and flotation, the cherries undergo a 36-hour oxidation process, followed by a 48-hour anaerobic fermentation. Next, the leachate from the cherries is collected and reused in a subsequent 36-hour submerged fermentation with continuous recirculation, finished with a thermal shock. Drying takes place in sealed, air-conditioned stainless steel dehumidifying equipment to preserve all aromatic compounds.ROASTER'S OPINIONPineapple, lychee, and melon give the coffee a distinct, multi-layered fruity character, while the delicate acidity of mandarin orange makes the whole cup crisp and full of life. The flavor is clean, expressive, and full of energy, and the long aftertaste continues to surprise. It is complex and distinct, yet balanced and very pleasant in taste – one of the most exciting Colombian coffees we have ever tasted.V60 RECIPEwater temperature: 92 degrees Celsius,300 g water,21 g coffee, grind size 7 (Fellow Ode II)Blooming 75 g water pour: 0-0:10,150 g water pour: 0:30-0:40,225 g water pour: 1:00-1:10,300 g water pour: 1:30-1:40.All water should finish drawdown around 2:10 - 2:20.ROYAL BEANSWhat’s behind the name Royal Beans? Roasting date: 17.07.2026

Whole-bean specialty coffee from Colombia, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of rose tea.Country: ColombiaRegion: PitalitoFarm: AmberaProcessing: Co-fermented Rose TeaAltitude: 1400-1700 m a.s.l.Variety: Pink BourbonCupping score: 87 / 100ABOUT THE COFFEEFloral, delicate, and with a clarity that makes every sip feel intentional. It stands out for its notes of rose and almond, while remaining clean and very pleasant in taste. This lot comes from the Ambera estate in Pitalito in the Huila department, one of the most dynamic specialty coffee growing regions in southern Colombia. This region is located between the Andean mountain ranges, at an altitude of 1400–1700 meters above sea level, where lower temperatures and volcanic soils slow down the ripening of the coffee cherries and promote dense, high-quality beans. This Pink Bourbon lot is processed using co-fermentation with rose tea, which enhances the natural floral character of this variety and gives the brew a distinctive aroma.ROASTER'S OPINIONRose and floral notes give the brew an aromatic, tea-like character, while almonds add delicacy and a mild sweetness. The taste is clean, sophisticated, and distinct, and the long aftertaste makes all the notes blend harmoniously together. It is expressive and unique, yet mild and pleasant in taste – an excellent Colombian coffee for those who appreciate floral notes and lightness.V60 RECIPEwater temperature: 94 degrees Celsius,300 g water,21 g coffee, grind size 7 (Fellow Ode II)Blooming 75 g water pour: 0-0:10,150 g water pour: 0:30-0:40,225 g water pour: 1:00-1:10,300 g water pour: 1:30-1:40. All water should finish drawdown around 2:10 - 2:20.Store in a dry and cool place.

Roasting date: 14.09.2026

Whole-bean specialty coffee from Ethiopia, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of kumquat, dark oolong and lemon.Country: EthiopiaRegion: DjimmaFarm: local farm from GeraProcessing: WashedAltitude: 1950-2050 m a.s.l.Variety: HeirloomCupping score: 87 / 100ABOUT THE COFFEEGera Station = five brothers, a family business, and 2,050 meters above sea level. The Gera washing station is located in the Gera woreda in the Djimma region of Ethiopia – run by five brothers, second-generation producers who took over from their parents 5 years ago. Year-round, 20 people work here, and during the harvest season from October to December, this number increases to 80. The coffee grows in the shade of Abyssinian banana trees, cultivated using organic methods by many local smallholder farmers without synthetic fertilizers. Ripe cherries are hand-picked by seasonal workers, and after processing, they are sun-dried for 12–16 days until reaching the ideal moisture content. Kumquat and lemon give it a lively, fresh acidity, while dark oolong provides the brew with a structure and depth not always expected from a washed Ethiopian coffee. A coffee that surprises – in a positive way.ROASTER'S OPINIONGera is a washed Ethiopia with a character that is hard to miss. Kumquat and lemon build a bright, lively acidity, while dark oolong keeps it all in check and gives the cup a tea-like structure. Clean, precise, and with personality. An unexpected choice that is hard to put down.V60 RECIPEwater temperature: 93 degrees Celsius, 300 g water, 21 g coffee, grind size 7.2 (Fellow Ode II)Pre-infusion 75 g water pouring: 0-0:10,150 g water pouring: 0:30-0:40,225 g water pouring: 1:00-1:10,300 g water pouring: 1:30-1:40.All the water should finish drawdown around 2:20 - 2:40.Store in a dry and cool place.
