After initial selection, the cherries go to the first fermentation stage, which lasts about 24 hours. They are then washed and moved to another fermentation tank.After the pulp is removed, the beans go into washing channels where lighter beans (so-called floaters) are separated, and the heavier ones are thoroughly cleaned of the sticky layer surrounding the bean (mucilage).The next stage is soaking the beans again for about 24 hours. This process promotes the development of amino acids and proteins, which translates into higher acidity and greater complexity of the fruity profile – a key element of Kenyan coffees.Finally, the beans are spread in a thin layer on African beds, where they initially lose some moisture quickly, and are then regularly turned and dried until they reach about 11% moisture. After drying, the coffee is hulled, packed, and undergoes a short stabilization stage before export.RECIPEFrom currant to tomato: in all conditionsOpen the sachet. Remove the filter and tear off the top strip along the line marked OPEN.. Place the filter on the mug. Unfold the paper wings and hook the filter onto the rim of a tall mug.. Pour hot water. Pour hot water (90–95°C) over the filter twice. Pour a total of 160–180 ml in two portions, allowing the water to slowly permeate through the coffee.. Enjoy the taste wherever you are!After brewing is complete, remove the filter from the mug and enjoy wherever you are.Store in a cool, dry place.

His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Washed, dried on raised beds for 12 days.ROASTER'S OPINIONA washed Ethiopian classic in its pure form. Bette Buna is committed to improving the quality of life for its community members – it teaches local farmers how to improve soil quality, restore agroforestry systems, and understand the importance of harvesting ripe cherries. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. The company was founded in 2015 by Zuberi Matsitsi, who produces specialty coffee primarily for international markets.Fun fact: Zuberi Matsitsi owns over 7,000 coffee trees. In addition to the Nyagishiru CWS plantation, his company also owns two other plantations in the Kayanza province. He receives both wet and dry parchment and operates a mechanical dryer on site. When parchment is delivered, he checks the quality, weighs the bag, and agrees on a price. He then pays the farmer immediately in cash and provides a new empty bag for refilling. Joseel has been working with Racafe for over 23 years and sells exclusively to Luis Fernando, Racafe’s manager in Bogotá. Each delivery consists of approximately 10,000–13,000 kg of coffee.Due to climate change, production has dropped dramatically in recent years, making it even more important to increase revenue despite lower yields. Coffee production in Viani has decreased by 50% compared to two years ago. Rainfall has nearly doubled, with rain occurring almost every day during the season. While rain is essential for plant growth, coffee trees require 2–3 weeks of consistent sunshine without rainfall.
