This season, expect notes of baked apple, nougat, and pecan. The profile has high sweetness and soft acidity, with smooth milk chocolate flavour that lingers as it cools.ABOUT THE FARMLocated in San Martín Jilotepeque, Chimaltenango, La Colina - The Hill - is named for the steep elevations of the area. Antonio is the third generation of his family to farm here, and began by planting grains and pulses. However, he told us that it has always been his dream to farm coffee, and in 1991, the first coffee tree was planted. Slowly but surely, Antonio increased the number of trees and the production capacity of La Colina. Nine years ago, Antonio built his own processing facilities, and with his focus on quality rather than quantity, he has achieved excellent rankings in the Guatemala Cup of Excellence competition. The coffee grows within a beautiful landscape of oak, cypress, and pine. The farm benefits from multiple streams, with fresh water for irrigation and processing. Only one quarter of his farm is planted with coffee, while the rest remains native forest, certified by the National Institution of Protection of Forests.ABOUT THE PROCESSUsing spring water from the farm, this lot was fully washed, then sun-dried on patios. Consistent sunshine during harvest allows even drying of coffee and the clean richness we love in our Guatemalan portfolio.ROASTER'S OPINIONFor the fourth season, we are sharing coffee from Antonio Medina, whose La Colina estate has become a favourite feature of our Guatemalan portfolio. Perfect for both espresso and filter, this washed Caturra lot offers smooth, balanced sweetness. Notes of baked apple, toffee, and pecan are made for Autumn!Store in a cold and dry space.

For nearly a decade, the Colombian Sugar Cane (Ethyl Acetate) process was our trusted standard—and it served us well. But our ambitions go further. We don’t just want good decaf; we also want specialty decaf. The launch of AZAHAR in early 2025 marked a turning point. Its clean, fruity profile proved that decaf can truly compete, driving both excitement and growth. It was the first in a new wave of decafs that changed how our customers experience caffeine-free coffee. Our goal has always been simple: a decaf that can stand shoulder to shoulder with any single-origin in our range—even in a blind cupping. For us, coffee is fruit, and we relentlessly pursue clarity, vibrancy, and expression, whether washed or naturally processed.Store in a dry and cool place.

The station works with 2,341 smallholder farmers from 22 nearby hills. Each farmer owns on average around 250 trees. In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes. The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks. Each lot remains fully traceable. The result in the cup is a clean, elegant profile typical of high-altitude Burundi coffees: red currant, vanilla, and black tea.A sweet, clear coffee with a tea-like structure and juicy acidity. Ideal for pour-over brewing methods as well as a light, fruit-forward espresso.Burundi remains one of Africa’s most underrated origins, and Yandaro shows exactly why it is increasingly appearing on the map of the world’s best specialty coffees.Store in a cold and dry space.

The cup is filled with notes of chocolate, almonds and red fruits.Country: ColombiaRegion: GaitaniaProcessing: WashedVarietal: Caturra, CastilloCupping score: 85 / 100 Colombia La Roma is a specialty coffee from the Gaitania region in Tolima, an area considered the cradle of Colombian coffee. It is also a region with a difficult history, where despite many challenges local producers continue to develop and cultivate coffee of the highest quality. This lot was produced as part of the Black Condor Project – an initiative supporting more than 100 independent farmers through fair pricing, training, and access to modern processing infrastructure. The project is led by Emmanuel, a producer raised in a family with a multi-generational coffee tradition. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. Farmers are offered prices up to 18–20% higher than the market average, and regular workshops on fermentation, drying, and cupping help continuously improve production standards.ABOUT COFFEEColombia La Roma undergoes a classic washed process, which highlights the natural clarity and elegance of Colombian varieties such as Caturra and Castillo. Careful cherry selection, controlled fermentation, and slow drying contribute to a balanced and harmonious flavor profile. In the cup, this coffee offers notes of chocolate and almonds that create a sweet, creamy base. These are complemented by hints of red fruits, bringing freshness and a delicate fruity acidity. The cup is smooth and velvety, with a pleasant, lingering finish. It is an exceptionally versatile coffee that works beautifully as espresso, where its chocolate-nut depth stands out, and equally well in filter methods, where its fruitier and more complex character becomes more pronounced.Colombia La Roma from the KAFAR roastery is an example of classic Colombian specialty coffee – balanced, elegant, and full of character, while also representing the story of the people who are building the future of their communities through coffee.Store in a cold and dry space.

Finca El Llano belongs to the Perez family and is located in the prestigious Acatenango region, in the Chimaltenango department, in the heart of Guatemala’s volcanic mountain chain. The farm covers an area of around 10 hectares, creating ideal conditions for the stable and sustainable development of coffee plants.Raul Perez, the main caretaker of the farm, has been steadily developing his plantation for years, introducing new coffee varieties with greater resilience and improved quality potential. His goal is not only to produce outstanding specialty coffee, but also to create a model farm based on the principles of regenerative agriculture.Raul actively seeks ways to reduce or completely eliminate artificial fertilizers, focusing on maintaining ecosystem balance and the long-term fertility of the soil. His work aims to inspire other producers in the Acatenango region and contribute to a more sustainable future for coffee cultivation in Guatemala.Store in a cold and dry space.

The farm combines modern cultivation practices with a regenerative approach, utilizing composting, controlled processing methods, and drying in tunnels, which allows for better control over the final profile. At the same time, it serves as a knowledge center for local farmers.By the way, we actually made a mistake here ourselves, one that we usually warn against. Robusta is just one of the varieties of the Canephora species. And in this particular bag, you will find beans of a different Canephora variety – Kaweri. For us, it is simply superb.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex. That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone. However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. That is precisely the point.ROASTER'S OPINIONThe mildest coffee in our offer. Sweet and velvety, while completely devoid of acidity and with very low bitterness. Great as a black coffee, it works perfectly with milk.Store in a cold and dry space.

The couple focuses on quality and innovation, being among the first farmers in the country to start producing specialty coffee using the honey and natural processing methods.Fun fact: innovation at Las Lajas is not only a matter of development, but also of necessity — in 2008, an earthquake deprived the region of electricity and water during the harvest, making it impossible to run the pulping machines and produce coffee using the washed method. Francisca was inspired by her knowledge of African coffee production and built drying beds on her property, beginning her adventure with natural bean processing.Store in a dry and cool place.

You can expect hints of pear, rhubarb, red currant, wild strawberry and apple.Country: ColombiaRegion: HuilaFarm: Finca El RosalProcessing: Extended washedVarietal: PapayoAltitude: 1650 m a.s.l.ABOUT THE COFFEEColombia El Rosal is an exceptionally subtle and elegant coffee from the Huila region, which delights with its delicate fruitiness and tea-like lightness. In the cup, you will find notes of pear, rhubarb, red currant, wild strawberry, and fresh apple. Thanks to the extended fermentation in the washed process, the coffee gains additional depth of aroma while maintaining a clean and transparent character. Ideal for those looking for delicate and highly drinkable filter coffees.Finca El Rosal is located at an altitude of approximately 1650 m a.s.l. in the Colombian region of Huila, one of the most important specialty coffee production areas in the world. The farm owner, Wilmer Cubillos, has for years consistently developed the quality of his crops, experimenting with varieties and processing methods. This batch was prepared from the rare Papayo variety, whose elongated fruits resemble small papayas and which is famous for its exceptional sensory complexity. In the cup, Colombia El Rosal offers an extremely clean, bright, and juicy profile. First comes the sweetness of ripe pear and red apple, followed closely by notes of wild strawberry and red currant, with the whole experience rounded off by a pleasant, rhubarb freshness. It is a light coffee on the palate, with a tea-like structure and delicate intensity.ABOUT THE PROCESSINGThe exceptional character of this batch is greatly influenced by the Extended Fermentation Fully Washed processing method. The process begins with the manual harvesting of only fully ripe fruits. Next, the coffee cherries go to a depulper, which separates the skin and most of the pulp from the beans. At this stage, the beans are still covered with a layer of mucilage. The next step is extended fermentation. In contrast to classic washed processing, where fermentation usually lasts from a dozen to several dozen hours, here the process is intentionally prolonged and carefully controlled. Microorganisms naturally occurring on the surface of the fruit break down the remaining pulp, while creating aromatic compounds responsible for a greater complexity of flavor. It is this stage that allows for the extraction of additional fruitiness and juiciness while maintaining the cleanliness characteristic of washed processing. After fermentation is complete, the beans are thoroughly rinsed with clean water to remove any remaining pulp. Then they go to drying tables, where they dry slowly until optimal moisture content is achieved. Only then is the parchment layer removed, and the green beans are prepared for export. The result is a coffee that combines the clarity of a classic washed with the additional aromatic depth obtained through extended fermentation. Delicate, elegant, and full of juicy fruit accents – perfect for filter brewing methods, which will allow it to fully develop its entire range of flavors.Store in a cool, dry place.

Washed Chelchele coffees are known for their sweet backbone, think toffee and soft almond, lifted by bright floral notes and a splash of citrus.Of all Ethiopian regions, Yirgacheffe is our go-to for that elegant, tea-like and floral profile. It’s been part of the Caffenation story since day one in 2003—and it’s still going strong.Store in a dry and cool place.
