The coffee preserves a wine-like aroma but contains no alcohol, leaving only its most interesting qualities in the cup: a lightly fruity, aromatic character that develops with every sip.PROCESSING – Natural / Wine MacerationThe Brazil Wine Shot beans come from the Cerrado Mineiro region—a place known for its harmony between climate, soil, and cultivation. Warm days, cool nights, and predictable seasons allow the production of beans with stable quality and a sweet, nutty-chocolate profile. Traditional Natural processing enhances the coffee’s full flavor and smooth structure, which, combined with the wine-fruit accent introduced by maceration, creates a surprising yet balanced result. It’s classic Brazil in a new edition—pleasant, yet enriched with wine-like nuances.ROASTER’S NOTEBefore the beans arrived at our roastery, they underwent a classic dry process. After harvest, a short soak, and cherry selection, the coffee was spread on patios and dried in the sun until it reached the proper moisture level. It was then packed into a vacuum-sealed GrainPro bag and transported to our roastery. Here, it went through another stage of processing—wine maceration.Maceration preserved the natural sweetness of the Brazilian beans while enriching them with wine aromas that give the brew exceptional depth and freshness, adding an extra pleasant acidity. The raw beans were macerated for 24 hours in a blend of three Iberian wines—Spanish Chardonnay and Pinot Grigio, and a Portuguese rosé Syrah. This combination gave the coffee its characteristic aroma and delicate wine notes, which remain even after roasting. During roasting, the alcohol evaporates completely, leaving behind a wine-inspired sensory profile.This is a coffee that contains no alcohol but still carries the refined wine character in which it matured—fruity, light, and elegant.

In the cup, you can expect the hints of rum, strawberry and fig.Country: Costa RicaRegion: West ValleyFarm: Reina ElizabethVarietal: SarchimorProcessing: Black HoneyAltitude: 1450 - 1550 m n.p.m.About the coffee from the producer:Another KAIZEN barrel-aged coffee is the result of a local collaboration with Kojder Winery, located just 30 km from Szczecin.We placed green coffee beans from Costa Rica – Marvin Barrantes in a French oak barrel that first held Cabernet Cortis wine, and was later used to age Johanniter brandy for two years.As a result, we obtained a coffee that has absorbed rich, boozy notes — the profile reveals rum, strawberry, and fig.About the farmThe mill began operating in 2012 with a small depulping machine and a few African drying beds, where all the coffee was 100% sun-dried. The first single varieties Marvin experimented with were Caturra and Millennium.The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.

A bold fermentation, done with care.ROASTER'S OPINIONIf you remember the B-DAY Ethiopia, this coffee will be even crazier! The previous one was calm, complex, and elegant. Here comes the full rollercoaster: rum, peach, and tangerine in the flavor profile. This is exactly the kind of fermentation I was aiming for :).
