Its operations are overseen by an agronomist responsible for implementing good agricultural practices and educating producers. The agronomist works directly with the farmers, assisting them in gaining access to tools and selecting cultivation methods best suited to the conditions of their local plots.The station collaborates with 1,074 smallholder producers, each of whom owns an average of about 150 coffee trees. The plantations are situated at altitudes above 1,700 meters above sea level, near the Kibira forest, which favors obtaining high-quality raw material. The station itself has over 200 drying beds and can process up to 750 tons of coffee cherries annually. The entire process — from cultivation to processing — is covered by a monitoring system that ensures full traceability.Nemba is also engaged in the development of local communities, implementing projects that support farmers, including animal husbandry, strengthening cooperative structures, and improving crop yield.ROASTER'S OPINIONNemba is a washing station whose coffees we are always very keen to reach for. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. The aftertaste remains long, caramelly, and pleasantly sweet, while the acidity is low, smooth, and perfectly highlights the high natural sweetness.RECIPEUse your favorite AeroPress recipe. As it cools, the rose hip shows a touch of herbal elegance.ABOUT THE FARMThis coffee has been processed at the Kamwangi Factory, belonging to the New Ngariama Cooperative Society in Kirinyaga, Central Kenya. Among the three wet mills under the cooperative, Kamwangi is one. It serves approximately 1800 farmers, although not all are currently active. These farmers primarily grow SL 34 (90%), along with SL28, K7, and Ruiru 11 varieties, at altitudes ranging from 1500 to 1800 metres above sea level. The factory is closest to the town of Embu. Processing is done with Fresh River Water. The same water is recycled during the day through a recycling process enabling them to significantly reduce water consumption. They are Rainforest Alliance certified, and have established soaking pits for waste water treatment.THE PROCESSOnce the coffee cherries have been accepted by the Cherry Clerk, they are pulped and fermented for approximately 16-24 hours, depending on ambient temperature at the time. Following fermentation, the coffee is washed in clean water from the Kii River and soaked for 12 hours. Newly installed tiles in the washing channels help preserve coffee and water quality, and all water used in processing is cleaned by filtering in earthen pits before being reintroduced to local waterways. After washing and grading, the beans are laid to dry on raised beds. Workers rake the beds frequently to ensure even drying, covering the beds during the hottest time of day and at night, to shelter parchment from moisture. It takes approximately 14 days for the beans to dry.ROASTER'S NOTEOur Kenyan lots really flew off the shelves this season, so we were excited to source this coffee from the final harvest of 2025. The producers here grow coffee at elevations all the way up to 2,200 meters above sea level, and the washing station is located at 1,850 meters above sea level. Coffees are brought to the Cyato washing station from the surrounding areas of Kivoga, Kageyo, Rusumo, Gatare, and Nsinduka. The washing station was established in 2017.One interesting facet to coffee here is that the native honeybees that live in and around the Nyungwe forest where the coffee is grown are said to be responsible in part to the "unique profile" this coffee has. The bee-assisted pollination, fertile ground (black humus and sandy soil), and cool lake-affected climate thanks to the area's proximity to Lake Kivu contribute to the flavors found in the cup. The farmers use no synthetic inputs, either as fertilizers or as pest control.ABOUT THE PROCESSING Honey-processed coffees go through steps similar to washed, with one notable difference - the amount of mucilage left on the seed before drying. After the cherries are collected and sorted, the coffee is typically depulped and fermented. During fermentation, washed coffees will have all the mucilage broken down and removed from the seeds. In honey-processed coffees, the fermentation is cut short, leaving some mucilage still intact on the seeds. The coffee will then dry with this mucilage intact, often contributing a denser texture, more sugar browning, and fruit notes to the final cup. It is important to note this coffee was intentionally processed utilizing anaerobic fermentation. In general, placing freshly-harvested cherries inside a sealed container or bag of some sort for a period of time will create a flavor impact. We find those anaerobically-fermented coffees often exhibit an increase in the intensity of fruit and acidity and a slight increase in the body. Nonetheless, the anaerobic fermentation process has a distinct impact on the outcome of the flavor profile.ROASTER'S OPINIONFirst time in our offer: Anaerobic Honey processed coffee, and from Rwanda too! A very complex fruit-and-floral profile with a super silky body.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that 98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. Several years ago, these producers were dislocated from their homes and land because of a natural disaster, and they have rebuilt their lives and farms with a new focus on coffee. Unlike the vast majority of other Sumatran coffee receiving and processing centers, this mill is producing Washed coffees, as well as Naturals. The most common varieties grown in Sumatra, which are Ateng, Bor Bor, Catimor, and Timor hybrids. Aceh, in northern Sumatra, is an incredible region for coffee production. The average farm is one hectare, 80% of producers within northern Sumatra are women, and 95% of producers are smallholders. The region is diverse, geographically speaking. It is surrounded by beaches with a swampy inland, and the Barisan Mountains make up the inner two-thirds of the area. Coffee is grown on this volcanic mountain amongst the rainforest. One of the notable features of this area is Lake Taboa, the largest volcanic lake in the world.THE PROCESSHistorically, Indonesian coffee producers have implemented the wet hull method but recent years we have witnessed a shift towards modern specialty techniques which deliver exciting new profiles. This lot was naturally processed, with whole cherries placed on covered beds in greenhouses.ROASTER'S OPINIONThe Asman Gayo Mill works with smallholders in the Sumatran region of Aceh. Having left careers in accountancy and engineering behind, Nui and Aoy Jaisooksern decided to return to the land of their parents to grow coffee. Doi Saket is the oldest coffee growing area in Thailand, located in Chiang Mai province. The first few trees of Arabica coffee that were part of the opium replacement program of the Thai King were tested here. As a result, heirloom varietals, particularly Typica, are still commonplace in many old farms. The area of Doi Saket is the epitome of shade grown coffee farms. Typica trees are grown under a forest with many micro mills each producing about one ton of green beans per year. At 1300 - 1500 meters, Doi Saket is situated at a lower altitude than many of the farms we work with. However, at 19 degrees north of the equator, the altitude is very high for coffee - in Thailand, coffee cannot grow above 1550 meters. The result is a coffee with a level of complexity usually associated with coffees grown at higher altitudes.THE PROCESSThis lot was processed in washed style, with a double-stage fermentation used to produce a more complex profile. After arriving at the mill, cherries were immediately pulped then dry fermented in a sealed tank for 24 hours. After this first stage, water was added to the tank for a period of wet fermentation, for an additional 24 hours, followed by washing with clean water. The coffee was then dried on raised beds before undergoing multiple stages of sorting and quality control, including a final stage of hand sorting.ROASTER'S NOTEIn one of the oldest coffee growing areas in Thailand, Nui and Aoy Jaisooksern have introduced modern speciality methods to deliver clean, distinct flavour. Moments later, a note of dark cola appears, the kind you’d find in boutique, craft bottles, where caramel, spices, and fizzy depth create an almost dessert-like shadow. It all finishes with a soft, nostalgic accent of cherry pudding, like a homemade hot mug whose aroma lingers long after the cup is empty.This character is born from dry processing, which on this farm feels more like a slow dance between fruit and sunlight than a technical procedure. Hand-picked cherries first land on sorting tables, where each one undergoes a personal “interrogation.” Only those with perfectly taut skins and a ruby-red color move on, looking like tiny sugar-filled ornaments. They remain intact, unpeeled, unwashed, still wrapped in their juicy skins, as if freshly picked from the tree.Next, they are laid out on African beds, where the sun does its work slowly. He has developed meticulous processing methods over the years that can give his coffees very unique profiles.ABOUT COFFEEIn general, the ripest cherries are selected for natural processing, they are often hand sorted or float-sorted, cleaned, and placed on raised beds in a covered area to dry for at least a two-week period. The high humidity and rainy climates across Colombia do add to the challenging of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we find the resulting cup profile to be exquisite. Pink Bourbon: Cultivated from hybridization of Red and Yellow Bourbon. It's very rare, but the producers say it is quite resistant to rust. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of these colors are easily thwarted by the presence of yellow and red genes in a given pollen grain. A carefully isolated and contained lot can do quite well and preserve the unique color and character of this variety, though this is quite hard to find.ROASTER'S NOTEElegant yet very expressive. A rarely encountered floral note reminiscent of lavender, paired with the sweetness and acidity of very ripe fruit.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that 98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long.
