ABOUT THE COFFEE
Floral, delicate, and with a clarity that makes every sip feel intentional. It stands out for its notes of rose and almond, while remaining clean and very pleasant in taste. This lot comes from the Ambera estate in Pitalito in the Huila department, one of the most dynamic specialty coffee growing regions in southern Colombia. This region is located between the Andean mountain ranges, at an altitude of 1400–1700 meters above sea level, where lower temperatures and volcanic soils slow down the ripening of the coffee cherries and promote dense, high-quality beans. This Pink Bourbon lot is processed using co-fermentation with rose tea, which enhances the natural floral character of this variety and gives the brew a distinctive aroma.
ROASTER'S OPINION
Rose and floral notes give the brew an aromatic, tea-like character, while almonds add delicacy and a mild sweetness. The taste is clean, sophisticated, and distinct, and the long aftertaste makes all the notes blend harmoniously together. It is expressive and unique, yet mild and pleasant in taste – an excellent Colombian coffee for those who appreciate floral notes and lightness.

- grind size 7 (Fellow Ode II)
- Blooming 75 g water pour: 0-0:10,
- 150 g water pour: 0:30-0:40,
- 225 g water pour: 1:00-1:10,
- 300 g water pour: 1:30-1:40.
All water should finish drawdown around 2:10 - 2:20.
Store in a dry and cool place.
