For nearly a decade, the Colombian Sugar Cane (Ethyl Acetate) process was our trusted standard—and it served us well. But our ambitions go further. We don’t just want good decaf; we also want specialty decaf. The launch of AZAHAR in early 2025 marked a turning point. Its clean, fruity profile proved that decaf can truly compete, driving both excitement and growth. It was the first in a new wave of decafs that changed how our customers experience caffeine-free coffee. Our goal has always been simple: a decaf that can stand shoulder to shoulder with any single-origin in our range—even in a blind cupping. For us, coffee is fruit, and we relentlessly pursue clarity, vibrancy, and expression, whether washed or naturally processed.Store in a dry and cool place.
COFFEE PLANT - LOW Cold Brew Filter 250 g

Roasting date: 25.05.2026

Whole-bean specialty coffee from Brazil, Kenya and Rwanda, roasted in Poland by COFFEE PLANT. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of citrus, blackberry and caramel.Origin: Brazil, Kenya, RwandaRegion: Sul de Minas, Huye, NyeriFarm: Kiamambara Washing Station,Kigoma Washing StationProcessing: CO₂ Natural, Natutal, WashedVariety: Mundo Nuovo, Red Bourbon, SL28, SL34Altitude: 1050-2200 m a.s.l.ABOUT THE COFFEELOW Cold Brew is a coffee that gives a distinct sense of freshness and lightness from the very first sip. Citrus notes introduce a crisp quality, berry accents build a fruity profile, and caramel sweetness binds it all together, adding a pleasant depth. After the steeping process, you get a brew with a juicy, fresh, and naturally sweet character. This is a low-caffeine cold brew that, despite its lightness, remains distinct in flavor — perfect for when you want something delicate but still full of aroma and character.ROASTER'S OPINIONLOW Cold Brew is a light, refreshing blend of coffees from Brazil, Kenya, and Rwanda with a reduced caffeine content — created specifically for cold brews that you can drink at any time of the day. The composition offers a fresh, fruity profile balanced by a delicate sweetness. In the first impression, citrus and berry notes appear, giving the beverage a distinct crispness and lightness. The whole is completed by a subtle caramel sweetness that introduces a pleasant depth and balance. This is a cold brew that delivers exactly what you would expect from a summer infusion — juiciness, freshness, and natural sweetness, but with less caffeine. Perfect for warm days and all the moments when you feel like having something truly refreshing and light.RECIPELOW Cold Brew develops its character best in cold preparation — that is when it fully shows the freshness, lightness, and fruity juiciness that makes you want to come back for more.Start with a coarse grind of the coffee, preferably in the range of 28–32 clicks on a Comandante grinder (around 30 clicks will be a good reference point). Then, pour cold, filtered water over it in a ratio of 6 g of coffee per 100 g of water and place the whole thing in the refrigerator for 14–16 hours. After filtering, you will get a clear brew with a fresh, fruity profile and natural sweetness. It works great drunk on its own, with ice cubes, or as a base for light summer drinks.Store in a cold and dry space.
Heresy - Illuminati Blend Espresso 252 g

Manufacturer: HERESY

Roasting date: 30.06.2026

Whole-bean specialty coffee from Colombia and Honduras, roasted by Heresy roasting brand. Dark roast, perfect for espresso machines and moka pots. You can expect hints of caramel, jam chocolate, dried fruits and wine.Origin: Colombia, HondurasRegion: Cauca / Santa BarbaraFarm: El Tambo / Javier FernandezProcessing: Washed / Fermented HoneyAltitude: 2050 / 1600 m a.s.l.Cupping score: 86 / 100 ABOUT THE FARM AND THE COFFEE PRODUCEREl TamboThis exceptionally clean and complex lot is the result of the work of four small-scale producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on several-hectare farms in the El Tambo micro-region, located west of Popayan, the capital of the Cauca department. The following synergy of factors makes the quality of their raw material so phenomenal:the microclimate in El Tambo and the cultivation altitude reaching above 2,000 meters result in slower cherry ripening, while lower humidity facilitates the drying process: the processed coffee loses water in a predictable and controlled manner,a thoughtful and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal air throughput and sunlight, the producers' modern knowledge of fertilization combined with a traditional practice known locally as “re-re,” which involves the selective harvesting of overripe, undeveloped, or dried fruits and leaving them on the ground by the trees: thanks to this, more pests feed on the “waste” instead of attacking healthy batches, and, of course, conscious, restrictive cherry picking at the optimal ripeness stage combined with years of experience in the fermentation and drying process.Only the local population works during the harvest, forming the core of the community of several small El Tambo villages, which has naturally evolved around the continuous, seasonal cycle of coffee cultivation for generations.Javier FernandezJavier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be world-famous as a Windows desktop wallpaper. The Fernandez family (there is also a second son, Nahun!) is not afraid to play with processing, and thanks to bold experiments, they deliver some of the best lots in all of Santa Barbara year after year. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMIn the current Illuminati lineup, we have a combination of washed and honey processing with extended fermentation. El Tambo is a classic washed. Javier Fernandez is a more fermented wild card.ROASTER'S OPINIONOnce again, we apply the equation here: very good + very good ≤ very good. In the base, there is deep caramel sweetness and plenty of jammy fruitiness, the dark-blue, forest kind. And as a joker, a winey-tropical honey. 21st-century synergy. An espresso shot of this is pure goodness. Illuminati offers greater complexity than a classic Brazil. At the same time, it is very sweet, slightly fruity, and goes down well solo or with milk. Balance and a pleasant, yet in no way overpowering acidity – that is our main plan for this blend!Store in a cold and dry space.

This 36-year-old, who has been working with coffee for over half his life, invested all his resources two years ago to build a small, self-sufficient processing station – a depulper, fermentation tanks, and a small greenhouse for drying. From season to season, his coffees show increasing complexity on the cupping table, which translates into higher and higher prices he can demand for his lots!ABOUT THE COFFEE BEAN PROCESSING ON THE FARMCaturra and catuai varieties, hand-picked and then dried as whole cherries for about 25 days in the greenhouse built next to Edinson's house.ROASTER'S OPINIONWe are tossing the first natural from Peru this season into the roaster! Plenty of sticky sweetness, beautiful fruity layers, and an aftertaste measured in tens of minutes.Store in a cold and dry space.

Expect ripe plum, cherry, and vanilla, with gentle acidity. A long, sweet finish is like chocolate and caramel.ABOUT THE FARMIvan is the younger brother of Gertrudes and Joao Hamilton dos Santos. Together with his siblings and wife Rose, a partnership began with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) in 2008 to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSRipe cherries are picked by hand to be naturally processed and dried on the farm. At the height of the season, when the volume of picked cherries is greatest, beans are sometimes transferred to the neighbouring fazenda belonging to Ivans brother. For their naturally processed lots, the whole cherry is transferred to raised African beds to slowly dry in the sun. The warmth of the region provides the perfect conditions for high quality natural processing that helps to impart sweet depth to the beans.ROASTER'S OPINIONA special microlot from Ivan and Rose dos Santos. Typica - or Sumatra as it is known in Brazil - brings unexpected flavour to the Brazilian terroir, with elegant fruit and complex sweetness.Store in a cold and dry space.

The flavour of the brew resembles dark chocolate, nuts, caramel and orange zest.Country: IndonesiaRegion: Sepakung, Central Java Farm: Vins & BedjoVarietal: TugusariSpecies: Canephora (robusta)Altitude: 1100 m a.s.l.Processing: Anaerobic naturalABOUT THE FARMVins and Bedjo are two enthusiasts who persistently experiment in search of the perfect Canephora flavor. Their annual production is currently very small – around 2 tons of green coffee – but in their case, "every bean matters." There is no room here for cheap, container-scale production, so every coffee cherry cultivated by them is treated with due attention. The farm is pictorially located on the slopes of the Telomoyo volcano, surrounded by dense jungle. Once every four years, the eruption of the nearby Merapi volcano covers the entire region in volcanic ash, which is incredibly fertile and promotes the development of sweetness and spicy characteristics in the coffee.ABOUT THE PROCESSINGExperiments with Canephora are particularly important to them, which naturally caught the attention of the Brothers (fine robusta neophytes). This specific lot underwent their signature process – quadruple anaerobic fermentation. The fruits spend five days in each of four consecutive tanks, being cleaned of fermentation byproducts in between. This is Vins and Bedjo's proven method to "clean up" robusta, giving it a clear character and a great, mild profile.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex. That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone. However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. That is precisely the point.ROASTER'S OPINIONHere is what we love fine robustas for. A deep malty profile with notes of cocoa and nuts, a clean and clear brew, a heavy, pleasant body, and virtually zero acidity. The ideal everyday bean.Store in a cool and dry place.

They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience. The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation. In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. After that, the coffee rests for at least 60 days before export to achieve perfect homogenization.ROASTER'S OPINIONEvery year, we wait for coffees from Las Lajas with flushed cheeks! This lot is, above all, about absurdly high intensities across all layers, from tropical fruits to slightly wild fermentation notes.Store in a dry and cool place.
