That is precisely why we love Ethiopian coffees – they possess a very distinct character, and beans from this region are famous for their floral-fruity, refreshing aroma. Beloya, coming from Yirgacheffe, one of Ethiopia's most renowned coffee-growing regions, is exactly like that: cultivated among high mountains, bursting with fresh, fruity flavors and floral aromas. It is a bit more unique, a bit wilder than coffee in general, but that is what makes it so exciting. This won't be just your ordinary morning coffee.

ABOUT THE FARM
Typical for Ethiopia, coffee does not come from (relatively) larger farms, but from many independent smallholders (where the smallest "farm" might just be two bushes at the end of a garden). Coffee produced this way is gathered at washing stations, where it is processed, graded, and sold, with farmers living in the vicinity bringing their harvests there. The washing station uses water from local rivers to process the coffee cherries (hence the name, as the washing process is common here).
The Beloya washing station is located north of Chelelektu in the Kochere district, 45 km from the regional capital, Dilla. The facility, which has been operating for 20 years, features two processing plants and is currently being expanded and modernized.
ABOUT THE PROCESSING
Carbonic Maceration (a technique also known from winemaking) is a relatively new process in the coffee world. During this process, only the highest quality cherries are placed into a sealed steel tank, and carbon dioxide (CO2) is then used to completely displace the oxygen.
In this anaerobic environment, an intracellular fermentation process begins. Instead of external microorganisms and yeast initiating the breakdown, it is an enzymatic transformation of sugar within the fruit itself. As the cells begin to break down sugar in the absence of oxygen, various types of aromas and esters—and sometimes alcohols—are produced. This gives carbonic macerated coffees a very distinctive, almost fruit-candy-like flavor, while simultaneously preserving the classic aromatic characteristics of Ethiopian coffee.
