Sofie from Sucafina recommended that we contact Alfonso from Café Monteverde and his Timuyacu farm, as his philosophy and values in the pursuit of quality, caring for his people, and protecting the environment aligned with NOMAD values.Alfonso sent us samples of several of his lots, including this Washed Bourbon from Colasay Washed was a perfect fit for what we were looking for. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. The resulting parchment is placed on drying beds or patios where it is regularly turned to ensure even drying.The drying process takes approximately 15 to 20 days. Once dry and at the required moisture level, the parchment is stored on the farm for approximately 60 days before being transported to the dry mill for threshing and export.Store in a cold and dry space.

Founded in the 1960s on land that previously housed four smaller farms established by German settlers in the 1930s and 1940s, the farm has witnessed a significant evolution in coffee production.In 2007, Leon Christianakis, a third-generation farmer whose family emigrated from Greece in the early 20th century, partnered with Mark Stell, founder of Portland Coffee Roasters, to acquire and revitalize Acacia Hills with a focus on specialty coffee production. Leon introduced innovative practices such as soil testing, shade management and meticulous processing methods to elevate the quality of the coffee produced.The farm has also pioneered the organization of cupping events such as "Cupping at the Crater," which have helped put Tanzania on the specialty coffee map. In addition, Acacia Hills is committed to sustainable development and collaboration with local communities, including the construction of a new dry mill in Karatu to support smallholder farmers in the region.ABOUT THE PROCESSINGRipe cherries are harvested by hand and undergo open fermentation for 12 to 13 hours. They are then washed and sorted to separate the highest quality berries. Drying takes place on raised African beds for 13 to 16 days, depending on climatic conditions, until a moisture content of 12% is reached. The Nile flows through this area, and the Ruvubu National Park is located nearby.The Nyagishiru station is owned and managed by Matsitsi Trading Coffee SU (MATRACO). The company was founded in 2015 by Zuberi Matsitsi. Its primary goal is the production and promotion of specialty coffees for the international market. Matsitsi himself is an experienced coffee producer, owning over 7,000 coffee trees. If the coffee is very fresh (foaming a lot when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), start pouring into the very center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the water stream just below the point where the stream breaks.When you reach 250 g, lower the kettle to about 3 cm above the water surface (you no longer need circular movements) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically). Ripe coffee cherries are picked and depulped on the very same day. The beans then ferment for 24–48 hours in open concrete or cement tanks.
