In the town of Concepcion Huista, he and his wife have devoted themselves to learning everything about processing coffee from Yich Kalnahl: their 1.2 hectare finca. Surrounded by dense forest and rolling mountains, banana plants and indigenous trees provide great shade. With temperatures ranging from 13-26 degrees celsius, the finca benefits from a cooler microclimate that allows coffee cherries to slowly develop their flavour.THE PROCESSAndres’ wife takes care of processing. After harvest, the coffee is de-pulped, removing the cherry. The coffee is then placed in a tank and submerged in water to ferment for 32 hours. This relatively slow fermentation contributes to the complex profile. The fermented coffee is then washed thoroughly and placed on the patio to dry. It stays in the sun for about 8 hours per day for 7 days, and the family makes sure to turn it frequently to ensure even drying.

This is where the fruit is depulped, fermented, and dried. The coffee cherries processed at Bulambuli are sourced from 200–400 local farmers. The high altitude of the area favors the production of high-quality coffees. The processing at Bulambuli is carried out by specialized staff who ensure precise and controlled conditions throughout the entire process.The region primarily grows the SL14, SL28, and SL34 varieties, which are also characteristic of Kenya. The cherries come from small family farms with an area of less than 1 hectare. These farms are located in parishes—local administrative communities consisting of 7 to 12 villages, often with as few as 200 inhabitants. Farmers typically work in groups led by a designated leader.The harvest of East Ugandan coffee takes place from August to January. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. Farmers sell their cherries at small collection points or deliver them directly to the washing station. There, the fruit is sorted and then—depending on the method—sent for depulping (washed process) or to the drying yard in Mbale (natural process).ROASTER'S OPINIONSurprisingly sweet, with notes of chocolate and almond, complemented by a light hint of forest and stone fruits. Just like crocuses pushing through the ground, this spring coffee comes with some lovely florals of its own.It’s a floral and properly complex cup. Fresh like pomelo, and sweet like a handful of freshly picked berries. A classic washed process, the traditional Kurume variety typical for the region, and a profile like a forest glade in bloom.Credit goes to the producer, Gemechu Shonora. This is the second harvest in a row we’ve featured on the menu, and once again it’s hard not to be impressed. Safe to say, not the last.Hand-picked cherries, flotation, depulping, then wet fermentation for 24–36 hours. After washing, the coffee moves to raised beds where it dries for around two weeks. A short rest in the warehouse follows, and only then does it head to Addis. Clean and straightforward, exactly how we like our washed Ethiopias.That’s our version of spring, sealed in a colourful bag. The crocuses are only just coming up, and this Ethiopia is already sitting proudly on the counter, waiting to be brewed.

He has tested different coffee varieties and microbial cultures, always seeking harmony between flavour and aroma. During these trials, he turned to wine yeasts — well-known, thoroughly tested in countless fermentation processes, and allowing for conscious, predictable control over the entire procedure. “It’s all about integration!” Hernández repeats, emphasising that balance is central to his work. For him, aroma cannot exist without flavour, and flavour should always reflect the terroir.For this lot, processing unfolds in several carefully planned stages. After depulping, Barolo-type yeasts are added to the cherries — the same strains long used in Italian winemaking to enhance fruit expression and depth. In coffee they work similarly: stimulating the breakdown of natural sugars, which translates into a rounder mouthfeel, pronounced sweetness, and a fuller body. Fermentation takes place in barrels, without oxygen, and lasts around 24 hours. Once complete, the cherries are dried using the honey method, where part of the mucilage remains on the seed. This approach significantly reduces water consumption—a factor of growing importance on the farm, where access to water is becoming increasingly limited.In the cup, Honduras Barolo Yeast radiates a seamless integration of aroma and flavour: the depth of ripe red fruits, a subtle wine-like note, and an exceptionally smooth body. It is a coffee with a juicy, fruit-forward profile, shaped through a process that mirrors its producer’s philosophy. “Feel the terroir & play with it,” says Hernández — and that is exactly how he carries out his experiments.
